Sweet potatoes are a total staple in my kitchen. Honestly, I think I love them even more than regular potatoes!

They’re cozy, naturally sweet and can do just about anything. I roast them for salads, mash them for sides, blend them into soups and even bake them into treats when I’m craving something on the sweeter side.
Over the years, I’ve created so many sweet potato recipes that I decided it was time to round up my favorites for all my fellow sweet potato lovers out there. From easy weeknight dinners to simple sides and wholesome baked goodies, there’s no shortage of ways to enjoy this versatile veggie.

Roasting is the way to go. It brings out their natural sweetness and gives them those golden, caramelized edges I love. Just cube or slice them, toss with oil and seasoning, and roast at 425°F for 25 to 35 minutes, flipping halfway through. That said, I also use the air fryer all the time when I want crispy sweet potatoes fast.
Absolutely. The air fryer makes them perfectly crisp on the outside and soft inside in about 15 to 20 minutes at 400°F. Shake the basket halfway through to help them cook evenly. The microwave works in a pinch too. Pierce the skin with a fork, cook on high for 5 to 7 minutes, and rotate once for even cooking.
Not always. The skin gets tender when cooked and adds great texture and fiber. I like leaving it on when roasting or making wedges, but I peel them if I’m making mashed sweet potatoes or anything creamy.
They probably need more space to roast. When sweet potatoes are packed too close together, they steam instead of crisp. Spread them in a single layer, use a large sheet pan, and roast at a high temperature for the best texture.
