A quick and easy recipe for 4-ingredient date caramel made from Medjool dates. It’s perfect as a dip or topping for all your favorite healthy treats.

We all know I love Medjool dates. You can eat them plain or stuffed with nut butter as a snack but I also love to use them in both sweet and savory recipes like these snickers stuffed dates, bacon wrapped dates, pistachio salmon salad, date mounds bars and this 4-ingredient date caramel sauce!

It’s one of my favorite ways to showcase the natural sweetness of Medjool dates. It’s quick, easy, and incredibly versatile. You can drizzle it over banana ice cream, mix it into your morning oatmeal (like with this salted caramel oatmeal), or use it as a dip for apple slices. Trust me, once you make this date caramel, you’ll find endless ways to enjoy it! It’s SO good!

Ingredients Needed

  • medjool dates – the star of the show! Make sure you get Medjool dates, which are a fresh fruit, not dried! You can buy medjool dates that are already pitted or have the pits that you pit yourself (it’s super easy). Two brands that I like are Natural Delights and Joolies. You can find Natural Delights in the produce section of most grocery stores (near the bananas) and Joolies are offered on Amazon and Thrive Market. Your dates should be soft, not hard. If they are dry or hard, you can soak them in water for about 30 minutes, drain and then use them in the recipe.
  • sea salt – just a touch, to bring the flavors together!
  • vanilla extract – a flavor enhancer.
  • unsweetened almond milk – you can use store-bought or make your own almond milk. To make it nut-free, use oat milk or coconut milk.

Recipe Variations

I personally love this recipe as is because it’s so simple and delicious, but there are plenty of other ways to enjoy this date caramel. Here’s some options you could try:

  • Spiced – For a warm, spiced caramel, try adding a pinch of cinnamon, nutmeg, or even pumpkin pie spice to the blend. It’s a fun way to give the caramel a cozy, seasonal flavor that pairs well with all those fall treats. How good would it be drizzled over my applesauce cake?!
  • Chocolate – If you’re a chocolate lover, try adding a tablespoon of unsweetened cocoa powder or melted dark chocolate to the mixture.
  • Nutty Caramel – Blend in a tablespoon of your favorite nut butter, like almond or cashew, to add a nutty richness to the caramel. This variation pairs beautifully with sliced apples or bananas.

How to Make Date Caramel

Step 1: Add all your ingredients to a blender, starting with 3/4 cup of milk.

Step 2: Blend until smooth, add more milk little by little if needed for your desired consistency.

Brittany’s Tip!

For the creamiest, smoothest caramel, make sure you’re using fresh, soft Medjool dates. If your dates are a bit dry or firm, soak them in warm water for about 30 minutes before blending to help them soften up and blend more easily.

Ways to Enjoy Date Caramel

This date caramel is the perfect companion to so many snacks and desserts. Luckily for you, I’ve already tested it in a variety of recipes, and it pairs beautifully with everything from pancakes to apple nachos. Here are some of my favorite ways to use it:

  • Drizzled Over Pancakes – Add a sweet caramel touch to your banana pancakes by drizzling this date caramel on top. It’s a delicious alternative to traditional syrups and adds a natural sweetness to your breakfast.
  • Top Your Oatmeal – Stir a spoonful of date caramel into a warm bowl of pumpkin oatmeal or use it in my salted caramel oatmeal. It’s a great way to naturally sweeten your morning oats and add a hint of caramel flavor.
  • Apple Nachos – The combination of crisp apples and creamy caramel is a match made in heaven. These apple nachos are a go-to after school snack for the kids!
  • Apple Slices with Date Caramel – Use this caramel sauce to make my date caramel apple slices. Apples, chocolate, caramel, and coconut come together for a healthy version of those Girl Scout Samoa cookies we all love!
  • Chocolate Caramel Ice Cream Bars – For a cool and creamy treat, use the date caramel as a layer in chocolate caramel ice cream bars. The natural sweetness of the caramel pairs perfectly with the chocolate and creamy ice cream, making these bars irresistible.

How to Store

Store your date caramel in an airtight container in the refrigerator for up to one week. The caramel will likely thicken as it chills, but you can easily bring it back to a smoother consistency by stirring in a little more milk before using.

If you want to keep it longer, you can freeze it. Portion the caramel into small containers or ice cube trays and freeze for up to 3 months. When you’re ready to use it, thaw the caramel in the fridge overnight and stir well before serving. You may need to add a bit more milk to achieve the desired texture after freezing.

Can I use a different type of milk?

Absolutely! While I love using almond milk for its neutral flavor, you can substitute it with any plant-based milk you prefer, like oat, coconut, or cashew milk. You could even use regular milk if that’s what you prefer! Each will give the caramel a slightly different flavor and consistency, so feel free to experiment.

Is this caramel good for baking?

This date caramel is great for topping and dipping, but it’s not ideal for high-temperature baking as it might not hold up as well as traditional caramel. However, you can swirl it into brownies, bars, or use it as a filling after baking for a delicious, naturally sweet treat.

  • Add all ingredients (starting with ¾ cup almond milk) into a high powered blender or food processor and blend until mixture is smooth and there are no date chunks detectable.
  • Add more almond milk, 1-2 Tablespoons at a time, if needed to help the blending process or to thin the caramel.
  • Use immediately or store in the fridge for later.

Notes

  • Recipe works best fresh, soft medjool dates. If dates are dry or hard, you can soak them in water for about 30 minutes, drain and then use them in the recipe.
  • If you’re using the smaller deglet noor dates, you’ll need to use more! This is something you can play around with to get the caramel sauce thickness you’re looking for.

  4. You can used dry dates just as much, don’t soak them in water but in lookwarm tea. They’ll be completely revived. You can also use the tea to make the mix more fluid.

    1 tsp is far too much vanilla for this recipe. As soon as I added it it overpowered everything. (The rest of the day after I spent looking at similar recipes and they all called for more dates and only 1/4 of a tsp). I’m gonna try again after and adding less milk and vanilla and hopefully that gives it a more caramel consistency.

    I could not believe how delicious this was! I never expected it to taste like actual caramel. I used canned coconut milk instead of the almond milk because it’s what I had a d I had the smaller dried dates so I soaked them first, it is absolutely delicious!

    I added normal milk and it is very light caramel colour not like yours.. and definetly not so glossy.

    This turned out amazing. I used halawy dates instead of medjool. They have a caramel-esque flavor already and they’re super soft. Since they are smaller I had to use 30 of them. I switched out the almond milk (I’m allergic) for walnut milk. Put it in the Nutri Bullet which worked great. We dipped apples in it and my mom just started smearing it on graham crackers. We’re going to try it in coffee tomorrow.

    Very yummy! I’ll see if my non DF GF guests like it tonight. Will serve on Guittard dark chocolate sorbetto. Recipe notes: I found an immersion blender to be easiest and most successful blending option (no high speed blender here). Also do not tolerate nuts, so subbed 1/2 cup oat milk and 1/2 cup coconut milk for almond milk.

    I am so excited to try this! I see dates in stores all the time. Is is ok to use any brand? Sunsweet is one brand I see at Wal-marts, also Dole. I prefer when I can to buy mine when I can from the our wholefood store the organic medjool dates, but glad to know they don’t have to be purchased organic

    I was so so skeptical about this recipe since I love caramel. But I’m really glad I tried it. It’s actually pretty good. I put a little too much salt so it was more like a salted caramel sauce for me. For sure, you can taste the difference between real caramel sauce and date caramel sauce but the date sauce has a cleaner taste to it. This one will definitely be on the repeat recipe files!

    Recipe came out pretty good, despite it being out of my standard-powered blender’s league. Until I can get a food processor, I think I’ll try this agai with a tablespoon or two extra almond milk to compensate.

    This is outrageous! For so long I have read you can make caramel with dates and I never listened because I love caramel and I just didn’t think it would meet my standards. ; ) Was I wrong!   38. What adjustments would you make using deflect dates? I know it may not be as sweet, with which I’m fine. I have them on hand & really want to make this!

    1. You might just need to use more than 8 dates since they are smaller than medjool dates! I’d just play around with the taste and ratio of liquid, but it should still turn out the same! Let me know if you end up trying it!

    Way too much salt. Also I would recommend putting the milk in the blender and adding the dates one at a time so that at least some of them get very smooth.

    Wow. This actually states like salted caramel 😳 I was not expecting that. It’s so good! I have a MAJOR sweet tooth but trying to eat healthier. Dipped apples in it yesterday and strawberries today. Strawberries are even better than apples 🤤 tastes like a rich caramel candy with strawberry flavor. Thanks so much!

    Amazing!!! I have to go dairy free while nursing and miss the sweets. This recipe was incredibly easy and tasty. I used some and added chopped pecans and shredded coconut…. tasted like the frosting for a German chocolate cake. Put it on a rice cake -so yummy!!!

    This is so good and so easy!
    I did find that 1tsp of salt could be too much, so I only added a bit over 1/2tsp and still find that I can taste the salt a lottle too much. I mean, I love salted caramel but the salty aftertaste on this was a bit much. I think 1/2 tsp, or even 1/4tsp, would be just perfect!

  50. Delicious!!! Tastes like real caramel only that it is super healthy. According to TCM dates are great for skin and tissues and rebuilding blood… great for women – all in moderation but now I have a way to integrate them in the most delectable way ever. Many THANKS!

  51. I live in Kuwait, and we love our dates! So I’m looking forward to making this… but it says “1/2 unsweetened almond milk”. Is that 1/2 cup, 1/2 TBSP, or what?

  52. This is amazing! Only problem I had was having enough volume of mixture in my Vitamix so I had to keep scraping it down. I was never really able to blend all the date pieces up, but that did not affect the taste. Dunked my fresh Honeycrisp apples in the “caramel.” WOW!!!
