A quick and easy recipe for 4-ingredient date caramel made from Medjool dates. It’s perfect as a dip or topping for all your favorite healthy treats.
We all know I love Medjool dates. You can eat them plain or stuffed with nut butter as a snack but I also love to use them in both sweet and savory recipes like these snickers stuffed dates, bacon wrapped dates, pistachio salmon salad, date mounds bars and this 4-ingredient date caramel sauce!
It’s one of my favorite ways to showcase the natural sweetness of Medjool dates. It’s quick, easy, and incredibly versatile. You can drizzle it over banana ice cream, mix it into your morning oatmeal (like with this salted caramel oatmeal), or use it as a dip for apple slices. Trust me, once you make this date caramel, you’ll find endless ways to enjoy it! It’s SO good!

Ingredients Needed

- medjool dates – the star of the show! Make sure you get Medjool dates, which are a fresh fruit, not dried! You can buy medjool dates that are already pitted or have the pits that you pit yourself (it’s super easy). Two brands that I like are Natural Delights and Joolies. You can find Natural Delights in the produce section of most grocery stores (near the bananas) and Joolies are offered on Amazon and Thrive Market. Your dates should be soft, not hard. If they are dry or hard, you can soak them in water for about 30 minutes, drain and then use them in the recipe.
- sea salt – just a touch, to bring the flavors together!
- vanilla extract – a flavor enhancer.
- unsweetened almond milk – you can use store-bought or make your own almond milk. To make it nut-free, use oat milk or coconut milk.

I personally love this recipe as is because it’s so simple and delicious, but there are plenty of other ways to enjoy this date caramel. Here’s some options you could try:
- Spiced – For a warm, spiced caramel, try adding a pinch of cinnamon, nutmeg, or even pumpkin pie spice to the blend. It’s a fun way to give the caramel a cozy, seasonal flavor that pairs well with all those fall treats. How good would it be drizzled over my applesauce cake?!
- Chocolate – If you’re a chocolate lover, try adding a tablespoon of unsweetened cocoa powder or melted dark chocolate to the mixture.

Step 1: Add all your ingredients to a blender, starting with 3/4 cup of milk.

This date caramel is the perfect companion to so many snacks and desserts. Luckily for you, I’ve already tested it in a variety of recipes, and it pairs beautifully with everything from pancakes to apple nachos. Here are some of my favorite ways to use it:
- Drizzled Over Pancakes – Add a sweet caramel touch to your banana pancakes by drizzling this date caramel on top. It’s a delicious alternative to traditional syrups and adds a natural sweetness to your breakfast.
- Top Your Oatmeal – Stir a spoonful of date caramel into a warm bowl of pumpkin oatmeal or use it in my salted caramel oatmeal. It’s a great way to naturally sweeten your morning oats and add a hint of caramel flavor.
- Apple Nachos – The combination of crisp apples and creamy caramel is a match made in heaven. These apple nachos are a go-to after school snack for the kids!

4-Ingredient Date Caramel
Ingredients
- 16 medjool dates, pitted*
- 1 teaspoon sea salt
- 1 teaspoon vanilla
- ¾ -1 cup unsweetened almond milk, or other non-dairy milk
Instructions
- Add all ingredients (starting with ¾ cup almond milk) into a high powered blender or food processor and blend until mixture is smooth and there are no date chunks detectable.
- Add more almond milk, 1-2 Tablespoons at a time, if needed to help the blending process or to thin the caramel.
- Use immediately or store in the fridge for later.
Notes
- Recipe works best fresh, soft medjool dates. If dates are dry or hard, you can soak them in water for about 30 minutes, drain and then use them in the recipe.
- If you’re using the smaller deglet noor dates, you’ll need to use more! This is something you can play around with to get the caramel sauce thickness you’re looking for.

Recipe came out pretty good, despite it being out of my standard-powered blender’s league. Until I can get a food processor, I think I’ll try this agai with a tablespoon or two extra almond milk to compensate.
Yeah, depending on what blender you have, it can take a bit longer to get everything blended together. Adding some more liquid would definitely help!

Hey Terry, I use My Fitness Pal to calculate the nutrition info. The date caramel yields 8 servings so it should be about 16 T for the entire recipe.

This is outrageous! For so long I have read you can make caramel with dates and I never listened because I love caramel and I just didn’t think it would meet my standards. ; ) Was I wrong! We picked some apples from our local orchard and my husband wanted me to melt some of the caramel squares we had at home.
