Good morning and happy Monday to you! I honestly can’t believe that it’s already July and the 4th is right around the corner. Although I must admit, it’s kind of nice going back to work after our honeymoon on a week that involves a holiday. We’re actually headed to North Carolina mid-week to celebrate the 4th of July and my cousin’s wedding. She and I are only a few months apart and we’ve been best buds since we were little girls. She was a bridesmaid in my wedding and I’ll be standing up there with her as well. So fun!
After eating out for almost every meal while on our honeymoon, I was ready to get back in the kitchen this weekend. I whipped up a bunch of healthy stuff for the week. In the midst of it all, I was using my mini processor to make what I thought was going to be oatmeal raisin breakfast cookies but I ended up making the most delicious frozen treat.
The cookies were going to have bananas as the base so I pulled out some frozen bananas and started processing them then added the oats, cinnamon and raisins. At this stage, before adding additional oats or baking soda, I decided to taste the “batter”. It turns out the batter was so delicious on it’s own, I couldn’t stop eating it. It tasted like cinnamon oatmeal raisin cookie dough ice cream and I was in heaven.
The funny thing is that there’s an ice cream shop here in Richmond called Gelati Celesti that has a flavor called cinnamon oatmeal cookie dough and it’s my all-time favorite, but the idea of making a healthy banana soft serve version never crossed my mind. Turns out, it’s the most amazing thing ever.
I ate an amount that probably should have served two people… before dinner. Oops. At least it’s healthy!
It was so good, I didn’t have the will-power to save any to share with Isaac. What a great new wife I am. Oh well, I guess that means I just need to make more. 🙂

My favorite cinnamon oatmeal raisin cookie dough ice cream made healthy using frozen bananas as a base!
- 2 frozen bananas, in chunks
- 1/3 cup old fashioned oats
- 1/4 cup raisins
- 2 – 4 Tablespoons unsweetened vanilla almond milk (or other non-diary milk)
- 1/2 teaspoon cinnamon
- Place frozen banana chunks, oatmeal, raisins, almond milk (start with 2 Tablespoons) and cinnamon into a food processor.
- Pulse/process until smooth and creamy. You may need to turn off the motor and stir the mixture a couple times while processing.
- Place into one or two bowls and serve immediately.
