This viral cucumber and bell pepper salad is sweet, savory and packed with flavor! It’s crisp, refreshing and comes together in just 10 minutes, making it the perfect summer side dish.

As you all know, I’m a huge salad lover, so as soon as I saw the viral cucumber and bell pepper salad recipe on TikTok from Rachael Kirkconnell I knew I had to try it!

This salad is so easy to whip and packed with tons of flavor thanks to the everything bagel seasoning, chili crisp and homemade sesame ginger dressing. And when paired with crunchy cucumbers and bell peppers the combo is absolutely irresistible. It might just be my new favorite summer side salad!

Ingredients Needed

  • mini cucumbers and mini sweet peppers – the base of this salad!
  • Everything But the Bagel Seasoning – I get the Trader Joe’s seasoning, but most grocery stores carry it now.
  • Chili crisp – I used Passenger chili crisp but I also like Fly By Jing.
  • Sesame ginger dressing – you can use my recipes or grab a bottle of store-bought dressing.

This Cucumber and Bell Pepper Salad is quite versatile and can easily pair with a number of dishes. Here are a few suggestions:

TikTok Viral Cucumber and Bell Pepper Salad

This viral cucumber and bell pepper salad is sweet, savory and packed with flavor! It's crisp, refreshing and comes together in just 10 minutes, making it the perfect summer side dish.

Ingredients  

Sesame Ginger Dressing

  • ¼ cup extra virgin olive oil
  • ¼ cup unseasoned rice vinegar
  • 1 ½ Tablespoons tamari or soy sauce
  • 1 ½ Tablespoons maple syrup
  • 2 teaspoons sesame oil
  • 1 large clove of garlic
  • 1" knob fresh ginger
  • pinch black pepper

Instructions 

  • Make dressing by adding all the ingredients to a blender and blending until smooth and creamy. Set aside.
  • Add cucumber and bell pepper to a bowl. Add ¼ cup dressing, bagel seasoning and chili crisp. Toss to combine. Taste and add more seasoning, chili crisp and/or dressing, if needed!

  1. Do you think this would be a good meal prep item? I’m worried the veggies would get too soggy…

    1. Hi Erin – Great question, this salad will last about 2 maybe 3 days in the fridge before the veggies get too soft and the cucumber gets a bit pickled. Hope you enjoy this recipe!

    This is SO good! The fresh ginger dressing is bright and flavorful. I added some other veggies I had in the fridge and some diced grilled chicken to make it a meal and it was super yummy. Thank you for sharing! Delicious!

  7. This was excellent! Thanks for including your sesame ginger dressing! I added a couple more cucumbers and peppers than the recipe because I had a couple left in the bag.

    It was so easy. I eye balled the dressing and it all turned out so good. I had it for lunch with sardines and went back for seconds. The flavors together are incredible ♥️ my sister loved it too!
