A fresh and simple cucumber tomato salad for summer with red onion, red wine vinegar and Italian seasoning. Refreshing, delicious and super easy to toss together.

Today I want to share a bright and refreshing summertime salad that’s amazingly simple.

I don’t know about you, but I LOVE easy no-cook recipes. Granted, almost none of the recipes I post here on EBF are difficult as I like to keep things simple in the kitchen. This recipe, however, is easier than most because there’s no cooking involved. Just chop, toss and eat!

The veggies I used were straight from Isaac’s parents’ garden. The tomatoes were plump, sweet and juicy while the cucumber was cool, crisp and refreshing. The two, paired together with a bit of seasoning = perfection.

The idea for the salad actually came to me after being invited over to a friend’s house for dinner one afternoon. Isaac had requested a blueberry crumble so I was preoccupied making desert so I didn’t have much time to make something savory. I saw the veggies sitting on the counter, quickly chopped the veggies, dressed them up a bit and created this simple salad.

It reminds me of a salad that my mom used to make every summer. Her version had only cucumbers, onions and vinegar. I remember as a kid saying that it tasted like salt and vinegar chips. Anyhow, this salad isn’t nearly as vinegary but it’s still just as fresh and simple. It’s the perfect mid-week side salad to serve next to a protein of your choice. We took it to our friends’  house for dinner and everyone enjoyed it, plain or served over a little spring mix.

Cucumber Tomato Salad

A fresh and simple cucumber and tomato salad for summer with red onion, red wine vinegar and Italian seasoning. Refreshing, delicious and super easy to toss together.
Prep Time: 10 minutes
Servings: 4

Ingredients

  • 1 large cucumber, peeled, halved and thinly sliced
  • 4 to matoes, halved and thinly sliced
  • 1 small red onion, peeled and sliced thin
  • 1 clove garlic, minced
  • 2 Tablespoons olive oil
  • 1 Tablespoon red wine vinegar
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon sea salt
  • pinch of raw sugar

Instructions

  • Place cucumber, tomatoes, onions and garlic into a bowl. Toss with olive oil, red wine vinegar, Italian seasoning, pepper, salt and sugar.
  • Let stand for a bit at room temperature or in the fridge, about 15-30 minutes before stirring and serving. As the salad sits, liquid will accumulate. You can serve the salad with a slotted spoon to avoid the extra liquid. Another option is to use the extra liquid as a dressing when serving the salad over greens or to soak up the liquid with slices of crusty bread.

Notes

  • Having fresh veggies really makes a huge difference so if possible grab the ingredients for this salad from your local produce stand, farmers market or garden.

  1. I love using tomatoes as much as possible during the warm summer months. Cucumbers, too! Looks like something quick and easy, the perfect side for a summer weeknight supper.

  2. Brittany, I have been following your blog for a few years now and have immensely enjoyed your posts, recipes, and realistic approach and dedication to a healthy lifestyle. I don’t think I have ever commented on a post before, but I just had to pipe in – I visited Rancho la Puerta a few years ago and LOVED it. It was a mother-daughter trip after my mom had spent the past 15+ years going with her own mother. Long story short, my visit there was a springboard to incorporating healthier choices into both my daily diet and exercise routine that have persisted and remained a priority in my life (and that was four years ago). I’m sure you will have an amazing time – it is a magical and serene place. The hiking along Mt. Kuchumaa is unparalleled, and I highly recommend the garden breakfast hike, too!

  3. I’m all about easy & fresh. This is perfection 🙂 Def trying for my next BBQ!

  4. I love easy and quick recipes. So I will definetly try yours 🙂 Your Health Coaching Website Looks great. I’m excited to hear more about that 28day challenge

The tomatoes out of my garden are plentiful, so I was looking for a good tomato salad. I overdid the tomatoes & cucumber in this recipe but I added bacon and twice the amount of garlic but also doubled the oil&vinegar&spices. It turned out fabulous! Thank you!

      1. Oh I bet the bacon was a delish addition! So glad you enjoyed this salad, Deanna. 🙂 Thanks for making it and for coming back to leave a comment + star rating. I appreciate it!

  5. This is very similar to the Swahili dish Cachumbari except you have added herbs. Traditionally the onions are to be smooshed in salty water to rid them of the stingy feeling they leave on the tongue and I would recommend that it really helps!

  6. I love the name of your blog and I love the looks of this recipe! My husband always jokes when we eat millet that we are literally eating bird food!

  7. Congratulations on the new site! It looks fantastic. Best of luck with the launch, and have a great time on vacation!

  8. This was delicious! Cucumber and tomato salad is kind of a staple in my husband’s family but he always makes it with either bottled italian or ranch dressing and I don’t like it at all! I made this version for him the other night and he kept saying how great it was!

  9. I had an overabundance of both cucumbers and tomatoes from our garden last year…this recipe is PERFECT and I have a sneaking suspicion will be made on repeat this summer 🙂

I cannot wait to make this beautiful salad!! Question please: I too love cherry/grape tomatoes, so if I use cherry tomatoe instead of regular sliced tomatoes as the recipe calls for, how many cherry tomatoes should I use?

    1. Hey Symantha! I would say about a pint of cherry tomatoes! Let me know what you think of this salad if you end up trying it. 🙂
