I know overnight oats usually have their moment in summer but I can’t resist bringing them into fall when pumpkin season hits. These pumpkin pie overnight oats are creamy, cozy and taste just like dessert for breakfast. They’re perfect for those warm early fall mornings when you’re craving pumpkin spice but not quite ready for hot oats.

The mix of pumpkin purée, pumpkin pie spice and cinnamon gives these oats that irresistible fall flavor while almond milk keeps everything super creamy. If you love my pumpkin pie smoothie or apple pie overnight oats, you’ll be obsessed with this one too. It’s like pumpkin pie in a jar!

Why I Love Pumpkin Pie Overnight Oats

I’ve been making overnight oats for years but this pumpkin pie version always steals the spotlight when fall rolls around. It’s creamy, spiced just right and feels like a cozy treat even though it’s healthy enough for breakfast.

Pumpkin Overnight Oats Ingredients

Ingredients measured out to make pumpkin pie overnight oats: maple syrup, almond milk, oats, pumpkin, chia seeds, cinnamon and salt.
  • old fashioned rolled oats – rolled oats are the best for overnight oats. Instant/quick oats and steel cut oats don’t work the same because they don’t absorb liquid the same way rolled oats do. If you’re looking to use steel cut oats, try this pumpkin pie oatmeal instead.
  • almond milk – I like using unsweetened vanilla almond milk, but any type of milk will work.
  • canned pumpkin – either canned pumpkin or homemade pumpkin puree works. If you’re using store-bought, make sure you pick up canned pumpkin and not pumpkin pie filling. Pumpkin pie mix has added sugar!
  • pumpkin pie spice and cinnamon – these are a must for the pumpkin pie flavor! You can make your own pumpkin pie spice mixture or buy a pre-made blend at the grocery store.
  • maple syrup – pure maple syrup is the perfect natural sweetener to use because it’s liquid so it blends in nicely with the oat mixture and I personally love the flavor.
  • chia seeds – these little seeds add a bit of fiber, protein and omega-3 fatty acids and they help absorb some of the liquid which gives the oats a thicker consistency.
  • sea salt – the perfect flavor enhancer and brings out the nutty flavor of the oats.
  • toppings – feel free to use your favorite toppings here! Some ideas: pecans, hemp seeds, pepitas, nut butter, coconut whip cream, dried cranberries or granola. This pumpkin granola would be delicious as a topping.

How to Make Pumpkin Pie Overnight Oats

This pumpkin overnight oat recipe couldn’t be easier. Everything comes together in just a few minutes and the fridge does all the work while you sleep.

Step 1: Add all ingredients (except toppings) to a jar or bowl and stir until combined. Cover and refrigerate overnight or for at least a few hours.

Step 2: When ready to eat, stir the oats, add a splash of milk if needed and top with your favorite toppings. I love pecans, coconut whip and a sprinkle of cinnamon.

Tips for the Best Overnight Oats

  • Use a wide-mouth jar or container so you have room to stir everything easily and add toppings in the morning.
  • Taste before chilling. Give the mixture a quick taste and adjust sweetness or spice to your liking. Once it sets, those flavors deepen, so start where you want it.
  • Don’t skip the salt. It might seem small but a pinch of sea salt makes the pumpkin flavor pop.
  • Make a few jars at once. They keep well for several days and make weekday breakfasts so much easier.

Storing Overnight Oats

When stored in an airtight container in the fridge, these oats will last up to 5 days. They soften a bit as they sit, so I think they’re best on days 1–3, but still perfectly good on days 4 and 5.

Frequently Asked Questions

Can you warm up pumpkin overnight oats?

Short answer, yes! You can definitely warm up overnight oats, but the whole point of overnight oats is to eat them cold like muesli. If you’re looking for warm pumpkin flavored oatmeal recipes, I recommend my pumpkin oatmeal, pumpkin baked oatmeal or protein pumpkin oatmeal instead.

How do you make the Trader Joe’s pumpkin overnight oats?

Great question! The Trader Joe’s pumpkin overnight oats are sweetened with date paste similar to my Mush overnight oats copycat recipe. I am working on a pumpkin version now but basically you just follow my copycat recipe, add pumpkin puree and pumpkin pie spice.

Can I add protein powder?

Yes, my secret to overnight oats more filling is to add protein! If you feel like you’re hungry shortly after having oatmeal, try adding protein. I like adding in a little protein powder or Greek yogurt to these pumpkin overnight oats as you’ll see in the recipe card.

Ingredients  

  • ½ cup old fashioned rolled oats
  • ½ cup almond milk
  • ½ teaspoon pumpkin pie spice
  • ¼ cup canned pumpkin puree, not pumpkin pie filling
  • ½ Tablespoon chia seeds
  • 1 Tablespoon maple syrup
  • pinch of sea salt
  • optional: ½ scoop protein powder or ¼ cup plain Greek yogurt for added protein
  • toppings: pecans, hemp seeds, pepitas, nut butter, coconut whip cream, dried cranberries and granola

Instructions 

  • Combine all ingredients in a bowl except toppings and stir together. If you're using Greek yogurt or protein powder, add that in now.
  • Cover and place in the fridge overnight. If you’re in a rush you can shorten the soak time to 2-4 hours.
  • The next morning (or when ready to eat), remove lid and give oats a big stir. If they seem too thick you can add a little more milk to loosen the mixture. Add any toppings you’d like and enjoy! For this version I added pecans, coconut whipped cream and a sprinkle of cinnamon.

  • Storage: They’ll keep well in the fridge for up to 5 days in a sealed container. I usually make a few jars at once for an easy grab-and-go breakfast all week.
  • Pumpkin puree: Be sure to use pure pumpkin puree and not pumpkin pie filling, which has added sugar and spices. If you want to make your own, try my homemade pumpkin puree — it’s easy and tastes so fresh.

    Oh my goodness! Thank you for this recipe. It is delicious. I will be adding it to my rotation for sure. It seriously tastes just like a peice of pumpkin pie. I added protein powder to mine. If you are from Canada and looking for a great protein to use, I used the Vanilla cupcake for this recipe. I also added a 1/4tsp of Termeric and a small sprinkle of pepper. I couldn’t even taste the pepper in it. It is just to cause the termeric to react.

    I’ve made overnight oats in the past and I found them pretty bland.     I made this 2 nights ago & had it this morning. I wasn’t expecting much…I’m addicted to the Brownie Batter Overnight Oats, so I didn’t this was gonna do it. But OMG, it was so yummy! I added the greek yogurt. It was nice and rich. The BBOO might now be my second favorite!

    I tripled the recipe in a blender and poured it into three mason jars; got three very short servings.
    I’ve decided I’m going to combine Greek yogurt with coconut whipped cream and protein powder to top it.

    I always thought overnight oats weren’t for me. I tried several different recipes from blogs and cookbooks and all were just okay. Since it’s pumpkin everything season and I have puree to spare, I decided to give this one a go. Best. Decision. Ever. These overnight oats are MAGIC. Autumnal, pumpkiny magic. I double the recipe so I can make two breakfasts worth of oats at a time, and might even try quadrupling it so I can have a week’s worth! I love that I can make it in one bowl and don’t need to cook it on the stovetop. Less clean-up and less appliances is always a win. I up the levels of maple syrup because I like it a little bit sweeter, and I use ground flaxseed instead of the chia because I can’t stand the chia seed texture in oats and puddings. I also pop it in the microwave for a minute before I’m ready to eat it because cold oats just aren’t my jam! Now I’m super stoked to see what other overnight oats recipes I can try on this blog! 🙂

    This is hands down my four year old’s favorite breakfast. We make several days worth at a time and it’s super easy and delicious! We’ve also swapped applesauce for pumpkin and apple pie spices for PP spice and it was also tasty!

    Don’t sleep on this one. It is absolutely delicious! I add a chopped lunch box size apple and the recommended amount of greek yogurt (to boost protein). In the morning I microwave for a minute 30 seconds to knock the chill off and then I enjoy every bite!

  24. I’ve seen overnight oatmeal recipes… and this one sounds yummy. So… do you eat them cold? I kinda like warm oatmeal and am not sure about cold.

    1. Yes! Typically you eat overnight oats cold, BUT if that doesn’t sound good you can always heat them up in the morning. Maybe try this recipe, give the cold oats a taste and if you don’t like it, heat them up. 🙂

  29. These oats look so yummy – can’t wait to try them! Have dinner at Passions on the Beach if you have the time. The food and atmosphere was so wonderful – a meal highlight of our trip. If you return on a weekend day – be sure to get to the airport at least 3 hours early. You clear US Customs in Aruba and the lines are very long. Have a great trip!

  30. Where are you staying in Aruba? We were just there in July, we stayed at Bucuti and Tara and it was fabulous! I highly recommend going on one of the snorkeling tours- we went on a 3 stop catamaran one and it was amazing! We also went on a horseback tour to the Natural Pool which was great, so if you like/think you will like riding horses you may want to try it. There’s a great restaurant called the flying fishbone that you can sit with your feet in the water at sunset, fun and great food!
