This crunchy hemp granola packs a nutritional punch with a variety of nuts and seeds. It’s grain-free, vegan and sweetened only with maple syrup and dates.

I think this might be the best granola I’ve ever made!! Bold statement I know, but it’s THAT good. It has the crunchy texture and sweetness that I love but it’s completely grain-free and contains no refined sugar. Loaded with nutrient-dense nuts and seeds and lightly sweetened with maple syrup, this granola has a nutty flavor with hints of cinnamon and vanilla as well as a lovely coconut aroma.

The whole time the granola was baking our house smelled like a huge coconut macaroon… and it was amazing. If I could buy a candle that smells like this granola baking I totally would.

Is Granola Healthy?

Ready for a truth bomb? There are a lot of store bought granolas that aren’t very healthy. They’re typically packed with a lot of sugar and highly processed oils. The good news is: granola is super easy to make and homemade versions ARE healthy! Especially this one.

Ingredients in Hemp Granola

Like I mentioned, this hemp granola is super crunchy and has a subtle sweetness — just the way I like my granola. 

  • Nuts and seeds – add a variety of textures, flavors and nutrients. 
  • Maple syrup and dates – add just the right amount of sugar. 
  • Manitoba Harvest Hemp Hearts – pack quite the nutritional punch with 10 grams of plant-based protein and 10 grams of omega-3 + 6 fatty acids (aka healthy fats). They also contain magnesium, fiber and iron.

How to Serve Healthy Granola

I have no shame in admitting I often just eat this granola by the handful for a healthy snack. I also love it with almond milk and banana slices for hearty breakfast, but usually I use it as a topping for yogurt bowls, overnight oats, chia pudding and smoothie bowls

It’s so delicious we’ve already gone through two batches in a couple weeks and I’m tempted to make another batch today.

Hemp Granola

This crunchy hemp granola packs a nutritional punch with a variety of nuts and seeds. Paleo, vegan and free of refined sugar.
Prep Time: 10 minutes
Cook Time: 1 hour 5 minutes
Total Time: 1 hour 15 minutes
Servings: 20

Ingredients  

  • 3/4 cup raw almonds
  • 1/2 cup raw pumpkin seeds, (pepitas)
  • 1/2 cup raw pecans
  • 1 cup raw walnuts
  • 1 cup unsweetened coconut, desiccated, shredded or flakes
  • 1 cup hemp hearts (or hemp seeds)
  • 2 Tablespoons chia seeds
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/4 cup maple syrup
  • pinch of sea salt
  • 1/2 cup pitted and chopped Medjool dates

Instructions 

  • Preheat oven to 250°F. Place almonds, pumpkin seeds, pecans and walnuts into a food processor and pulse a few times to chop the nuts and seeds into smaller pieces. Don’t process too much because you still want some chunky pieces.
  • Transfer the nut mixture into a large bowl, add all remaining ingredients except the dates and stir well. Spread an even layer of the mixture onto a large parchment-lined baking sheet. You may need two sheets if you’re baking sheets aren’t oversized like mine.
  • Bake for 35 minutes. Remove from oven, add dates and give the mix a good stir. Bake for 25-30 minutes more or until granola is golden brown in color. Remove from oven, let cool and enjoy. It will get crunchier as it cools. I recommend storing any leftovers in a Mason/Weck jar in the fridge. It will stay extra crunchy this way.

    1. It should keep for at least a week or so! It hasn’t ever lasted that long for us. 🙂 I like to store it in the fridge but it doesn’t have to be refrigerated.

    1. Hi there! Yes, if your coconut oil is solid, you’ll want to melt it so it’s easy to pour and measure.

  9. Hi, hi! I’ve made this many times without the dates and it’s AMAZING! I’m now looking for a no sugar granola recipe. Could this be made without the maple syrup? Would I need to increase coconut oil for moisture? Any thoughts are appreciated! Thank you for the great recipe.

    1. Hi Stacey! I’m so glad that you like this recipe so much. It’s one of my favorite granola recipes too! You can certainly try it without the maple syrup. Maybe add everything (besides the maple) and give the mixture a stir and see if it seems dry. If it is add a bit more coconut oil until it seems moist enough. I’m not sure how well it will stick together, but I think it’s worth a shot. Let me know if you try it. 🙂

    1. Hey Savanna! You could certainly try it without coconut oil. The mixture might be a bit dry, but you could always use butter / ghee or more maple syrup if it seems too dry. Let me know how it turns out if you end up making this!

    This granola is AMAZING! My family can’t get enough of it. I love nuts, so the bountiful amount you get in one bite, complemented by the coconut and chia is really delicious. We have been eating it with almond milk and yogurt, as you also mentioned, but the best way to consume it is right out of the container. We’re running low, so I will probably be preparing another batch in a few days!

    One of the best granola recipe I’ve tried! Absolutely delicious! Just left out the dates because I felt it would be sweet enough with the maple syrup. Even my skeptical daughter (who apparently is not a fan of nuts, I just learned) tasted it and gave me the thumb’s up and the green light so make again. 🙂

    We LOVE this granola. My 1 and 5 year olds love it in plain yogurt. Makes the house smell so lovely when baking!

    Have you tried to sub the maple syrup for honey? (What we have on hand at the moment)

    1. Ahh yay!! I’m so glad this granola is a hit with your kids. I think using honey instead of maple syrup would work just fine! You might just need to melt it a bit before mixing if it has hardened.

    I generally eat store-bought granola because it’s easy. I only ended up making this because I ran out of my usual stuff, and I happened to have almost everything required by this recipe anyway. I’m not sure I’ll go back! My boyfriend tends to let me eat most of my baking projects, but he is addicted to this granola! I think he’s eaten it once a day this entire week. He eats it plain, and I’ve been eating it with yogurt and berries. I used about 3/4 of the maple syrup amount because it was the last of my bottle, and the granola is still tasty but I think I’ll go for the full amount next time.

    This granola is AMAZING! Easy to make, house smelled fantastic while it baked, my husband couldn’t wait to try it! The proportions are great, temperature and time of baking ideal. Nothing was burned as it happened with other granola recipes. I skipped dates (although I love dates) to make this keto friendly.     My absolute favorite granola! The smell while baking is incredible. As it cooled my husband kept walking by to grab a handful! We love it as cereal, or on oatmeal, a yogurt topper, or on a smoothie bowl. The possibilities are endless, but it never lasts long enough.. Double the recipe when you make it!

  39. Hi there, I’m so excited to try this recipe! How important is it to use raw nuts? I have most of these on already on hand, but they are roasted.

    1. Hi, Holland. Roasted nuts have a tendency to burn if you try to re-roast them, so you’re better off using raw nuts. If you do try with the pre-roasted nuts, let me know how it turns out!

  41. The recipe is great, but the timing was really off for me. I burnt 3 batches:( I finally decided to cook for only 32 minutes total and worked. Any idea what can be? It is delicious though±!!

    1. Hi Nathalie – I am so sorry to hear that. Did you bake it at 250 degrees? It is possible that your oven might be a bit more powerful than mine so that might be what caused it.   43. Do you know if it possible to skip the maple syrop? I cannot eat any type of sugar, so i was wondering if the flavour will be off without the maple.

    1. Hi Sarisa – I wouldn’t recommend leaving out the maple syrup completely because it helps the granola stick together. You could replace it with honey, agave, or another liquid sweetener of choice. I am so glad you enjoyed my 5-ingredient grain free granola. Thank you so much!

    I LOVE this recipe. I’ve made it twice now, varying the types of nuts slightly depending on what I have available. It’s one of the tastiest granolas I’ve ever made!
    (One thing to note- maybe I’m missing something but I think you forgot to say to add the dates after baking?)
