This baked oatmeal recipe is a yummy breakfast dish that can easily be customized with your favorite mix-ins. It comes together in 1 bowl and is perfect for meal prep.
If you haven’t noticed, I am obsessed with baked oatmeal. I love it so much that I have been sharing one recipe every month for over a year! I’ve had so much fun coming up with creative flavors and you all seem to enjoy making them so it’s a win, win!
The recipe here is my go-to baked oatmeal. It’s the first recipe I ever made and it’s a great place to start if you’re new to baked oatmeal because it has a classic flavor (that anyone will like) and is super easy to make!
What is Baked Oatmeal?
Baked oatmeal is healthy breakfast dish made by combining oats with a liquid, some sweeteners and flavorings and baking the mixture in the oven until it becomes firm and golden. The texture is similar to bread pudding and it’s really tasty and a fun way to switch things up from traditional stovetop oatmeal or overnight oats.
There are a couple popular variations including the style I’m sharing here with rolled oats and another viral version called blended baked oats that bakes up similar to a cake!
Why You’ll Love This Recipe
I personally LOVE all types of oatmeal (see all the oatmeal recipes here on EBF), but baked oatmeal is definitely one of my favorite ways to enjoy oatmeal. Here’s why:
- It’s the perfect meal prep recipe. Quickly whip up a batch during your weekend meal prep and reheat it for breakfast all week long.
- You only need one mixing bowl and one baking dish. Minimal dishes? Score!
- The flavor combinations are endless! As you can tell, I’ve shared 20+ different baked oatmeal recipes and counting. There are so many ways to switch things up so your baked oatmeal never gets boring.
- It’s lightly sweetened with maple syrup and made with healthy, nutritious ingredients, but doesn’t taste super duper healthy (aka like cardboard).
- It’s allergen friendly. Sensitive to dairy? You can use a dairy-free milk. Need to make it vegan? Swap in a flaxseed egg in place of a traditional egg. Gluten-free? Just be sure your oats are certified gluten-free.
Ingredients Needed
- old fashioned rolled oats – be sure to used rolled oats, not quick oats. I like using these certified gluten-free oats from Bob’s Red Mill.
- baking powder – a rising agent that helps lighten the texture of the baked oatmeal. It prevents it from becoming too dense or heavy.
- ground cinnamon – cinnamon is the perfect warming spice for oatmeal, but you can also add more spices if you’d love. Ginger and nutmeg would be nice additions.
- sea salt – to bring all of the flavors together.
- unsweetened almond milk – any dairy-free milk works, but I like to use unsweetened vanilla almond milk. Dairy based milk works too if that’s what you have on hand.
- maple syrup – pure maple syrup is the perfect natural sweetener to use in my opinion! Just be sure to use pure maple syrup, not the artificial kind labeled “pancake syrup” and made from corn syrup… NOT the same!
- egg or flaxseed – this helps bind everything together. You can use a regular egg or ground flaxseed. If you’re using the flaxseed, no need to make a flax egg with water, you can just mix the ground flaxseed directly in with the rest of your ingredients.
- coconut oil – to add moisture and richness to the recipe. Nutiva organic extra virgin coconut oil is my favorite. If you don’t want to use coconut oil, butter works too!
- pure vanilla extract – a nice flavor enhancer.
- ripe bananas – sliced ripe bananas will act as a binding agent while providing plenty of sweetness. You can also use 1/2 cup applesauce instead of the bananas if you prefer.
- pecans – I used chopped pecans as the mix-in and topping for this recipe, which adds healthy fats, texture and protein.
I used chopped pecans as a mix-in and topping for this version, but feel free to get creative and use whatever mix-ins and toppings you prefer!
Step-By-Step Process
While there is a bit of cook time, this baked oatmeal is so easy to whip up in one bowl. Here’s the process:
Step 1: Preheat your oven to 375° F and spray an 8×8 inch square baking dish with cooking spray.
Step 2: In a large bowl, mix together the oats, baking powder, cinnamon and salt. Add in the milk, maple syrup, egg, coconut oil, vanilla and bananas. Stir to combine.
Step 3: Add in 1 cup of chopped pecans to the oat mixture and mix to combine. Carefully pour the oatmeal mixture into the prepared baking dish and scatter the remaining pecans on top.
Step 4: Placed oatmeal in the oven and bake for 35-40 minutes, until the top is nicely golden and a toothpick comes out clean.
Step 5: Remove from the oven and let cool for a few minutes. Portion into 6 slices and serve. I love serving it with fresh berries and a drizzle of nut butter, but you can also drizzle on a little maple syrup if you want it a bit sweeter.
Notes and Substitutions
Need to change up the recipe based on your dietary preferences or what you have on hand? No problem. Here are some tips for doing so!
- Milk – Feel free to use whatever milk you have on hand… cow’s milk, soy milk, oat milk, almond milk, coconut milk or cashew milk. Any of these will work.
- Egg – Almost all of my baked oatmeal recipes either call for an egg or a flaxseed to bind the dish together. Eggs also help make the oatmeal creamy. You could also use chia seeds or skip the binder all together. I’ve found that the baked oatmeal still turns just fine without using the egg or flaxseed.
- Oil – You can skip the oil or swap it with another oil, melted butter (or ghee) or even applesauce or mashed banana.
- Bananas – Don’t love bananas? Swap it with 1/2 cup of applesauce, pumpkin or mashed sweet potato instead.
- Maple syrup – Any liquid sweetener like honey, agave, brown sugar or monk fruit maple syrup will work instead of maple syrup.
- Baking powder – If you don’t have baking powder or simply want to skip it, you certainly can. I’ve made baked oatmeal before without baking powder and its turned out just fine.
- Pecans – Feel free to swap the nuts with your favorite mix-in of choice. Fresh fruit, dried fruit, chocolate chips and nuts are all great options. You can use one mix-in or a few… it’s totally up to you!
What to Serve With Baked Oatmeal
Baked oatmeal is not only a great everyday breakfast recipe, it’s also a lovely addition to a brunch spread. Here are some ideas on what to serve it with:
- Eggs: Pair it with a savory egg dish! Try this dairy-free spinach quiche or this delicious hash brown breakfast casserole.
- Fruit: a bowl of fresh fruit like this easy fruit salad recipe will be an excellent addition to serve alongside this baked oatmeal.
- Cocktail: if you’re serving this recipe for an adult brunch pair it with some mimosas or these peach bellinis.
- Coffee: serve this baked oatmeal with a warm cup of plain coffee, this creamy iced coffee or a homemade pumpkin spice latte.
Can You Make Baked Oatmeal Ahead of Time?
Yes, you can totally make it ahead of time. There are a couple options that work really well.
Option 1: Bake and Then Reheat Before Serving
- Prepare baked oatmeal as the recipe suggests. Once baked, let the oatmeal cool, cover the baking dish and place in the fridge. You can do this 1-2 days in advance. When ready to serve, take oatmeal dish from fridge, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.
Option 2: Prep as Much as You Can Without Baking
- Mix together your dry ingredients in a bowl, cover and let sit out on the counter until morning.
- Mix together all the wet ingredients in another bowl, cover and store in the fridge until morning.
- In the morning, simply mix the wet and dry ingredients together, pour oatmeal mixture into your prepared baking dish and bake as recipe suggests.
How to Store and Reheat
Baked oatmeal is perfect for meal prep because it stores beautifully. Here’s how you can store and reheat leftovers:
- Refrigerate: Allow the oatmeal to cool, then cover the baking dish or transfer individual portions to an airtight container. It’l stay fresh in the fridge for up to 5 days.
- Freeze: Store in the freezer for up to 3 months. To do this, let the oatmeal cool completely, then cut into individual portions and store in freezer-safe containers or bags.
- Reheating the entire pan: Cover with foil and reheat in the oven at 350ºF for about 20 minutes or until warm.
- Reheating individual portions: set oven or toaster oven to 350ºF and bake for 5-10 minutes. You can also reheat in the microwave for 1 minute. Once warm, add your toppings and enjoy!
Baked Oatmeal FAQ’s
Yes, baked oatmeal is a healthy breakfast option. There is a great balance of macronutrients – healthy fats from the egg, coconut oil and nuts, fiber from the oats, and lean protein from the egg.
All of my baked oatmeal recipes are a bit soft, but shouldn’t be too soggy. If a recipe calls for mashed bananas, make sure the mashed bananas aren’t overly ripe or that could add extra liquid. If yours turns out gooey or soggy, you might need to cook it longer.
Yes! Since this recipe is moist it should be stored covered in the fridge or freezer. If you store it at room temperature bacteria can grow quickly and spoil your oats.
You can use steel cut or quick oats for baked oatmeal, but you need to follow a recipe that specially calls for those types of oats because the liquid ratio is different. I do have a baked steel cut oatmeal recipe.
Yes! I’ve added a scoop of protein powder to my recipes without needing to add more liquid! If you’re adding more than one scoop of protein powder you might want to add more liquid. I recommend following my protein baked oatmeal recipe.

The Choc baked oatmeal was super quick & easy to make. The only reason I kept from giving it 5 stars was because it was too chocolatey for me (& I’m a bit of a chocoholic, but apparently not fist thing in the morning😄) On a 5 star side, it was the perfect serving of protein, fat, & carbs, before my early morning workout! So I’ll finish it this week and look forward to trying a few other oatmeal recipes.
So glad you enjoyed this recipe, Donna! It makes a good healthy dessert option too. 🙂
WOW! I made the Maple Pecan Baked Oatmeal this morning and it was super easy. The best part is how delicious it was. I added in apples, dark chocolate and pecans and we loved it! Should there be an egg in the basic recipie, or should the flax seed be prepped as egg substitute? I added an egg and it worked, but was wondering.
Some of the recipes call for an egg and some just flaxseed, but they can be used interchangeably. 🙂

We made the delicious birthday cake baked oatmeal and it wasn’t even our birthdays!! We just love a good excuse for “cake batter” anything, and this hit the spot! And my husband was especially smitten with the healthy frosting!
Made the strawberry banana baked oatmeal this morning and it is so good! I can’t wait to try the other recipes because baked oatmeal is the perfect work from home breakfast. Quickly toss everything together and pop into the oven and let it cook while you get work done and before you know it a delicious breakfast is ready. I think birthday cake will be the next one I try!
Woo!! So glad you loved this recipe, Lauren. Thanks for making it and for coming back to leave a review. I so appreciate it!
Brittany,
This morning I made the baked maple oatmeal. Now I have several yummy breakfasts to look forward to. Since I have been following the EBF food plan, my attitude towards oatmeal has changed 100%. I always thought the only way to have it for breakfast was with those instant, sugar loaded packets. Now it is my favorite breakfast and I love that you offer me a multitude of delicious ways to prepare it.
Woo!! This makes me so happy to hear, Louise. I’m so glad you loved the maple one. Thanks for trying it and for coming back to leave a review. I so appreciate it!
I make the strawberry banana chocolate oatmeal recipe, but always switch out the toppings depending on what fruit I have! This time, I only did bananas. It was basically banana bread baked oatmeal, and it was delicious! My house smells so good, and everyone loves it.
So glad you loved this recipe, Alyssa!! Thanks for making it and for coming back to leave a review. I so appreciate it. 🙂
I made the Samoa one this morning, it might be my new favorite!

So glad you loved the pb banana one, Suzy!! Thanks for the review. I so appreciate it. 🙂
I made the blueberry baked oatmeal and it was delicious. I noticed when I reheated the leftovers it was a little dry, which I’ve never ha with any of the other baked oatmeals, which is why I gave it 4 stars. Would definitely make again
I made the blueberry baked oatmeal and it was SOOO good!! I love eating bird food and how easy all the recipes are to follow! I can’t wait to try all the other flavors :))
Woo!! So glad you loved the blueberry one, Gaby. Thanks for coming back to leave a review. I so appreciate it!
Ok I’ve always shied away from baked oatmeal because buying it at coffee shops it’s always dry. And I do prefer my oatmeal a little more on the runny side. But I made the Birthday cake oatmeal because I had the ingredients and leftover cream cheese frosting from a king cake I made and y’all… it will be hard to go back to soupy oats! This is divine and delicious and I feel a little naughty eating it for breakfast. My husband say it in the fridge and said, “When did we get a cookie cake delicious looking thing!? You’ve been holding out on me!” So so good.
Ahh yay!! That makes me so happy to hear. I’m pumped that the bday cake baked oatmeal was a hit!! Thanks for giving it a chance and for coming back to leave a review. I so appreciate it, Lena.
I love all these baked oatmeals! I’ve made several (blueberry, strawberry banana, apple cinnamon, peach, banana peanut butter), and they are all delicious! They’re also the perfect breakfast for meal prep, and keep me full until lunch. I just made the chocolate peanut butter baked oatmeal for the first time, and it is sooo good! Like eating dessert for breakfast. Will definitely keep making these!
So glad you’re loving the baked oatmeal recipes, Catie. Thanks for making them and for coming back to leave a review. I so appreciate it!
I’ve been making the pumpkin baked oatmeal all fall/winter! It’s such an easy make ahead breakfast and is a favorite with the whole family! The blueberry and apple cinnamon are favorites, too!
So glad you’re loving the baked oatmeal recipes, Emily!! Thanks for coming back to leave a review. I so appreciate it.

I love love all your baked oatmeal recipes!!
My oatmeal menu used to be either microwave or overnight. Only those two, and then this is totally a game changer.
I made the chopped apple cinnamon one and the muffin with two different ones. I only had ingredients for the banana chocolate chips and blueberries. I put one of each in the zip lock freezer bags to store. thaw over night and toast them in the morning. Perfect breakfast with a cup of coffee. Thanks for creating and sharing such a great healthy recipes. Can’t wait to make next one. 🙂
So glad you’re loving the baked oatmeal recipes, Grace!! Thanks for coming back to leave a review. I so appreciate it!
I made the chocolate baked oatmeal. It was sooooo good. Tastes like a brownie but I don’t feel quite as guilty when I go for the 2nd serving. Perfect for a quick snack or anytime. I am afraid to try the others because I may turn into oatmeal myself! I plan on making the chocolate for Valentine’s breakfast in bed again on Sunday! Finding this website and you on Instagram has been the best present I’ve given myself in 2021. I always look forward to your recipes and posts and sweet updates on your family.
Ahh yay!! So glad you loved the chocolate one, Martha!! And so glad you found me too!! Thanks for coming back to leave a comment, I so appreciate it. 🙂
Oatmeal Bakes have absolutely become a part of my weekly prep. We love the peanut butter banana one. I’ve also tried the blueberry, peach, and strawberry banana chocolate one. We’re making the strawberry banana chocolate one this weekend for Valentines Day.

Woo!! So glad you loved it, Kristen. Thanks for the review. I so appreciate it!
I love just about all Eating Bird Food recipes, but the baked oatmeal is always a huge hit with my family. I really enjoy how easy it is to avoid breakfast boredom by just changing up the stir in ingredients. It’s healthy, tasty, and easy to make…all the ingredients for a win in my book!
So glad you’re a fan of the baked oatmeal, Morgan!! Thanks for coming back to leave a review. I so appreciate it!

Made the chocolate peanut butter baked oatmeal and it was delicious 😋
So glad you loved it, Angela!! Thanks for the review. I so appreciate it. 🙂
This Baked Oatmeal is absolutely outstanding. I have a family recipe for Baked Oatmeal, but it is loaded with sugar and oil so it’s more of a treat then a breakfast food. I found this recipe through other EBF recipes, and I’m so glad I did! Super easy, can be modified, and doesn’t require anything out of the ordinary to make a basic pan of it. Thanks for creating this one!
So glad you loved the baked oatmeal recipe, Kate!! I so appreciate you coming back to leave a review. It means the world to me. 🙂
I’ve made so many of these delicious oatmeal bakes this past year that I thought it was about time to leave a review. I always half the recipe (household of one) but still use 1 full egg. The bake just turns out extra fluffy (which I think is yummy). Also, I always fully mash the banana. I bake in an ~8 inch casserole dish at 375˚F for 1 hour. My FAVORITE baked oatmeal variety is probably just the blueberry one. Reliably delicious!
So glad you’ve been loving the baked oatmeal recipes, Maddie. Thanks for coming back to leave a review. I so appreciate it!
Let me preface this by saying I live with two other people in my household who HATE oatmeal in any form (even cookies!!). So needless to say, getting them to even TRY the blueberry baked oatmeal I made was a fiasco. BUT. They both really actually liked it!! To the point where they ate it for breakfast EVERY DAY. If that’s not a miracle, I don’t know what is. I added chopped almonds and walnuts for some extra crunch and it was fantastic. Thank you!
Omg yay!! That makes me so happy to hear, Alyssa. I’m so pumped the blueberry baked oatmeal was a hit!! Thanks so much for making it and for coming back to leave a review. I so appreciate it. 🙂
Love oatmeal bakes!! I have made so many and love the versatility of the flavors. Chocolate oatmeal bake is like dessert to me!!
Woo!! So glad you’ve been loving the baked oatmeal recipes, Lisa! Thanks for the review. I so appreciate it.
I love EBF recipes! I first found you through an overnight oats recipe and your site has quickly become my go to for recipes and meal ideas. I’ve tried the Samoa oatmeal (because…hello coconut and date caramel) and the blueberry recipe. This time I’m going for the cups for meal planning. EBF recipe rations are always solid and I love the included suggestions to make things dairy free!
So glad you’ve been enjoying the baked oatmeal recipes, Julie!! Thanks for trying them and for coming back to leave a review. I so appreciate it!

I have made so many of these baked oatmeal’s, they are so easy to make and take for meals later in the week. My favorite used to be the zucchini bread one but I made the chocolate one this morning topped with peanut butter and OMG YUM! I might do a combo next week Chocolate Zucchini Bread!

My whole family is obsessed with your baked oatmeal recipes! I just pulled a blueberry baked oatmeal out of the oven a half hour ago, and it’s already gone! Woo!! So glad this recipe was a hit, Brooke. Thanks for making it and for coming back to leave a review. I so appreciate it!
Made the blueberry baked oatmeal because it was cold, hubs craved oatmeal like we do about 4 times / week 😂, and we had every single ingredient ready to go. Love that I didn’t have to make a huge kitchen mess to make it, that it wasn’t too sweet, and that it felt hearty but healthy to consume. Only downfall is that the two of us finished it in less than 24 hours. Thanks for a great staple recipe!
So glad this recipe was a hit!! Sounds like you might have to make a double batch next time! haha 🙂 Thanks for the review, Michelle. I so appreciate it!
My modifications to Easy Baked Oatmeal:
> Honey instead of brown sugar
> Canola instead of coconut oil
> 1 peeled and chopped pear instead of banana
> Remainder of almond butter instead of mix-ins.
> Melted the nut butter and honey before blending into mixture.
Warm and tasty and filling.
Thanks for sharing the subs you made, Stephanie! I’m glad you enjoyed this baked oatmeal recipe. 🙂
I made the easy baked oatmeal with dried cranberries as mix ins because they are my son’s favorite right now. He is a very picky toddler, and we have both been enjoying this for breakfast!
So glad this recipe was a hit, Angelle. Thanks for making it and for coming back to leave a review. I so appreciate it!
I’ve made the Maple Pecan and Apple Cinnamon baked oatmeal so far and they are both amazing! They are the perfect meal prep breakfast for the week. I like adding extra nuts and serving with fresh honey and berries with a little milk. I love it! 😋

Woo!! So glad it was a hit, Suzy. Thanks for making it and for coming back to leave a review. I so appreciate it!
The strawberry banana baked at meal is one of my all-time favorite recipes. I have made other baked oatmeals that I did not love in the past, but this one is breakfast and dessert and sometimes lunch. Healthy and delicious – – my kids happily eat it, and the neighborhood kids love it when I dish it out as well. Dairy free and gluten free make an easy and perfect breakfast casserole alternative for guests with restrictions. Can’t wait to try your other baked oatmeal recipes.
Woo!! So glad this baked oatmeal was a hit!! Thanks so much for trying my recipe and for coming back to leave a review. I so appreciate it!

Really tasty treat! I eat plain oatmeal almost every day and this was a nice change. I made the original recipe with banana, an egg, and vegetable oil because that’s what I had available. Worked great. I added a pinch of cloves and ginger and mixed in fresh blueberries. I also added a tablespoon of Sweet Ginger Bites (from Penney’s). So good!!
Woo!! So glad you loved it, Rebecca. Thanks for the review. I so appreciate it!
I finally made the famous baked oatmeal and wow I can’t believe I went this long without it in my rotation! I made the blueberry-Olivia’s version-sans maple syrup 🙂 to make it with no added sugar. Sprinkled some chopped walnuts on top. Delish! Thanks Brittany!
Woo!! So glad you finally tried it and loved it, Maggie!! Thanks for coming back to leave a review. I so appreciate it. 🙂
I just made the birthday cake oatmeal and it was amazing! My 5th one I’ve tried snd by far my favorite. The texture is excellent (subbed applesauce for banana) and the flavor is perfect. The almond and butter extract are game changing !
Woo!! So glad you loved the bday baked oatmeal, Nina!! Thanks for making it and for coming back to leave a review. I so appreciate it!
I made the gingerbread baked oatmeal and we love it! That was actually my first experience with gingerbread. I know it’s weird, but we just never had it growing up because mom didn’t like it. Now I want everything to taste like gingerbread! I also made the sweet potato baked oatmeal. My husband was skeptical about it but once he tasted it, he became obsessed! He had me make it just about every week for a month! Thanks for the great recipes!
Ahh yay, that makes me so happy to hear!! I’m glad you’re loving the baked oatmeal recipes. Thanks so much for coming back to leave a review, Carrie. I so appreciate it!
I made the apple and raisin baked oatmeal last week. The recipe was so easy to follow and put together. The baked oatmeal was delicious, I really enjoyed the thickness of the oatmeal and the sweetness of the raisins (I added walnuts as well). It was so nice to wake up in the morning and grab a portion of the leftovers and just heat it up in the microwave. Thank you!
So glad you loved this recipe, Susan!! Thanks for making it and for coming back to leave a review. I so appreciate it!

Delicious! I had mashed bananas that needed to be used, so I added a cup and a half in place of the sliced bananas and added the blueberries. I baked it for 45 minutes. We topped it with cinnamon infused maple syrup and a splash of almond milk. I will definitely be adding this to our breakfast rotation. Thanks so much!
So glad you loved the baked oatmeal, Jill!! Thanks for coming back to leave a review. I so appreciate it!
I wasn’t totally sold on Baked Oatmeal until I tried an EBF recipe! I absolutely love anything Chai spice, so I was intrigued to try EBF’s Chai Baked Oatmeal. Really love how we are convinced we won’t like something until someone comes along with something fun to spice it up. Delicious! Added some almond milk, toasted pecans when I served it up. Yum-o!

The kids loved the last baked oatmeal recipe (Strawberry banana) so much, that they wanted to try another one. Even though we’re not even close to it being anyone’s birthday, they chose Birthday Cake baked oatmeal. It tastes just like birthday cake. I’ll definitely have this for my birthday breakfast!
So glad the baked oatmeal recipes have been a hit!! Thanks for making them and for coming back to leave a review. I so appreciate it, Susannah!
Made the peanut butter banana baked oatmeal and loved it! My toddler even asked for more at breakfast this morning. We’re not a big oatmeal loving family, I’ve always felt like it turned out too soggy when I tried to make other recipes but this one was perfect. It was a hit with the whole family so we will absolutely be making this one and other variations from EBF in the future!
Loved this and my toddler and baby did too! Made it on Sunday to eat during the week – it lasted us only 3 days! Omitted the sugar and mashed the bananas instead of slicing. Will definitely make again!
I love how easy and versatile this is! Once you have the basic recipe there’s so many things you can add to it to make it different. It’s also perfects the balance of tasting delicious and also good for you! So glad I’ve found this recipe, I’ve made 3 different versions so far and they don’t disappoint!

Absolutely love this concept for a recipe. It was something I never would have thought of and we expanded upon it with baked oatmeal waffles. Without EBF’s baked oatmeal- we wouldn’t have had such a yummy breakfast! Now it’s a staple for breakfasts!
Love that you turned one of the recipes into waffles!! Thanks for sharing and for coming back to leave a review. I so appreciate it. 🙂

This is the perfect time of year for oatmeal, and I’ve enjoyed having an easy packable breakfast. I tend to enjoy things either really sweet or not sweet at all, so I sometime find I want to add a tiny bit more maple syrup (or peanut butter can be satisfying too!). I would definitely enjoy a savory baked oatmeal too! (I don’t think you have one…yet?)
I’m working on a savory one!! 🙂 SO glad you’re loving the baked oatmeal, Charley. Thanks for the review. I so appreciate it!
I love baked oatmeal. We tried the Peanut Butter Banana Baked Oatmeal and it was delicious! This recipe is a keeper!

So delicious!! And a perfect way to use up some ripe bananas! I will definitely be making this again.
Yay!! So glad you loved this recipe. Thanks for the review. I so appreciate it!
I made the baked oatmeal cups this morning and they were delicious! I made a row of banana, a row of raspberry (and one blueberry for my dad), and a row of chocolate chip. These would be great for meal prep…. but my family finished them in one day 😂 I used water instead of milk and it worked just fine! I want to get silicone cups instead of the paper ones I used for next time.
So glad these were a hit with your family!! Sounds like you might have to make a double batch next time! 🙂 Thanks for coming back to leave a review. I so appreciate it!
I made the chai baked oatmeal for my family yesterday, topped off with sliced bananas and a little extra maple syrup. It was a HUGE hit!! Devoured by adults and kids alike, there was not a crumb left!! And best of all, it was gluten free, dairy free, and egg free, so EVERYONE could enjoy it! Will definitely be making more of these!
Woo!! So glad the chai one was a hit with your fam, Cassandra. Thanks so much for coming back to leave a review. I so appreciate it!

Oh my GOOD-ness! Made the Blended Baked Oats (from a different post of yours)this morning for a Saturday morning breakfast treat 😋. It was “different” (hubby’s word), but Oh, So Yummy– In fact, Delicious! Smelled so good while baking, we could hardly stand it! Seriously Brittany, thank you for the great recipe(s). 👍I doubled the recipe (minus egg) and baked in 9-inch pie pan (8-inch pie pan might have been better, but doesn’t really matter–) So, So Good!
Ahh yay!! So glad you loved the blended baked oats, Tammy!! Thanks so much for trying the recipe and for coming back to leave a review. I so appreciate it!
Recently made the blueberry baked oatmeal to take over for my mom…needed something healthy and delicious she could easily heat up and eat. Smelled SO good as it baked! Looking forward to trying other flavor combinations!

What does February mean? It means those little ladies are gonna be coming around selling their irresistible cookies and throwing a wrench in your plans for eating healthy and staying DF and GF. And it’s not like you can enjoy just one Girl Scout Cookie – open the box and you’ve committed to eating them all. Thin Mints and Samoas are my vice, so when I read the recipe title of “Easy Samoa Baked Oatmeal” from EBF, I was in! Been saving this recipe for today to enjoy on a Saturday, after running a soggy cross county trail race (because I’m not a runner, so I need some sort of bribery). Thankfully it delivered! I shared the recipe and pics and have been getting messages from friends either asking if they can come over for some or sending pics that they immediately raided their pantries for the ingredients and made this for themselves. So tasty! I have yet to find an EBF recipe that we don’t love based on what we’ve tried. Keep them coming:)
AHh yay!! That makes me SO happy to hear, Amy!! So pumped you loved this recipe. Thanks for the review, I really appreciate it!

We love making all of Brittany’s recipes, but this is our absolute favorite. We made the Maple Pecan, and ended up making it again the next day! We tried one with olive oil for less saturated fat and still fabulous both ways. THANK YOU!
Ahh yay, so glad you’re loving the maple pecan recipe, Deanna. Thanks for the review, I really appreciate it!

I made the Samoa baked oatmeal as my first EBF recipe ever and wow!!! The date caramel is so delicious, I will use that for future sweet recipes. My entire family loved this, including my 10 year old and 3 year old! Also, what a great gift to another family when you need to deliver a meal. No one ever thinks of providing a breakfast and this is just to die for! Thank you!

First time making this simple dish and it was super easy. Prepped the dry ingredients the night before so putting it all together was super fast. Only had one banana so I added half of a diced Granny Smith apple. This came out very delicious and I would make again adding nuts and berries next time!
So glad you loved this recipe, Christina!! Thanks for the review. I so appreciate it!
So yummy!!!! And now to trade all the combos….:)
I actually added in two tbsp of brewer’s yeast making it lactation baked oatmeal!!

First time making your peanut butter banana baked oatmeal… I also added your date caramel sauce… (Whoa – that is the best topping!!!) Thanks for including all the information for tracking… This makes using MyFitnessPal a snap… Can’t wait to make more… Thaks for the recipes…
So glad you loved the baked oatmeal and date caramel sauce (isn’t it so good?!). Thanks for making it and for coming back to leave a review. I so appreciate it, David.
Baked for 60 minutes and still a sloppy undercooked mess.
So sorry to hear that this recipe didn’t turn out for you, Zoe. I haven’t heard of anyone else having issues with it not cooking. Did you change anything about the recipe?
You forgot the egg… I’m assuming. that’s why the same thing happened to me.
I made this yesterday with a couple of handfuls of butterscotch chips I’d been trying to find a use for, and it was AMAZING!! Super easy to make, filling without being heavy, and VERY tasty!!
Yay! So glad this recipe was a hit! I bet it was delicious with butterscotch chips added to it. Thanks for making it and for coming back to leave a review. I so appreciate it, Melissa.
Roughly what is the nutritional info for this baked oatmeal base?(before all the mix ins)
Thanks! Love your baked oatmeal recipes, I’ve tried a couple and they have been huge hits with my husband and toddler!
I just added the nutritional info for the basic recipe! 🙂
Love your baked and overnight oats!!
If you sub olive oil for coconut oil, do you use the same amount noted in your recipe? For example, if you said 2 tbsp coconut oil, do you use 2 tbsp olive oil instead?
Yes!
I made the basic recipe but cut it in half and made 2 very generous individual servings in ramekins. I added extra ground flax seed, chopped apples, a few dried cranberries, and some hemp seed hearts. Absolutely delicious! Can’t wait to try more of the recipes!
So glad you loved the baked oatmeal, Tobi!! Thanks for making it and for coming back to leave a review. I so appreciate it!
I tried it and this was fantastic! Subbed olive oil for coconut oil and used the egg. I did 3/4 tsp of cinnamon and 1/4 tsp of nutmeg. After baking and cooling, I portioned it out and now I have baked oatmeal squares at the ready! Thank you for a fantastic recipe!
So glad you enjoyed this recipe, Cindy! Thanks for the review. I so appreciate it!
This was fantastic! Subbed olive oil. Portioned it out. Easy peasy.
So glad you enjoyed this recipe, Cindy! Thanks for the review. I appreciate it!
Love love love this! 10 stars if I could. We added extra banana slices, and 1 cup chocolate chips. Used butter instead of coconut oil because that’s what we had.
Do you think it would work to spoon this into muffin cups to make easy individual portions?
So glad you loved this recipe, Isabella! Yes, you can definitely make baked oatmeal in muffin cups. I do have a recipe for baked oatmeal cups that you could follow!
Made this today and it was so easy and delicious!! Used a handful of mini chocolate chips, blueberries, pecans and almonds for the mix ins, and it was the perfect blend of sweet and crunchy. Definitely want to try again with different mix in combos!
Woo!! I’m so glad this recipe was a hit, Natalia! Thanks for the review. I so appreciate it!
Delicious! I made it this morning with blueberries. Fantastic with a glass of milk.
Yay!! I’m so glad you enjoyed this baked oatmeal, Cathy! Thanks for the review 🙂
Every recipe I have tried has been wonderful. My favorite is the sweet potato Baked Oatmeal. It tastes great and I feel good about eating it.
I do have a question, do you have a conversion for making your oatmeal bakes in the instant pot? That is the next step I want to try. Thank you for all the yummy recipes and any help with the IP.
Hey Vicki – So glad you’ve been loving the baked oatmeals! I haven’t tested baked oats in the instant pot, but I do have a recipe for steel cut oats that can be made in the instant pot or slow cooker.
Hi, I wanted to make completely prepare this tonight, put it in the fridge and bake it in the morning. Would that work? I saw you said to assemble it in separate dishes and bake it in the morning, but would it change the recipe or the texture to let it sit raw all night before baking it?
Hey Lauren – Sorry, just seeing this. As I mention in the blog post, I wouldn’t assemble the dry and wet ingredients together overnight as the wet ingredients will soak up much of the liquid.
You have opened up a whole new world with these oat recipes!. Great alternative to white or any gluten bread
All the best
Yay!! I’m so glad you’ve been enjoying them, Marlene! Thanks so much for the review. I so appreciate it!!
Hi Brittany! I haven’t made these yet, but I’ve been dying to try baked oatmeal and your recipe was the first one that popped up. Just a couple questions. (1) Are the measurements for the add ins 1 1/2 cups or 1 half cup (1.5 vs. 0.5)? (2) Are sliced bananas interchangeable with mashed bananas? p.s. I thought your last name said “Muffins”
Hey Kim – The measurements for the mix-ins is 1.5 cups and yes, sliced bananas can be used interchangeably with mashed bananas or applesauce. 🙂
Wondered if you have a recipe on here that uses quick cooking oats? I may not have looked we enough, but I didn’t see one… I know it will change the measuring… Interested in the muffin tin oats too
Thx so much, grey ideas and recipes!!!!
Brenda
Hey Brenda – All of my baked oatmeals call for rolled oats, except for a few that call for steel cut oats. I wouldn’t recommend using quick oats as the liquid ratio and quick time will vary and I haven’t tested it. I do have these baked oatmeal cups that are baked in a muffin tin if that helps. 🙂
I love this idea, but have never had baked oatmeal. Can you tell me… What is the finished product like? Cake? Crispy? THANKS. ☺️
Hi, Sally! The end result is similar to regular oatmeal with a little more structure if that makes sense. I suppose more on the cakey side, I wouldn’t call it crispy.
What I love best is that we’re given all of the substitutes to make this work based on what ingredients I have at home and any allergies! This recipe is delicious and you can bet your bottom that I will make it again! So easy!
Ah yay! So happy to hear you enjoyed this recipe, Kirsten. Thanks so much for the review and star rating. I really appreciate it!
Try adding an egg to leftover pot cooked oatmeal and a bit of flour and fry it. Garnish with maple syrup
Love this recipe! I’ve made it weekly for over 2 years. What are the ingredient amounts for a double recipe? Thanks
Hi, Katherine. You should be able to just double all the ingredients with no issue! Alternatively, when you’re looking at the recipe card servings, you should be able to change the number of servings to 12. Let me know if that helped!
Hi! Looking forward to trying this recipe, I’m allergic to coconut so wondering what would you recommend as a coconut oil substitute?
Hi, Chryssi. Any neutral oil will do, such as avocado or even olive oil.
Can I use skim milk instead of Almond milk in the baked oatmeal recipes
Hi Connie, any milk will work! Let me know if you make this recipe.
So good, made a double batch to freeze and have for later!
Yay! I’m so glad you loved this recipe. Thanks for making it and for coming back to leave a comment + star rating. I so appreciate it!
Super yummy! My first time making baked oatmeal. I used walnuts and pecans, and left out the sugar, vanilla and cinnamon (I don’t normally sweeten my oatmeal) and it was delicious! An extra pat of butter and it was like oatmeal banana bread.
YUM! Sounds so delicious, I am glad that you are enjoying this recipe, Andrea. Thank you for coming back and sharing your review & star rating, I really appreciate it.
Great post! I love how you included so many different flavor options for baked oatmeal. I especially can’t wait to try the Peach and Samoa flavors. I also appreciate the tips on how to store and reheat the oatmeal, as well as the substitution options for those with dietary restrictions. Thanks for sharing all your knowledge and expertise on this recipe, I can’t wait to make my first batch of baked oatmeal!
Of course! I so glad that you found this post helpful. Let me know how you like these recipes and which one you try first. Enjoy!
This recipe calls for 2 cups of milk. Is that meant to be 1/2 cup like the other recipes or is it actually 2 cups?
Hi Rose-Mary – You will want to use 2 cups of milk for this recipe. I recommend using equal parts oats & milk. Hope this helps and you enjoy this recipe.
This worked out great. I used egg, whole milk and lard. The kids loved it.
Ah YAY! I am excited to hear that this recipe is a hit for the whole family, Andy! Thank you so much for sharing your review + star rating, I really appreciate it!
I have been eating this for months as my lunch. Super easy to make. I tend to use protein shakes as my milk substitute and I find when I add coconut or nuts I need to add more milk as it comes out a little drier. also tried with brown sugar instead of maple syrup when I ran out. That tastes good too. Thanks so much for coming up with this easy great meal.
Aw yay, this means so much to me! I am excited to hear you’re loving this recipe. Thank you for coming back and sharing your review & star rating, I really appreciate it!
I was given baked oatmeal recipe by chef @Glacier National Park. I tried your recipe and while it’s fine, we prefer his recipe. Maybe it’s the memories…😎 By the way, where did you get your degree? Did you get your degree in nutrition, registered dietician or in public health? TIA.
Hi Chris! Would you mind sharing the recipe from the chef? I’d love to try it! 🙂 And I did my health coaching program through the Institute for Integrative Nutrition.
I have been looking for new baked oatmeal recipes and I am so glad I found your recipe. It tastes like banana bread. I will definitely be making this again as the weather gets cooler.
Ahh this is so great to hear, Kelcie. I am happy you are loving this baked oatmeal recipe and it turned out delicious for you. Thanks for your review & star rating, I truly appreciate it!
