Evening friends! I hope you’re having a great weekend thus far. I have a tasty little blueberry smoothie to share with you all tonight.
Last week I found out that there is a blueberry recipe contest for bloggers being put on by the U.S. Highbush Blueberry Council that ends tonight. Blueberries, which are now being called Little Blue Dynamos are an everyday superfood with only 80 calories per cup and a plethora of health benefits including vitamin c, manganese, fiber, and antioxidants.
I find it easy to use them all of time (fresh in the summer or frozen in the winter) as a part of my breakfast because they’re perfect as a topping for protein pancakes, greek yogurt and in overnight oats. After looking over a few of my recipes here on EBF that feature blueberries, I decided my favorite blueberry smoothie was worthy of winning a blueberry recipe contest (and in need of a good photo) so here she is – a gussied up version of my ABB Smoothie.
- 1 frozen banana
- 1 cup frozen (or fresh) blueberries
- handful of fresh baby spinach
- 1 Tablespoon natural almond butter
- 1 Tablespoon unsweetened dried coconut
- 1 cup almond milk
- 3-5 cubes of ice
- Place all ingredients into a high powered blender and blend until smooth. If the smoothie is too thick, add a little more almond milk to get the consistency you like. Pour into a glass and enjoy.
It’s been way too long since I’ve made this smoothie. I’d forgotten how good it is! I love the overall fresh flavor and natural sweetness of the fruits as well as the creaminess of the almond milk and almond butter. The dried coconut also adds a nice texture and gives a little something to “chew on.” And don’t be scared of the spinach, you can’t taste it at all!
