Easy chocolate chia mousse that takes only 10 minutes to make. Perfect for breakfast, dessert. Gluten-free and vegan.

This chocolate chia mousse is very similar to my basic chia pudding recipe, but we’re blending everything in a high-powered blender which gives the chia pudding a mousse-like consistency. So pro tip: if you’ve been intrigued by the nutrient-packed chia pudding, but don’t love the seedy texture, try blending it!

Why I Love Chia Pudding

  1. It’s ridiculously easy to make.
  2. It’s packed with nutrients! Chia seeds are a great source of healthy fats and fiber… read: they’ll keep you satisfied for hours! Read all chia benefits.
  3. There are countless flavor combinations. (Try this pumpkin chia mousse if you’re a pumpkin fan!)
  4. Chia pudding basically allows you to eat dessert any time of day. It’s thick and creamy like regular pudding but the nutrition facts make it acceptable to eat for breakfast, snacks or dessert.
  5. Chia pudding is an awesome meal-prep option because it will stay good in the fridge for 5-7 days!

How to Make Chocolate Chia Mousse

This chocolate chia mousse is a little different than most of the chia pudding recipes on EBF because it’s blended! Blending the chia pudding makes it extra thick, smooth and creamy and more of a real “pudding” consistency.

To make it, you simply add all your chia pudding ingredients into a blender. Start at a low setting on your blender (variable on the Vitamix) and progress to high. Blend until chia seeds are almost undetectable and mixture is smooth, scraping down the sides of the blender with a spatula if needed. 

Chia pudding should be thick and ready to enjoy so you can top with your favorite toppings and dive in or if you like your chocolate pudding cold, transfer to a resealable container, cover and refrigerate for 3-4 hours to chill before topping with your favorite toppings and eating.

One tip: if you don’t have a high-powered blender you can always buy pre-ground chia seeds or grind them yourself using a coffee grinder.

I recently made a double batch of this chocolate chia pudding so you better believe I’ll be enjoying it after dinner tonight… and maybe even for breakfast.

Chocolate Chia Mousse

Easy chocolate chia mousse that takes only 10 minutes to make. Perfect for breakfast, dessert. Gluten-free and vegan.

Ingredients  

  • 1 cup unsweetened vanilla almond milk
  • 6 Tablespoons chia seeds
  • ¼ cup maple syrup, honey or sweetener of choice*
  • 2 Tablespoons cocoa powder
  • teaspoon salt
  • 1 teaspoon vanilla extract
  • toppings of choice: fresh berries, chocolate chips, nuts

Instructions 

  • Add almond milk, chia seeds, maple syrup, cocoa powder, vanilla and salt into a high powered blender. Start at a low setting on your blender (variable on the Vitamix) and progress to high. Blend until chia seeds are almost undetectable and mixture is smooth, scraping down the sides of the blender with a spatula if needed. 
  • Chia pudding should be thick and ready to enjoy so you can top with your favorite toppings and dive in or if you like your chocolate pudding cold, transfer to a resealable container, cover and refrigerate for 3-4 hours to chill before eating.

Notes

  • If you don’t have a high-powered blender your chia pudding might not get as smooth and creamy and will have the texture of regular chia pudding, similar to tapioca pudding.
  • Use stevia or monkfruit sweetener instead of maple syrup or honey for a low-sugar option.

    I’ve made this recipe before as a mousse in my Vitamix and I loved it! I’m trying to coax my extended family into trying it. I can’t quite remember how much one recipe makes (although I seem to remember wanting to polish it off in one sitting! 😉). The nutritional info is awesome, but any chance you could post the quantity that the entire recipe makes? That would be super helpful when determining how many batches may be needed.

    Love this texture more than overnight chia puddings. I use almond milk, chocolate protein powder, and ground chia (in my coffee grinder). Blended well in blender. No other sweeteners. Top with banana slices. Saves well for multiple breakfast servings. Thanks!

    This pudding was amazing before I refrigerated it, but the portions that I put in the fridge are really hard to eat:/

    The chocolate flavour is almost gone, and it has turned into one big gummy mess, even an hour after taking it out to warm up. Have you experienced this before, and any advice on how to fix it? It was so good, but I can’t eat the whole thing in one shot.

    Side note; Your pumpkin chia mousse is incredible and has become a staple in our fridge!

  24. I’ve never made anything with chia before so not sure what to expect for taste . My attempt was extremely bitter – chia tasted terrible . Could it be the ground black seeds I have ? – noticed the pkg was at expiry date so wondering if seeds change flavour if old ?

  25. Haven’t made this yet – wondering a few things. Why use black vs white chia seeds? Can nuts be included in the pudding rather than just on top? Typically when using almond or coconut milk to make pudding, you need to add cornstarch to thicken it. Tha- why is that

    1. Once blended, the chia pudding becomes quite thick so there is no need to add cornstarch! You can use white chia seeds, that shouldn’t be an issue and you can definitely add nuts to this vs on top.

  27. I have a question – do you blend this as soon as you mix it or do you let it sit for 1-2 hours to help the chia seeds become gelatinous? From the way I read the recipe, it sounds like you just blend it all together immediately, but unsure because I’ve always heard you need to soak the chia seeds first.

    1. Hi M! I blend right away and it gels up quickly but if you want it thicker you can blend after letting it get gelatinous. It’s totally up to you! 🙂

    I made your choa seed pudding and really enjoyed it. I haven’t been successfully able to make a chia seed that I really enjoy but this one changes my perspective. Thank you for that.   33. You should update your nutritional facts. The numbers are totally wrong. This “pudding” will have like 50 grams of sugar in it. So if its yeilds enough for 2 people, that’s at least 25 grams a person. I’m not sure how you calculated the 7 grams as listed.

    1. Hey Dan, I’m actually really curious as to how you got 50g of sugar from the recipe. 1/4 cup maple syrup is about 14g of sugar, nothing else really has sugar in it aside from whatever topings you may choose. Maybe I’m missing something as well?

      1. Maybe it depends on your brand of maple syrup? I’ve been looking at labels for different bottle of pure maple syrup, and Dan is right. They seem to range from 48-50+ grams of sugar for 1/4 cup of syrup.

        1. Maple syrup is essentially all the same sugar content, about 25 g for 2 T. Very sad bc it is so good! It’s a hard one for many people with diabetes to cut out or drastically reduce. But this is definitely a lot of sugar per serving for someone with diabetes. So one option for us is to sub Lakanto “maple” syrup bc it is similar in texture and liquid. It doesn’t taste at all as good straight but in this recipe might not be noticeable. That’s what I’m about to try!

    So good! I used unsweetened coconut milk(in a carton, not canned) and maple syrup. I also used cacao powder instead of cocoa. It came out great! I love the texture after blending (I never liked overnight chia pudding because of the seeds/texture). Thanks for a great recipe!

    Made this with 2 tbsp of chocolate protein powder instead of cocoa powder, and blended it in my Ninja. Next time, I would decrease the sweetener (I used 1/4 cup of maple syrup) because the protein powder already has some sweetness to it, so it was a little intense for me. However, the consistency is AMAZING and incredibly pudding-like.

    I will definitely re-make this recipe and tweak the amounts of ingredients to fit my taste. Using chia as a thickener is genius.

  39. Have had this several times. Especially when I have didn’t have any ready for breakfast. Throw it in the blender long enough and I found I can eat it right away! I love it !

  40. I am wondering if I can substitute chocolate protein powder for the cocoa. If so, how much to use? It looks yummy and l want a delicious quick satisfying breakfast or snack.

    1. I think that’d work just fine!! I would start with the 2 TBSP and if you want to add more, you might need to add more liquid.

  43. Would love to try this, but are you sure the nutritional info is correct? 1/4 cup of honey weighs approx 88g so 1 serving would contain 44g of honey or maple syrup but the nutritional info says 1 serving contains only 7g of sugar.

    1. Hey Celia! You totally don’t have to blend it up. You can just whisk together all the ingredients and place it in the fridge to set for at least 30 minutes, or up to 12 hours. 🙂

    I would advise to sweeten with dates or figs. These won’t spike your blood sugar and the consequences with that (diabetes). Put the figs/dates in the blender, add some liquid and blend!! The figs/dates have fiber so you’re all good eating them this way!! Enjoy !,

    Absolutely delicious! Even my picky husband thought it was really tasty. I chose to use a quarter cup of water and three tablespoons of monkfruit in place of the honey or maple syrup. Trying desperately to reduce my sugar intake. I can’t wait to put a few raspberries on top and enjoy this as a delicious satisfying snack.

    I put the recipe into Fitnesspal and the nutrition info shown is for 1/4th of the recipe, not 1/2 as shown. I must not be a fan of almond milk as the flavor overtook the dish. Won’t make again, I would rather make homemade chocolate pudding.

    Stumbled on this recipe this morning and couldn’t wait to have it for bfast tomorrow, so having it for lunch now! 🙂 Genius idea on blending! I’ve been making chia pudding for years, and every so often it’d be too runny or too clumpy. Blending is brilliant for texture. Also, my cocoa creations would always turn out chalky, so again, blending to the rescue. Devouring this now with strawberries and love it. Can’t wait to try your banana split chia pudding too.
