Make your own healthy, naturally sweetened blueberry muffin energy balls. They really do taste like blueberry muffins!

I don’t know why but I don’t make muffins too often! I love breads and muffins but I find that when I keep them in the house they disappear a liiiittle too quickly. Ha! So when I’m craving a blueberry muffin (one of my favorite flavors!) I tend to make these energy balls instead. They come together in no time at all, I don’t need to turn on my oven and every bite is packed with flavor and nutritious ingredients.

These blueberry energy balls are similar to my cherry energy balls, but with dried blueberries instead of cherries. They are a littler sweeter than the cherry version, which I like… and they really do have a flavor reminiscent of blueberry muffins or cobbler.

Types of Energy Balls

As you may have guessed, there are so many different types of energy balls and they go by a variety of names too. Some names I’ve heard: energy bites, energy balls, bliss bites, oat balls and fat bombs. In my mind, there is one thing they all have in common: they’re no bake and rolled into balls. Here are some ways they can be different:

  • Protein – Some energy balls will have added protein powder to obviously amp up the protein, but also round out the snack and make it more filling and satisfying. I personally love making these protein balls.
  • Date-based – Some energy balls are made with a base of dates and nuts (like these!). They are usually grain-free and have no sugar added because the dates add a good amount of sweetness and help hold the balls together. For the date based balls, you usually need a food processor or blender to pulse the nuts and dates together.
  • Oat-based – Many energy ball recipes have a base of oats. They are packed with fiber and healthy fats and the perfect on-the-go snack. My peanut butter no bake energy balls are oat based and so yummy.

What You Need to Make These Blueberry Muffin Energy Balls

  • almonds – raw or roasted, but look for almonds without salt added.
  • cashews – raw or roasted, but look for cashews without salt added.
  • Medjool dates – You can buy medjool dates that are already pitted or pit them yourself (it’s super easy). Two brands that I like are Natural Delights and Joolies. You can find Natural Delights in the produce section of most grocery stores (near the bananas) and Joolies are offered on Amazon and Thrive Market.

How to Make These No Bake Energy Balls

Just like all my energy ball recipes, these balls are super easy to whip up! There are two different methods to choose from:

  • Method 1: Place all the ingredients in your food processor and blend until combined. With this option, the blueberries with be totally processed and turn the energy balls a lovely blue color. This is what I did for the photos you see here.
  • Method 2: Process everything separately. You start by processing the nuts, remove those and then process the dates. Then you add everything back into the processor with the remaining ingredients and process quickly until just combined. With this method the dried blueberries stay more intact and your balls are studded with the dried blueberries, as seen in the video.

Method 1 takes a bit less effort because you can simply dump all the ingredients and blend, but either option works! It just depends on how you want the energy balls to look in the end.

How to Store Energy Balls

You can store your energy balls in an airtight container in the refrigerator or freezer. They’ll last up to 1-2 weeks in the fridge and up to 3 months in the freezer. I like using glass storage containers or Stasher bags for storing energy balls.

Blueberry Muffin Energy Balls

Make your own healthy, naturally sweetened snack bites with this recipe for blueberry energy balls. They really do taste like blueberry muffins!

Total Time: 10 minutes

Ingredients  

  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1 cup about 10 medjool dates, pitted
  • 1 cup dried blueberries
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • pinch of sea salt

Instructions 

Method 1:

  • Process: Add all ingredients into your food processor and blend until combined.
  • Form balls: Once mixture is combined, use your hands (or a small/medium cookie scoop) to form the dough into balls, using about 1 Tablespoon of dough for each ball. Enjoy right away or store for later.
  • To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for 3 months.

Method 2: 

  • Process nuts: Place almonds and cashews into food processor and pulse until they are chopped into small pieces. Place nut mixture in a bowl and set aside.
  • Process dates: Put dates into the food processor and pulse until a paste forms (the dates will probably form into a sticky ball).
  • Add nuts and remaining ingredients: Add nuts back into the processor with the dates and add in blueberries, vanilla, lemon juice and sea salt. Pulse until everything is well combined.
  • Form balls: Once mixture is combined, use your hands (or a small/medium cookie scoop) to form the dough into balls, using about 1 Tablespoon of dough for each ball. Enjoy right away or store for later.
  • To store: Place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for 3 months.

Notes

  1. Hard/dry dates: If your dates are hard and dry, you can soak them in warm water for 10-15 minutes to soften. Just drain them well before using.
  2. Crumbly dough: If your dough seems too crumbly to stick together after processing even when squeezing it together with your hands, you can try adding a couple more dates or adding 1 teaspoon of water at a time until the mixture starts to hold together well enough to form into balls. See note above.

  5. Great idea! I wish you could find dried blueberries with no added sugar more often. My favorite Larabar is definitely the peanut butter and jelly. I bet just swapping out the almonds for peanuts in this recipe would be similar.

  6. We up north of the border in Canada just use snow tires. That way you don’t need a different vehicle, you just swap out the tires for the winter season, works like a dream 🙂

  7. I’m on the west coast (Seattle) and we haven’t had any snow this year! I saw some snaps from my friends on the east coast and got a little jealous – but if I am around snow for more than a day I start complaining so I’m probably better off without it haha. I love how simple this ingredient list is! I’m a sucker for a good energy ball, and definitely need to try blueberry to get out of my cranberry rut 🙂

  15. I have made Lara bars before but needed a good Blueberry Muffin recipe and found it here. Thanks for the simple directions and puctures.A win-win for my family.

    I didnt have a full cup of blueberries so I ended up just putting more dates in to fill in the difference. It worked out fine. But next time I will make sure I have the full amount of Blueberries because I love them and want more of that bursting taste in these blueberry bites.

    Wow! These tasted like blueberry Lara bites!! I used this recipe to use up a bag of dried blueberries, which my family didn’t realize had a ton of added sugar, and now I have to try my best to stay away from them! Too good!

    These have been a hit in my house. I made them last night & told the kids about them this morning. My husband then confessed that there might not be many left, as he had already eaten 4!! (I had only made half a batch, as I only had 1/2 cup of dried blueberries).
