Is it just me or is anyone else in shock that it’s August already? Seriously… how’d that happen? I adore fall, but summer is my absolute favorite season and I feel like it JUST started. I don’t want it to end. I need at least one more beach visit, a few more late-night summer walks, more ice cream and loads more summer produce. Give me all the tomatoes, cucumbers and zucchini!
One of the reasons I love summer so much is that Isaac is off from school. It sounds crazy but I legit miss him during the school year when he’s at work so I love spending time together during the summer months.
My schedule is flexible so we have extra freedom to hang out and enjoy each other’s company. We can wake up late on a Monday and go get coffee at our favorite coffee shop, go paddle boarding on the river mid-day and/or take mini road trips. Just earlier this week we drove to Norfolk for the day. Isaac went to talk shop with the folks at Smartmouth Brewing Company so I tagged along. I hit up a yoga class at My Yoga Spirit while he was busy at the brewery. We grabbed lunch, explored downtown Norfolk a bit and visited with Isaac’s grandpa before heading home. It worked out perfectly because I was able to write a blog post on the drive.
So yeah, I don’t want summer to end.
In other news, I think I’ve found the next best thing to happen to pizza since cauliflower pizza crust… raw zucchini pizza bites!
How cute are they? I’m obsessed with all things mini so obviously I think these little guys are too cute to handle.
No cheese, no bread, no cooking — just raw zucchini with hummus and fresh veggie toppings!
There is a bit of secret ingredient though — PIZZA hummus! Yup, Sabra now has pizza flavored hummus singles! At first I wasn’t so sure about pizza flavored hummus. It sounded like a kid flavor to me, but once I tried it I realized it’s pretty darn tasty as a dip for carrots and it works wonderfully as a sauce/spread for pizza.
I’ve actually used garlic hummus before on pizza, but the pizza hummus takes the flavor up a notch because it has red bell pepper, tomato, carrot, garlic and spinach IN the hummus.
These pizza bites remind me of bagel bites, only MUCH healthier and loaded with fresh produce. And the hummus is dairy-free so these bites are gluten-free and vegan too!
They’re fresh, light and work great as a fun party appetizer. I made a batch to bring to a friend’s house last weekend and everyone loved them.
I could also see them working well as a veggie packed after-school snack for kids. Heck, the recipe is so easy you could have the kids help you make them. I’m sure they’d have a blast sprinkling on the toppings!

Place zucchini coins on a serving platter. Top each with a teaspoon of hummus and spread it out to cover the zucchini. Sprinkle a few pieces of onion, mushrooms, tomatoes, red pepper and basil on each mini pizza bite. Serve immediately.
Notes
If you can’t find pizza flavored hummus feel free to use another flavor. Garlic or roasted red pepper would work well!

I had to comment on this recipe because I think everyone should know what I learnt through lots of misinformation. Sabra Hummus is not as healthy or even benign as they’d have us believe. Not only are they a cocktail of GMOs – ALL flavors contain potassium sorbate to boost their profits, which is not only also GMO derived but toxic to DNA. DO NOT put this on your food.

I’m not going to lie, I was rolling my eyes about calling these “pizza bites” until I got to the pizza hummus part! I’m intrigued! I’ll have to look out for that flavor… is it only sold in singles?
