This strawberry banana baked oatmeal recipe is the perfect make ahead breakfast. Strawberry, banana and chocolate… what could be better?

Strawberry season is here! I love picking up fresh strawberries at the farmers’ market so I knew I needed to create a strawberry baked oatmeal! Strawberry banana is such a classic flavor combo, but I figured why not toss some chocolate chips in the mix. You can never go wrong with some added chocolate, amiright?

This baked oatmeal recipe turned out better than I expected and I can’t wait for you to try it!

Is Baked Oatmeal Healthy?

I get ask this question often so I’ll start out by saying that yes, baked oatmeal is a healthy breakfast option. There is a great balance of macronutrients – healthy fats from the egg and coconut oil, fiber from the oats, and lean protein from the egg.

Ingredients in Strawberry Banana Baked Oatmeal

  • old-fashioned rolled oats – my fave brand is Bob’s Red Mill gluten-free old fashioned rolled oats. 
  • pure maple syrup – pure maple syrup is the perfect natural sweetener to use for baked oatmeal in my opinion!
  • baking powder – helps the baked oatmeal rise. 
  • cinnamon – for a little spice. 
  • sea salt – just a touch! 
  • almond milk – I like using unsweetened almond milk, but any type of milk will work! 
  • egg – or a flaxseed egg. To make a flaxseed egg combine 1 Tablespoon of flaxseed with 3 Tablespoons of water and let it sit for about 5 minutes to “gel” up.
  • coconut oil – make sure you’re using extra virgin coconut oil. I’ve purchased several different brands of coconut oil before, but Nutiva organic extra virgin coconut oil is my favorite.
  • pure vanilla extract – a wonderful flavor enhancer. 
  • bananas & strawberries – the stars of the show! I would recommend using fresh fruit here. Frozen strawberries would likely work, but they also might release too much liquid while baking, so I’d recommend thawing the frozen fruit and draining the excess liquid prior to baking.
  • chocolate chips – I love Lily’s chocolate chips for a low-sugar option and Enjoy Life chocolate chips for a dairy-free/soy-free option.

Making Baked Oatmeal Ahead of Time

Yes, you can make baked oatmeal ahead of time. There are a couple options that work really well. Here’s what I recommend:

Option 1: Bake and Then Reheat Before Serving

  1. Prepare baked oatmeal as the recipe suggests. Once baked, let the oatmeal cool, cover the baking dish and place in the fridge. You can do this 1-2 days in advance.
  2. When ready to serve, take oatmeal dish from fridge, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

Option 2: Prep as Much as You Can Without Baking

  1. Mix together your dry ingredients in a bowl, cover and let sit out on the counter until morning.
  2. Mix together all the wet ingredients in another bowl, cover and store in the fridge until morning.
  3. In the morning, simply mix the wet and dry ingredients together, pour oatmeal mixture into your prepared baking dish and bake as recipe suggests.

How Long Does Baked Oatmeal Last in the Fridge?

Baked oatmeal lasts about 4-6 days in the fridge. If I’m not serving it to a group of people for brunch, I love making one batch on Sunday and having balanced breakfasts the rest of the week. This is a great recipe for meal prep!

Strawberry Banana Baked Oatmeal

This strawberry banana baked oatmeal recipe is the perfect make ahead breakfast. Strawberry, banana and chocolate… what could be better? 
Prep Time: 15 minutes
Cook Time: 55 minutes
Total Time: 1 hour 10 minutes
Servings: 6

Ingredients  

  • 2 cups rolled old-fashioned oats
  • 1/4 cup pure maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 2 cups almond milk
  • 1 large egg, or 1 Tablespoon ground flaxseed
  • 2 Tablespoons coconut oil, melted
  • 2 teaspoons pure vanilla extract
  • 2 ripe bananas, 1 mashed and 1 sliced
  • 1 1/2 cups fresh quartered strawberries, divided
  • 1/4 cup chocolate chips, divided
  • cooking spray
  • additional strawberries, bananas and milk for serving

Instructions 

  • Set oven: Preheat the oven to 375°F.
  • Prepare pan: Spray an 8-inch square baking dish with cooking spray.
  • Mix ingredients: In a large bowl, mix together the oats, baking powder, cinnamon and salt. Add in milk, maple syrup, egg, coconut oil, vanilla and mashed banana. Stir well to combine.
  • Add remaining ingredients: Gently fold in 1 cup strawberries, 1/2 of your banana slices and 1/8 cup of chocolate chips.
  • Pour into baking dish: Carefully pour oatmeal mixture into the prepared baking dish.
  • Add toppings: Scatter the remaining strawberries, banana slices and chocolate chips on top.
  • Bake: Bake for 50-60 minutes or until the middle of the bake is set (it might still be slightly wet from the strawberries but that’s okay). The top/edges will be golden.
  • Serve: Remove from the oven and let cool for a few minutes. This will allow the baked oatmeal to set a bit more. Portion and serve. Top with additional fresh strawberries, banana and a splash of milk.

  • Storage: Store baked oatmeal in the fridge in an airtight sealed container for 4-6 days.
  • To reheat: Add a portion to a microwave-safe bowl and heat until warm throughout, about 1 minute or set oven (or toaster oven) to 350° and bake for 5-10 minutes, or until warm. Top with extra almond milk, if desired.

  1. This looks so yummy! I may have overlooked this, but how many servings does the recipe make?

    1. No worries! The recipe serves six so I usually just cut it into six even slices before serving. Each serving should be around 2/3 cup – 1 cup! Hope this helps.

    This is so delicious! I usually favour normal oatmeal or overnight oats over baked oatmeal but this is spot on! My husband and 4 year old loved it too! Thanks for the recipe.

    1. I use coconut oil because it gives it a bit of fat and richness, but you could omit it if you want to cut back on the cals/fat or sub for a nut butter.

    I made this and it is so delicious! I wasn’t sure if “ripe banana” meant black spotted or yellow…so I mashed up a spotted banana and sliced up a yellow banana and that worked great! Also, I recommend stirring the melted coconut oil into the oat mixture as opposed to the other cold liquids so that it doesn’t harden up from the cold.
    I can’t wait to make this again!

    1. Yes! Once it’s cooled, you can cut it and freeze it for sure. I freeze my baked oatmeal cups all the time. Just make sure it’s in a freezer safe container/bag with as little air as possible.

  13. I made this on Sunday night and I’ve been eating it all week. It is like having dessert for breakfast and I didn’t even add chocolate chips!! I’ve been forcing myself to eat a bowl of plain oatmeal with fruit for breakfast and not enjoying it. This is an amazing alternative. I didn’t have almond milk so I used 1 cup half&half and 1 cup 2%. I also sprinkled cinnamon on top. So delicious. Thanks!

    1. Yes. All of the baked oatmeal recipes are freezer friendly. I would recommending baking them and then freezing in portions so you can take out a portion at a time when you’re ready to eat them.

    This was really good. I did make a few changes though. I used oat milk and vegan butter because I can’t have dairy. I used blue berries and bananas because that’s all I had on hand. It was good but will make it a little sweeter next time or have strawberries available. Definitely will make again!

    Super yummy, comforting and easy to whip up. I put in a little less maple syrup than the recipient called for and it was plenty sweet for our taste. Not really a recipe that can be made on a busy morning due to the longer bake time but easily made in advance and reheated. Can’t wait to try the other recipes!

    I love this recipe! I’ve made it twice in two weeks, the second time I doubled the batch and substituted the strawberries for blueberries because that’s all I had in quarantine and it was still delicious! I also didn’t cook it with the chocolate chips but added those into individual bowls / when I reheated bc my husband said he didn’t want chocolate for breakfast 🤣

    I am so happy I found this recipe! My husband loves a bowl of stove top oatmeal in the morning but I’ve always struggled with it because of the texture. This is perfect! Spongey and fluffy, not slimy and chunky. 😆 I didn’t have choco chips the first day but it was still wonderful, tastes just sweet enough while being healthy. Added choco chips in the microwave the 2nd day and it felt like dessert!

  28. I haven’t made this recipe yet, but it looks delicious! I was just wondering if I could sub the coconut oil for avocado oil or a light tasting olive oil? My elderly mom has to watch her saturated fats, but I think she’d love this! I wasn’t sure if the liquid oils would work differently in this recipe than the solid-when-cool coconut oil does.

  31. I made this recipe this morning and it turned out really wet & soggy rather than dry look your picture. The bananas and strawberries were slightly over ripened and I used oat milk instead. What could I do so they come out dry? Would you suggest using more oats?

    1. Oh no!! I’m sorry to hear that! How long did you end up cooking it for and did you change anything about the recipe? And did you mix in all the strawberries and bananas or just what was listed in the recipe? It might have just needed more time to cook. The cook time does depend on oven temps since everyone’s is different.

    I made this for breakfast this morning and it was so good! It made the house smell so good when it was in the oven. My boyfriend said he would eat this for breakfast every day. We omitted the chocolate chips and subbed butter for the coconut oil and it was perfect. Will definitely make again.

    I only put chocolate chips in 1/4 of it, but that was a mistake. The chocolate chips definitely help make the dish! The rest of the 3/4 of it was just missing that little bit of goodness.

    I made this last week and my entire family loved it! This is definitely going to be a staple once I go back to college 🙂 I do have one question; I’m doing weight watchers and the coconut oil is super high in points so could this be substituted with canola or just omitted entirely?

    I am 4 months post partum and went back to work a month ago. These oatmeal bakes have been a life saver. We started with this one and it’s delicious, guilt free, can be made on the weekend and eaten throughout the week.     It was delicious! Unfortunately, mine wasn’t dry like the pictures. I followed everything regarding to the ingredients and left it for a total of 70 minutes but it was still soggy in the middle but on the tips of the outsides was dry. I don’t know what I did wrong.

    1. Hey Amy – Oh no! What size pan did you bake this in? And you didn’t change anything about the recipe? It probably needed more time to cook in the center or else it didn’t get enough time to set after taking it out of the oven. If you notice the sides getting done faster than the middle, you can always cover it with tin foil to prevent the sides from burning.

    I almost never leave comments, but for this recipe I had to. I couldn’t believe how tasty it was! And with no sugar too (besides what was in the chocolate chips). The sweetness of the berries really makes it almost like a dessert, but very healthy and surprisingly filling. A perfect breakfast/snack/pre/post-workout option. I substituted half a cup of the strawberries for blueberries and it was great. I love this blog because everything on here is exactly the kind of stuff I love to make and it’s all unbelievably delicious!

    Loved it! I prefer mine a little crunchier, curious if less milk would accomplish that? My kitchen smelled so delicious, and the taste was just as good.

    Could I prep this the night before, refrigerate it, and pop it in the oven in the morning?

    1. So glad you loved this recipe, Nici! I’m not sure if I would use less milk because it might turn out too dry. If you’re looking for it to be crunchier, I would try cooking it longer.

      As far as prepping it the night before I usually don’t recommend this with baked oatmeal because the oats will soak up the liquid overnight and it might turn out dry. The coconut oil will also solidify in the fridge. So there’s two options to save time: 1) You could combine all the dry ingredients in a bowl, cover and leave out on the counter overnight, then just add in your wet ingredients in the morning. 2). You could mix everything besides the milk together in a big bowl and place it in the fridge overnight. The next morning, stir in the milk until combined, pour batter into your prepared baking dish and bake! The coconut oil will be solid after sitting in the fridge overnight, but since you mixed it in melted the day before it should still be well dispersed. It also might take a little extra cook time since it’s going in the oven cold.

      Sorry, I know this isn’t the answer you were hoping for. Let me know what you decide to do!

    1. Hey Rima – No, baked oatmeal is basically just oatmeal in a baked form. It is soft, but shouldn’t be mushy. It’s like a creamy, soft breakfast casserole. Hopefully that helps!

    1. Hi Keely. To reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set oven (or toaster oven) to 350°F and bake for 5-10 minutes. I usually use my toaster oven for this!

    Delicious! I was burnt out on oatmeal and never thought I’d be into it again until I tried this yesterday. I ended up putting it in silicone muffin cups before I realized your recipe for the muffin cup version is a bit different (and intentionally drier). I was worried as it was baking and looking very liquidy but I ended up loving the moist result. I halved the maple syrup in the recipe so I could drizzle a bit on the top after I reheated it.     I made this today and was a bit let down at how tasteless it was. I found I had to add some brown sugar in order to have some flavor. I didn’t add the chocolate chips as I an allergic to chocolate and that could be where the majority of the flavor came in. I do not think I would be making this in the future without adding in some brown sugar before cooking.

    1. Hey Erin – You can make it ahead of time, but I wouldn’t combine all the ingredients together and let it sit overnight as the oats will soak up most of the liquid. Here is what you could do instead:
      1) Mix together your dry ingredients in a bowl, cover and let sit out on the counter until morning.
      2) Mix together all the wet ingredients in another bowl, cover and store in the fridge until morning.
      3) In the morning, simply mix the wet and dry ingredients together, pour oatmeal mixture into your prepared baking dish and bake as recipe suggests.

    I can’t stop making this. My young grandkids (a 2 yr old and twins that are 11mo old) love it with blueberries instead of strawberries. I also just use all of the 2 bananas smashed instead of saving some for the top. And to top it off, my husband likes it as a dessert. (He doesn’t eat sweets otherwise).     As I prepare to make this again, I realized that maybe I haven’t left a comment yet. I have been making this since early pandemic days – sometimes as often as 3x/week. It is an absolute favourite in our house. We eat it like a bar, no added milk necessary, and it never lasts until the end of the day. I easily make it vegan by using chia and adding a bit more liquid (I have been using organic soy milk lately, for added protein). I also use no oil and less maple syrup, as the bananas and berries make it sweet enough for us. Thank you for this great recipe!!
