These pumpkin pie overnight oats are creamy, cozy and taste just like dessert for breakfast. They’re perfect for those warm early fall mornings when you’re craving pumpkin spice but not quite ready for hot oats.

Pumpkin Overnight Oats Ingredients

- old fashioned rolled oats – rolled oats are the best for overnight oats. Instant/quick oats and steel cut oats don’t work the same because they don’t absorb liquid the same way rolled oats do. If you’re looking to use steel cut oats, try this pumpkin pie oatmeal instead.
- almond milk – I like using unsweetened vanilla almond milk, but any type of milk will work.
- canned pumpkin – either canned pumpkin or homemade pumpkin puree works. If you’re using store-bought, make sure you pick up canned pumpkin and not pumpkin pie filling. Pumpkin pie mix has added sugar!
- pumpkin pie spice and cinnamon – these are a must for the pumpkin pie flavor! You can make your own pumpkin pie spice mixture or buy a pre-made blend at the grocery store.
- maple syrup – pure maple syrup is the perfect natural sweetener to use because it’s liquid so it blends in nicely with the oat mixture and I personally love the flavor.
- chia seeds – these little seeds add a bit of fiber, protein and omega-3 fatty acids and they help absorb some of the liquid which gives the oats a thicker consistency.
- sea salt – the perfect flavor enhancer and brings out the nutty flavor of the oats.
- toppings – feel free to use your favorite toppings here! Some ideas: pecans, hemp seeds, pepitas, nut butter, coconut whip cream, dried cranberries or granola. This pumpkin granola would be delicious as a topping.
How to Make Pumpkin Pie Overnight Oats
This pumpkin overnight oat recipe couldn’t be easier. Everything comes together in just a few minutes and the fridge does all the work while you sleep.

Step 1: Add all ingredients (except toppings) to a jar or bowl and stir until combined. Cover and refrigerate overnight or for at least a few hours.

Step 2: When ready to eat, stir the oats, add a splash of milk if needed and top with your favorite toppings. I love pecans, coconut whip and a sprinkle of cinnamon.
Tips for the Best Overnight Oats
- Use a wide-mouth jar or container so you have room to stir everything easily and add toppings in the morning.
- Taste before chilling. Give the mixture a quick taste and adjust sweetness or spice to your liking. Once it sets, those flavors deepen, so start where you want it.
- Don’t skip the salt. It might seem small but a pinch of sea salt makes the pumpkin flavor pop.
- Make a few jars at once. They keep well for several days and make weekday breakfasts so much easier.

Storing Overnight Oats
When stored in an airtight container in the fridge, these oats will last up to 5 days. They soften a bit as they sit, so I think they’re best on days 1–3, but still perfectly good on days 4 and 5.

Pumpkin Pie Overnight Oats
Ingredients
- ½ cup old fashioned rolled oats
- ½ cup almond milk
- ½ teaspoon pumpkin pie spice
- ¼ cup canned pumpkin puree, not pumpkin pie filling
- ½ Tablespoon chia seeds
- 1 Tablespoon maple syrup
- pinch of sea salt
- optional: ½ scoop protein powder or ¼ cup plain Greek yogurt for added protein
- toppings: pecans, hemp seeds, pepitas, nut butter, coconut whip cream, dried cranberries and granola
Instructions
- Combine all ingredients in a bowl except toppings and stir together. If you're using Greek yogurt or protein powder, add that in now.
- Cover and place in the fridge overnight. If you’re in a rush you can shorten the soak time to 2-4 hours.
- The next morning (or when ready to eat), remove lid and give oats a big stir. If they seem too thick you can add a little more milk to loosen the mixture. Add any toppings you’d like and enjoy! For this version I added pecans, coconut whipped cream and a sprinkle of cinnamon.

I’ve seen overnight oatmeal recipes… and this one sounds yummy. So… do you eat them cold? I kinda like warm oatmeal and am not sure about cold.
Yes! Typically you eat overnight oats cold, BUT if that doesn’t sound good you can always heat them up in the morning. Maybe try this recipe, give the cold oats a taste and if you don’t like it, heat them up. 🙂
Can they be wormed up in the morning? Will it taste right? I prefer warm oatmeal but not if it’s going to “mess it up” ?
