These buffalo chicken stuffed sweet potatoes are spicy, creamy and so satisfying. Once everything is prepped, they come together fast, making them perfect for busy weeknights.
These buffalo chicken stuffed sweet potatoes are one of my favorite ways to turn my slow cooker buffalo chicken into a hearty, satisfying meal.

This buffalo chicken stuffed sweet potato recipe comes together in just a few easy steps. Bake the potatoes until tender, toss the chicken in buffalo sauce, then stuff and load them up with your favorite toppings. Here’s how to make it happen:

- Make it family friendly: Cooking for picky eaters? Prepare the shredded chicken plain first (you can use my slow cooker shredded chicken or instant pot shredded chicken recipes). Then toss only part of it with buffalo sauce in a separate bowl. That way, some potatoes can be stuffed with plain chicken and others with buffalo chicken.

Buffalo Chicken Stuffed Sweet Potatoes
Ingredients
- 6 medium-large baked sweet potatoes
- 1 lb cooked shredded buffalo chicken
- 2-4 Tablespoons blue cheese crumbles
- 2 Tablespoons diced red onion, or pickled red onions
- 2 Tablespoons pickled tame jalapenos, optional
- 2 Tablespoons ranch dressing
- ¼ cup sliced green onions
- 2 Tablespoons chopped cilantro, for garnish, optional
- Hot sauce, optional
Instructions
- Cut open baked sweet potatoes and top with warm shredded buffalo chicken.
- Top with ½-1 Tablespoon blue cheese crumbles, ½ Tablespoon red onions (or pickled red onions), ½ Tablespoon picked (tame jalapenos), a drizzle of ranch dressing, 1 Tablespoon green onions and ½ Tablespoon cilantro.
- Add an extra drizzle of hot sauce if desired and enjoy!
Notes
- Buffalo sauce choice: Do not grab “wing sauce” by mistake. Wing sauces often have fillers and fake butter flavor. Stick with a true buffalo sauce made from hot sauce, vinegar, and butter or oil for the best flavor.
- Sweet potatoes: Baking brings out the best flavor, but you can also make my air fryer baked sweet potato for a quicker option.
