These buffalo chicken stuffed sweet potatoes are loaded with tender shredded chicken, ranch and all your favorite toppings. They’re spicy, creamy, protein-packed and perfect for busy weeknights!
Cut open baked sweet potatoes and top with warm shredded buffalo chicken.
Top with ½-1 Tablespoon blue cheese crumbles, ½ Tablespoon red onions (or pickled red onions), ½ Tablespoon picked (tame jalapenos), a drizzle of ranch dressing, 1 Tablespoon green onions and ½ Tablespoon cilantro.
Add an extra drizzle of hot sauce if desired and enjoy!
Notes
Buffalo sauce choice: Do not grab “wing sauce” by mistake. Wing sauces often have fillers and fake butter flavor. Stick with a true buffalo sauce made from hot sauce, vinegar, and butter or oil for the best flavor.
Sweet potatoes: Baking brings out the best flavor, but you can also make my air fryer baked sweet potato for a quicker option.
Meal prep: Bake potatoes and cook chicken ahead of time, then reheat and assemble before serving.
Spice level: Adjust heat with mild buffalo sauce, jalapeños, or extra hot sauce.
