Happy Friday friends – I have some treats for you this morning – the recipe for perfect overnight pumpkin pie oats and the Element Bars Giveaway winner!!

Overnight Pumpkin Pie Oats topped with homemade apple butter…. Ah. May. ZING!!
Overnight Pumpkin Pie Oats
- 1/2 cup rolled oats (not instant)
- 1/2 cup unsweetened vanilla almond milk
- 1/2 banana, sliced **
- 2 T canned pumpkin
- 1 T vanilla protein powder
- 1/2 t pumpkin pie spice
Combine all ingredients in a bowl, mix well, cover, and let sit in the fridge overnight. That’s it! Wake up, top the mixture with you favorite toppings and enjoy.
** You can leave the banana out, but I like it because it adds a nice sweetness to the oats!

I haven’t had much success with my own pumpkin oats so I need to make yours. I have a half of a can left so it will be happening soon. I am leaving for RI to go to my bf’s wedding this weekend! Can’t wait! Have a great weekend!

Those oats look divine! I randomly had overnight oats for breakfast this morning. I had nothing else but oats, almond milk, and a peach in the house, et voila! All I missed was the pumpkin.
This is great! I made pumpkin oats this mornign too! instead of banana (I was out) I just added raisins+ oats + 1/2 c org. milk + 3 T pumpkin + pumpkin pie spice + cinnamon + dash of vanilla….= AMAZING!

Pumpkin butter would be perfect! I almost used some of my homemade butter then I realized it was last year. haha

(I have a little question, what does the “T” when you say “2 T canned pumpkin and 1 T vanilla protein powder ” ? Does it means tablespoons ?)

Would whole grain quick oats work too? This sounds so scrumptious!
Hi Tiffany, quick oats don’t work well for overnight oats. You’ll want to use old fashioned rolled oats.
Do you think this would work with steel cut oats? Or does it need to be pumpkin? I’m tempted to also just try it with Muesli—can you tell I just want to use what’s in my cabinet at the moment?? =)

You definitely don’t have to use pumpkin so no worries about that. I don’t think steel cut oats would work as they wouldn’t soak up the liquid the way regular, old fashioned rolled oats do. But, muesli should work!
