The Second Debut: Kale with Peanut Sauce

Last week I did a guest post for The Fitnessista that featured a recipe I’d been talking up but hadn’t shared. I thought I’d post it here just in case you missed it. It’s such a good recipe, it’s clearly deserving of two posts.

Kale with Peanut Sauce

Kale with Peanut Sauce

(inspired by this video)

  • 1 bunch kale, blanched
  • 1 cup crunchy peanut butter
  • 2 cloves of garlic, chopped
  • ¾ – 1 tbsp. ginger, chopped
  • ¼ cup rice vinegar
  • ¼ cup tamari
  • ¼ cup brown rice syrup
  • a smidge of cayenne pepper (optional)
  • ¼ cup red onion, chopped

Directions

Blanch the Kale

1. Wash kale well. Remove large, tough stems and cut or break large leaves into pieces.

2. Blanch in boiling water for about 2-3 minutes. Transfer the kale with a slotted spoon to a bowl full of ice water to cool it immediately.

3. Drain well and squeeze out all the liquid with your hands.

Peanut Sauce

1. Place the remaining ingredients (expect the red onion) into a blender and blend until the mixture becomes smooth.

2. Drizzle the desired amount of sauce on top of the kale and mix the two together. Garnish with chopped red onions.
The sauce is quite thick and rich so you’ll probably find that you don’t need to use all of it. Store the leftover sauce in the fridge and reuse it later. I’ve added water and re-blended the sauce to make a peanuty salad dressing (holy yum!) or veggie sauce. It works nicely on other vegetables besides kale and it will probably keep for about 1 week.

kale is such a versatile veggie too. same with spinach. never thought of peanut butter on greens but why not! peanut butter goes so great with so many things!
way to make greens sexy haha <3

Oooh the kale looks delicious!! The hardest thing about the veggie is just how tough it is to eat!! The peanut sauce adds the Asian flair that i love. :) mmmm

P.s. I’m hostin’ a little giveaway for organic preserves and thought it would go PERFECT in your oats! Does strawberry basil jam and blueberry merlot sound good to you? :)

I am always afraid of trying peanut butter on a savory dish. I love the idea, but am afraid I won’t like it. I love kale…I need to be unafraid and give this a try!

I made this for dinner the other night and it was great. I’m in the Victory Farms CSA too and it’s great to see what you are doing with all the produce.

A couple of recipes that I’ve made are:

carrot ginger dressing and kohlrabi slaw .

Just had this, a specialty at the M Cafe on Melrose in LA. It was incredible.
Immediately started looking for recipes. You might also try adding a bit of coconut milk.
