One of my favorite oatmeal recipes to date is this stove top recipe for peanut butter banana chia oatmeal. Peanut butter and banana are simply the best oatmeal combo in my personal opinion and I’m honestly surprised it took me so long to come up with a baked oatmeal recipe that has both!

I thought it would be fun to kick off the New Year with a new baked oatmeal recipe that’s perfect for all your healthy eating goals. No matter how much you indulged over the past few weeks (or months!) you can always decide to make a change. Start with one small change… like eating a healthy breakfast every day!

Why is Eating Breakfast Important?

Breakfast is often deemed the most important meal of the day? Isn’t it funny that it’s probably the most skipped meal of the day? So why is it so important anyway?

  • Kick start your metabolism – The earlier you eat in the day, the more calories you’ll burn! Seriously.
  • Energy – Food=fuel. Eating breakfast will give you energy to get important tasks done all day long.
  • Concentration – Do you notice that you can’t focus on anything but food when you’re hungry? THAT is why eating breakfast improves concentration throughout the day!

Simple Breakfast Idea

Eating breakfast doesn’t have to be complicated. If you’ve been following Eating Bird Food for awhile, you know I’m a big fan of baked oatmeal. They’re the perfect meal prep recipe! Make this simple peanut butter banana baked oatmeal on Sunday and have delicious, healthy and quick breakfasts to enjoy all week long. You can eat it cold or pop it in the microwave or toaster oven for a bit to warm it up before enjoying. The perfect on-the-go breakfast.

Peanut Butter Banana Baked Oatmeal Recipe

I sound like a broken record but this recipe is so simple to make! Start by mixing the dry ingredients together in a large bowl. Mix in the wet ingredients as well as two sliced bananas. Stir well to combine everything. Pour the mixture into a baking dish that has been sprayed with cooking spray and top with additional banana slices. Bake until golden brown, drizzle with more peanut butter and enjoy! You just made the best gluten-free, dairy-free breakfast around. 😉

Can You Make Baked Oatmeal Ahead of Time?

Yes, you can totally make baked oatmeal ahead of time. There are two options that work really well.

Option 1: Bake and Then Reheat Before Serving

  1. Prepare baked oatmeal as the recipe suggests. Once baked, let the oatmeal cool, cover the baking dish and place in the fridge. You can do this 1-2 days in advance.
  2. When you’re ready to serve, take oatmeal dish from fridge, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

Option 2: Prep as Much as You Can Without Baking

  1. Mix together your dry ingredients in a bowl, cover and let sit out on the counter until morning.
  2. Mix together all the wet ingredients in another bowl, cover and store in the fridge until morning.
  3. In the morning, simply mix the wet and dry ingredients together, pour oatmeal mixture into your prepared baking dish and bake as recipe suggests.

Peanut Butter Banana Baked Oatmeal

This delicious peanut butter banana baked oatmeal features the best oatmeal combo ever — peanut butter and banana. You’ll love prepping this easy baked oatmeal for the week.
Prep Time: 10 minutes
Cook Time: 30 minutes
Servings: 6

Ingredients  

  • 2 cups old fashioned rolled oats
  • 1/4 cup pure maple syrup
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 2 cups unsweetened almond milk
  • 1 Tablespoon ground flaxseed
  • ¼ cup natural peanut butter, plus more for serving
  • 2 teaspoons pure vanilla extract
  • 3 ripe sliced bananas, divided
  • cooking spray

Instructions 

  • Preheat the oven to 375°F.
  • Spray an 8-inch square baking dish with cooking spray.
  • In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
  • Add in the milk, maple syrup, flaxseed, peanut butter, vanilla and 2 sliced bananas. Stir well to combine.
  • Carefully pour oatmeal mixture into the prepared baking dish and top with banana slices. 
  • Bake for 30 to 35 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle additional peanut butter on top and serve with fresh banana slices. 
  • For storage: store in the refrigerator in an airtight container for up to 4 days.
  • To reheat: To reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

    This tastes really good. I might try a slightly larger dish next time because this came out really tall and didn’t quite bake through. I baked it for 35 minutes and then put it back in the warm oven for another five minutes. I also added cocoa chips. I didn’t have the flax seed. I’m curious to see if the texture changes after fully cooling.

    So easy to make as I typically always have all ingredients on hand. Super filling and lots of yummy flavors! Just wish my 7 year old liked it!

  4. I have made a few of your baked oatmeals & they’re yummy BUT there are a # I can’t make (including this one) as they’re way too high in FODMAPS. (So no peaches, no apples & only minimal bananas.) Would it be possible to make this w/ only 1 banana thus lowering the fructose load that my tummy can’t handle? Also, my son is allergic to peanut butter, could this be made with another nut butter? Thanks.

    1. Hey Julie – Yes, you can use almond butter instead of pb and as far as the banana goes, I would swap the second one with applesauce if you can have that.

    I made these for the first time this afternoon and made a few minor changes because of what I had in my pantry. I used only two bananas because that’s all I had, snd used peanut butter powder mixed with water for the drizzle on the top. Saved a ton of calories! Also in place of the cinnamon I used Bakers Chai powder (available at the Savory Spice Shop on line ) and they came out delicious! I snuck a taste and can’t wait for breakfast. I made them all summer with blueberries and peaches and froze them and reheated whenever I wanted one!!
