This delicious peanut butter banana baked oatmeal features is easy to prep and makes a great family-friendly breakfast.
One of my favorite oatmeal recipes to date is this stove top recipe for peanut butter oatmeal. Peanut butter and banana is one of the best oatmeal combos in my personal opinion and I’m honestly surprised it took me so long to come up with a baked oatmeal recipe that has both!

Peanut Butter Banana Baked Oatmeal
Ingredients
- 2 cups old fashioned rolled oats
- ¼ cup pure maple syrup
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ½ teaspoon sea salt
- 2 cups unsweetened almond milk
- 1 Tablespoon ground flaxseed
- ¼ cup natural peanut butter, plus more for serving
- 2 teaspoons vanilla
- 3 ripe sliced bananas, divided

Instructions
- Preheat the oven to 375°F.
- Spray an 8-inch square baking dish with cooking spray.
- In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
- Add in the milk, maple syrup, flaxseed, peanut butter, vanilla and 2 sliced bananas. Stir well to combine.
- Carefully pour oatmeal mixture into the prepared baking dish and top with banana slices.
- Bake for 30 to 35 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle additional peanut butter on top and serve with fresh banana slices.
Notes
- For storage: store in the refrigerator in an airtight container for up to 4 days.
- To reheat: to reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

The only change I made was leave out the sweetener, which made it taste pretty pain except where the banana slices were. I used frozen bananas and I don’t recommend it because they get very mushy. The flavor was a little bland so maybe adding more peanut butter or mashing the bananas into the mixture would be better. The texture is not too porridge-like or too dry, but I like mine firm enough to hold its shape in a bar, so I’ll add less liquid next time.

Hi! Want to try this recipe but slightly confused about the bananas. The 2 bananas that go into the mixture, are we trying to keep them whole (like whole slices) or mash/break them up as we mix it together? Thanks!

Thank you! That’s what i did but the mixture seemed too wet after baking. Once I left it overnight, it was perfect. My 12 mth old gobbled it up for breakfast this morning! Do you have any tips for freezing? Would love to keep a freezer stash, if it holds up well to freezing.
Yes!! I love freezing baked oatmeal. I normally cut it up into individual portions and freeze them individually versus the whole baked oatmeal together. It makes for easier reheating. 🙂
