Why is Eating Breakfast Important?

Breakfast is often deemed the most important meal of the day? Isn’t it funny that it’s probably the most skipped meal of the day? So why is it so important anyway?

  • Kick start your metabolism – The earlier you eat in the day, the more calories you’ll burn! Seriously.
  • Energy – Food=fuel. Eating breakfast will give you energy to get important tasks done all day long.
  • Concentration – Do you notice that you can’t focus on anything but food when you’re hungry? THAT is why eating breakfast improves concentration throughout the day!

Peanut Butter Banana Baked Oatmeal Recipe

I sound like a broken record but this recipe is so simple to make! Start by mixing the dry ingredients together in a large bowl. Mix in the wet ingredients as well as two sliced bananas. Stir well to combine everything. Pour the mixture into a baking dish that has been sprayed with cooking spray and top with additional banana slices. Bake until golden brown, drizzle with more peanut butter and enjoy! You just made the best gluten-free, dairy-free breakfast around. 😉

Can You Make Baked Oatmeal Ahead of Time?

Yes, you can totally make baked oatmeal ahead of time. There are two options that work really well.

Option 1: Bake and Then Reheat Before Serving

  1. Prepare baked oatmeal as the recipe suggests. Once baked, let the oatmeal cool, cover the baking dish and place in the fridge. You can do this 1-2 days in advance.
  2. When you’re ready to serve, take oatmeal dish from fridge, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

Option 2: Prep as Much as You Can Without Baking

  1. Mix together your dry ingredients in a bowl, cover and let sit out on the counter until morning.
  2. Mix together all the wet ingredients in another bowl, cover and store in the fridge until morning.
  3. In the morning, simply mix the wet and dry ingredients together, pour oatmeal mixture into your prepared baking dish and bake as recipe suggests.

YUM! Another amazing baked oatmeal. Banana and peanut butter are my favorite combo and were delicious in this oatmeal! It has a touch of sweetness but was also very savory. Husband loved too!

The only change I made was leave out the sweetener, which made it taste pretty pain except where the banana slices were. I used frozen bananas and I don’t recommend it because they get very mushy. The flavor was a little bland so maybe adding more peanut butter or mashing the bananas into the mixture would be better. The texture is not too porridge-like or too dry, but I like mine firm enough to hold its shape in a bar, so I’ll add less liquid next time.

Delicious and so easy to make! It’s like a dessert and a welcomed, warm change to the overnight oats we have so frequently. Baked oatmeal FTW! Thanks for the recipe!

    1. I love eating it cold too!! So glad you loved this recipe, Samantha. Thanks for the review. I so appreciate it!

I haven’t tried an EBF recipe I didn’t like, but this one is definitely a favorite around here. My five-year-old and two-year-old both beg for it every time I buy bananas and love helping me make it and eat it!

    1. Ahh yay!! That makes me SO happy to hear, Rebekah! So glad this recipe was a hit. Thanks for coming back to leave a review. I so appreciate it!

  5. Hi! Want to try this recipe but slightly confused about the bananas. The 2 bananas that go into the mixture, are we trying to keep them whole (like whole slices) or mash/break them up as we mix it together? Thanks!

      1. Thank you! That’s what i did but the mixture seemed too wet after baking. Once I left it overnight, it was perfect. My 12 mth old gobbled it up for breakfast this morning! Do you have any tips for freezing? Would love to keep a freezer stash, if it holds up well to freezing.

        1. Yes!! I love freezing baked oatmeal. I normally cut it up into individual portions and freeze them individually versus the whole baked oatmeal together. It makes for easier reheating. 🙂

Perfect for a snow day! Warm, filling and leftovers! My husband who is not nearly on the oatmeal train as I am loved it as well. That’s a win in my book. I plan to reheat this with a little drizzle of nut milk over top. 10/10 recommend!

    1. Woo!! That makes me so happy to hear, Amanda. I’m glad it was a hit! Thanks for making it and for coming back to leave a review. I so appreciate it!
