This delicious peanut butter banana baked oatmeal features is easy to prep and makes a great family-friendly breakfast.

One of my favorite oatmeal recipes to date is this stove top recipe for peanut butter oatmeal. Peanut butter and banana is one of the best oatmeal combos in my personal opinion and I’m honestly surprised it took me so long to come up with a baked oatmeal recipe that has both!

I thought it would be fun to kick off the New Year with a new baked oatmeal recipe that’s perfect for all your healthy eating goals. No matter how much you indulged over the past few weeks (or months!) you can always decide to make a change. Start with one small change… like eating a healthy breakfast every day!

Peanut Butter Banana Baked Oatmeal

Ingredients  

Instructions 

  • Preheat the oven to 375°F.
  • Spray an 8-inch square baking dish with cooking spray.
  • In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
  • Add in the milk, maple syrup, flaxseed, peanut butter, vanilla and 2 sliced bananas. Stir well to combine.
  • Carefully pour oatmeal mixture into the prepared baking dish and top with banana slices. 
  • Bake for 30 to 35 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle additional peanut butter on top and serve with fresh banana slices. 

Notes

  • For storage: store in the refrigerator in an airtight container for up to 4 days.
  • To reheat: to reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

    Yum! I made this today with an egg in place of the flax, plus added 1/4cup chia seeds. I cut it into pieces, wrapped in foil and sick in the freezer for easy breakfasts. Can’t wait to really dig in!

  3. My friends loved this recipe, I want to do it again, but can I leave out the peanut butter? or do I need to substitute with something else? Thank you!

    1. Hey Lynzi – Did you add any extra liquid to the recipe or change anything about the recipe? And did you let it set prior to eating it? It could have just taken longer due to your oven. Cook times definitely vary based on the heat of your oven. I’m glad you enjoyed it though!!

    This is so amazing! I don’t actually like oatmeal in any form (stove top, microwave, overnight) but I love this. My kids love any kind of oatmeal and this was no exception!

  5. Please can we have the recipes in grams and ml – cup sizes are not universal and it’s a waste of ingredients guessing and getting it wrong
