Take a trip to the tropics with this island-inspired tropical trail mix with cashews, macadamia nuts, banana chips, dried pineapple and coconut.
Surprise, I’m back again with another trail mix recipe for you! Hopefully you’ve been enjoying all of these mixes as much as I’ve enjoyed sharing them.
Today’s tropical trail mix is coming at the perfect time considering it’s freezing outside and I’d give anything to be on a tropical island right now — or any place warm for that matter.
The dried pineapple combined with crunchy banana chips, coconut flakes, cashews and creamy macadamia nuts makes for an irresistible mix. As an added bonus this mix is super easy to toss together because there are no seasonings or roasting necessary. You simply toss the nuts and dried fruit together and enjoy! Gah, talking about how easy it is to whip up makes me want to toss together another batch before we leave this afternoon. Yup, that probably needs to happen.
What Type of Dried Pineapple to Use
For the pineapple, I used Trader Joe’s Dried Baby Pineapple. It’s unsweetened and unsulfured so it’s a bit darker than the sugar coated dried pineapple you find at some stores. It’s still plenty sweet — I actually think it tastes better than the extra sugary stuff.

Is this suitable to be vacuum sealed and stored long term? How long thanks?
Hi Natasha! I’m sure it is suitable to be vacuum sealed but I’m not sure how long it can be stored for freshness!
