They have all the cozy flavors of a pumpkin spice latte, with pumpkin, espresso and warm spices, but in an easy make-ahead breakfast. With 28 grams of protein, they’re exactly the kind of quick, protein-packed breakfast I’m always looking for as a health coach and busy mom.

- pumpkin purée – make sure you’re using 100% pumpkin, not pumpkin pie filling, which is already sweetened and spiced. Homemade pumpkin purée works too.
- espresso or cold brew – gives the oats that classic pumpkin spice latte flavor. If using espresso, let it cool before adding it to the oats.
