These pumpkin spice latte overnight oats combine oats, pumpkin, espresso and cozy fall spices for an easy make-ahead breakfast. They’re packed with 28 grams of protein and taste just like fall in a jar!
Add the oats, milk, pumpkin purée, cooled espresso, protein powder, chia seeds, maple syrup, pumpkin pie spice, vanilla and salt to a mason jar or airtight container. Stir well until everything is fully combined.
½ cup rolled oats, ½ cup milk of choice, ¼ cup pumpkin purée, 1 shot (1 oz) cooled espresso or 2 Tablespoons cold brew, 1 scoop vanilla whey protein powder, ½ Tablespoon chia seeds, 1-2 teaspoons maple syrup, ½ teaspoon pumpkin pie spice, ½ teaspoon vanilla, Pinch of salt
Cover and refrigerate for at least 4 hours, or overnight.
When ready to eat, give the oats a good stir. If they're thicker than you'd like, add a splash of milk until they reach your desired consistency.
Enjoy straight from the jar or transfer to a bowl and add toppings of choice. I topped mine with whipped cream and a dash of pumpkin pie spice.
Notes
Storage: Store overnight oats in a sealed jar or airtight container in the fridge for up to 5 days. Add a splash of milk before serving if they thicken as they sit.
Meal prep: Make several jars at once for an easy grab-and-go breakfast throughout the week. Add any crunchy toppings right before serving.
Protein powder: I recommend vanilla whey protein powder for the best texture. Plant-based protein powder will also work, but it tends to absorb more liquid, so you may need to add extra milk to reach your desired consistency.
