Yes, I’m a food blogger. I love cooking. I love creating. But sometimes the last thing I want to do is spend an hour in the kitchen at night preparing dinner after a long day of working and a workout. That’s where quick and easy recipes like this come in! Healthy eating doesn’t have to involve crazy superfood ingredients or take hours to meal prep.

Showing that healthy eating can be practical, simple and delicious has always been my mission with Eating Bird Food. These zucchini boats are quickly becoming a favorite in my household. I love them because they consist of only five ingredients, they’re loaded with protein and veggies and nearly effortless to create. Isaac loves them because they are delicious and basically a mixture between pizza and pasta, two of his favorite foods.

Feel free to get creative with these! You can add any vegetables you have laying around, add extra spices, add different meat or make them meatless by using crumbled tempeh. Make them work for you. They are the perfect ‘build your own’ meal.

Enjoy these zucchini boats on their own or pair them with a salad like this Garlicky Kale Salad. It’s the perfect combo if I do say so myself… basically like a night at your local pizza/pasta joint in the comfort of your own home!

5-Ingredient Turkey Zucchini Boats

Healthy turkey zucchini boats that consist of 5 ingredients? Is this real life? Yes, yes it is. This dinner is comforting and so simple to make. Low-carb, paleo-friendly and gluten-free.
Prep Time: 10 minutes
Cook Time: 50 minutes
Servings: 2

Ingredients  

  • 2 medium zucchini squash
  • 1/2 medium onion, chopped
  • 1 lb ground lean turkey
  • 1 1/2 cup prepared marinara sauce, look for one without added sugar
  • 2-3 Tablespoons parmesan cheese, optional

Instructions 

  • Preheat oven to 400° F.
  • Place a large nonstick skillet over medium-high heat. Add the onion and ground turkey into the skillet. Season with salt and pepper. Cook for 8 to 10 minutes, breaking apart with a wooden spoon or spatula while it cooks. Add the marinara sauce. Cook 2-3 minutes additional minutes.
  • Meanwhile, as the turkey cooks cut the zucchini in half, lengthwise. Use a spoon to scoop the seeds and center out of each zucchini half, leaving about ¼ inch thick zucchini boat.
  • Place the zucchini (cut-side up) in a 9X13 baking dish. Spoon the turkey mixture into the four zucchini boats. Sprinkle each boat with a little parmesan cheese. Cover the baking dish with foil. Bake for 20-30 minutes or until boats are heated throughout and cheese has melted.

    We made this recipe tonight and it was delicious!! We added some garlic powder though because we’re Italians and can’t seem to get away from garlic! 🤣

    1. Hey Cindy! Sorry just seeing this. I haven’t tried freezing these, but I would imagine they’d be just fine. Let me know if you made them and how they turned out!

    1. Hi, Linda! I would store the filling and the zucchini separately. Add the filling to the zucchini in the morning before you bake them!

    I made this for my boyfriend and I, and we loved it! I was wondering instead of marinara sauce what if we used alfredo if that would be good?
