Healthy turkey zucchini boats that consist of 5 ingredients? Is this real life? Yes, yes it is. This dinner is comforting and so simple to make. Low-carb, paleo-friendly and gluten-free.
Yes, I’m a food blogger. I love cooking. I love creating. But sometimes the last thing I want to do is spend an hour in the kitchen at night preparing dinner after a long day of working and a workout. That’s where quick and easy recipes like this come in! Healthy eating doesn’t have to involve crazy superfood ingredients or take hours to meal prep.
Showing that healthy eating can be practical, simple and delicious has always been my mission with Eating Bird Food. I can’t give all of the details just yet but I am creating an epic ebook (an online/downloadable cookbook) for all my low-key home chefs out there who are looking for easy recipes to stay fit.
Simple, accessible, healthy. Who’s in?
These zucchini boats are quickly becoming a favorite in my household. I love them because they consist of only five ingredients, they’re loaded with protein and veggies and nearly effortless to create. Isaac loves them because they are delicious and basically a mixture between pizza and pasta, two of his favorite foods.
Feel free to get creative with these! You can add any vegetables you have laying around, add extra spices, add different meat or make them meatless by using crumbled tempeh. Make them work for you. They are the perfect ‘build your own’ meal.
Enjoy these zucchini boats on their own or pair them with a salad like this Garlicky Kale Salad. It’s the perfect combo if I do say so myself… basically like a night at your local pizza/pasta joint in the comfort of your own home!
If you try these 5-Ingredient Turkey Zucchini Boats please let me know how they turn out by rating the recipe and leaving a comment. I’d also love for you to share a photo on social media. Just be sure to tag @eatingbirdfood and us the hashtag #eatingbirdfood so that I don’t miss it.

Could I prepare everything in the morning and bake it at night?
Hi, Linda! I would store the filling and the zucchini separately. Add the filling to the zucchini in the morning before you bake them!
I am trying these tonite, just wondering if I can make them and freeze them before baking. Thanks.
Hey Cindy! Sorry just seeing this. I haven’t tried freezing these, but I would imagine they’d be just fine. Let me know if you made them and how they turned out!
We made this recipe tonight and it was delicious!! We added some garlic powder though because we’re Italians and can’t seem to get away from garlic! 🤣
So glad these zucchini boats were a hit, Terri! Love the addition of garlic powder. Thanks for coming back to leave a review! I really appreciate it!
This recipe was so easy and so delicious!!!
So glad you loved this recipe, Olivia!! Thanks for the review. I appreciate it. 🙂
This was delicious and easy!! One question In the nutrition pet of the recipe it doesn’t say what the serving size is for the nutrients listed. Is it for the whole recipe? Is two a serving and that the nutritional value?
The nutritional info should be for one serving (1/2 the recipe)! I just updated it. Sorry for the confusion.
