Unwind with a Guilt-Free Piña Colada

I’ve been dreaming of coconut water, rum and pineapples since having a Skinny Piña Colada with Tina and Sarah on Monday. As soon as I got home from work today I told Isaac we needed to head to the liquor store…

And before I knew it, I had a delicious drink in hand.

Based on the menu at Legal I knew the Skinny Piña Colada contained coconut rum, coconut water and pineapple juice. I decided to play around with some of the ingredients and ended up with two recipes.

Guilt-Free Piña Colada

Serves 2

  • 1/2 cup frozen pineapple chunks
  • 10 oz coconut water
  • 3 oz coconut rum
  • splash of coconut sparkling water (optional)

Blend all ingredients except the sparkling water in a blender, serve over crushed or cubed ice. Add a splash of the sparkling water. Take a sip and imagine you’re sitting on the beach with your toes in sand. Enjoy!

Creamy Skinny Piña Colada

Serves 2

  • 1/2 cup frozen pineapple chunks
  • 10 oz coconut water
  • 3 oz coconut rum
  • 1 oz unsweetened vanilla almond milk
  • 1 frozen banana

Blend all ingredients in a blender, pour into a glass and sing If You like Piña Coladas as loud as you want.

Coconut water makes for a refreshing and sweet cocktail without a ton of calories. Isaac was a big fan of the first version on ice and I LOVED the creamy one. This makes perfect sense because anything with frozen banana and almond milk makes me smile.

There were a plethora of coconut rums at the liquor store but I went with the Bacardi because it had the highest alcohol percentage! I like to get my money’s worth. :)

I want both of those right now! Thanks for making some awesome recipes. I just wish that coconut LaCroix would magically be in Iowa, I drool at your pictures all o the time and even made my mom in Minneapolis search every Target. No luck:(

Okay, I’m dreaming about these drinks. I’ve always had a thing for virgin Pina Coladas, but I used to avoid them like the plague in fear of fatty ingredients. Thanks for such a great looking recipe!

oh my gosh- these look delicious! i love pina colada’s but avoid them at restaurants and bars because all that sugar makes me feel awful. can’t wait to try these! :)
