These easy protein boxes are my go-to on busy days when I’m juggling school pickup, workouts and recipe testing. I used to grab a Starbucks protein box while running errands, but the cost adds up fast, especially when I already have most of the ingredients at home!
Now I put together my own during Sunday meal prep, using the hard-boiled eggs and chopped veggies I’m already prepping for the week. As a health coach, I love pairing protein with fiber-rich produce for a satisfying snack or easy lunch, and these boxes make it simple.

1. Starbucks Copycat Protein Box (about 27g protein)
My homemade take on the Starbucks protein box, with the same sweet and salty mix of eggs, cheese, fruit and crackers.

- hard-boiled eggs – two eggs with a sprinkle of everything bagel seasoning for an easy flavor boost. Follow my foolproof method for how to make hard-boiled eggs.
- white cheddar cheese – sharp white cheddar is closest to the Starbucks box, but any cheese works.
- apple and grapes – the sweet part of the box. Honeycrisp or Pink Lady apples hold up best and I prefer red grapes, but green work as well.
- Crunchmaster Multigrain crackers – gluten-free, seedy and sturdy enough for scooping. Pack separately to keep them crisp. Use your favorite brand of crackers!
- Justin’s peanut butter packet – the squeeze packs add 7 grams of protein and travel well. Almond butter with a drizzle of honey is a good swap.
2. Cottage Cheese Protein Box (about 35g protein)
This is my go-to after a workout and the highest-protein box of the bunch.

- cottage cheese – a generous scoop, about ½ cup. I like 2% or 4% for the creamiest texture.
- hard-boiled eggs – one or two, depending on how hungry you are.
- mixed berries – a mix of blackberries, strawberries, raspberries and blueberries for fiber and a little sweetness.
- protein balls – one or two of my no-bake protein balls for something sweet that still adds protein.
3. Turkey Pinwheel Protein Box (about 26g protein)
The most lunch-like box, and the one Tucker always tries to steal from me!

- turkey pinwheels – my turkey pinwheel sandwiches roll turkey, cheddar and lettuce into a lavash wrap. Make a batch on Sunday and pack two or three per box.
- parmesan cheese – salty, nutty and so satisfying with the hummus and veggies.
- hummus – I love Ithaca, but any hummus works.
- baby carrots and mini cucumbers – for dipping in the hummus.
- red grapes – a sweet bite to round it out.
4. Chicken Salad Protein Box (about 28g protein)
This box pairs savory chicken salad with crunchy veggies, berries and pistachios for an easy, satisfying lunch.

- chicken salad – a scoop of my rotisserie chicken salad, made with avocado oil mayo, celery and red onion.
- hard-boiled egg – one egg for extra protein.
- cucumber and bell pepper – crisp, hydrating and great with the chicken salad.
- pistachios or roasted chickpeas – a small handful for crunch.
- mixed berries – blackberries, strawberries and blueberries.
How to Make Protein Boxes
Step 1: Make your hard-boiled eggs and any homemade components like the pinwheels, chicken salad or protein balls.
Step 2: Wash and dry the fruit and veggies, then slice as needed.
Step 3: Arrange each box’s ingredients in your meal prep containers. Use small lidded cups for cottage cheese, hummus or chicken salad, and pack crackers and other crunchy extras separately to keep them crisp.
Step 4: Seal the containers and refrigerate until you’re ready to eat.
Swaps and Substitutions
- Protein: Trade the eggs or chicken salad for Greek yogurt, jerky, edamame, a tuna pack or leftover grilled chicken.
- Chicken salad: Skip the mayo with my Greek yogurt chicken salad, which adds a little more protein.
- Egg salad: Swap the hard-boiled eggs for a scoop of my cottage cheese egg salad and serve with crackers.
- Protein balls: No protein powder? My no bake energy balls work too, with a little less protein.
- Dairy-free: Skip the cheese and cottage cheese, leave cheese out of the turkey pinwheels and choose dairy-free protein balls. Add extra eggs, turkey or edamame for protein.
- Nut-free: Swap the peanut butter for sunflower seed butter and the pistachios for roasted chickpeas or pumpkin seeds. Choose nut-free protein balls and check packaged ingredient labels.
- Gluten-free: Crunchmaster crackers are already gluten-free. Use a gluten-free wrap for the pinwheels or pack rolled-up turkey and cheese instead.

Tips for the Best Protein Boxes
- Use divided containers: Three-compartment containers keep fruit, veggies and proteins separate. Pack crackers in a separate bag or sealed container to keep them crisp.
- Grab silicone liners and dip cups: Silicone cupcake liners corral cheese and crackers, and small stainless steel cups keep hummus and nuts contained.
- Wait to slice the eggs: Whole peeled eggs stay moist longer. If you’re prepping several days out, slice them the morning you pack the box.
- Pack the apples last: A quick squeeze of lemon juice helps if you’re cutting them the night before.
- Batch the components: Prep eggs, pinwheels and protein balls once, then mix and match boxes over the next few days.
How to Serve
These boxes work as an afternoon snack, a grab-and-go breakfast or a light lunch. A few ways to build on them:
- Make it a full lunch: Add half a cottage cheese wrap to the turkey pinwheel or chicken salad box on days you need something heartier.

Storage
Store assembled protein boxes in airtight containers in the fridge for up to 3–4 days, depending on the freshness of your ingredients. If you’re using chicken salad or other components made ahead, count their storage time from the day they were prepared.
For the best texture, add sliced apples close to serving and pack crackers separately. Keep berries dry and store crunchy extras in separate containers until you’re ready to eat. I don’t recommend freezing the assembled boxes.

Turkey Pinwheel Protein Box (Kid-Friendly)
- 3 turkey pinwheels
- 1 ounce parmesan cheese
- 2 Tablespoons hummus
- ½ cup baby carrots and mini cucumbers
- ½ cup red grapes
Chicken Salad Protein Box (Low Carb)
- ½ cup chicken salad
- 1 hard-boiled egg
- ½ cup cucumber and red bell pepper
- 2 Tablespoons pistachios or roasted chickpeas
- ½ cup mixed berries
Instructions
- Prepare any homemade components: hard-boiled eggs, turkey pinwheels, chicken salad and protein balls.
- Wash and slice the fruit and veggies. Cube the cheeses.
- Divide the ingredients for each box between the compartments of a three-compartment meal prep container. Place hummus, nut butter and nuts in small cups.
- Sprinkle the eggs in the Starbucks copycat box with everything bagel seasoning.
- Cover and refrigerate for up to 4 days.
