Four easy, high-protein boxes featuring eggs, cottage cheese, turkey pinwheels or chicken salad, including a Starbucks copycat. Prep them ahead for grab-and-go lunches and hearty snacks.
Prepare any homemade components: hard-boiled eggs, turkey pinwheels, chicken salad and protein balls.
Wash and slice the fruit and veggies. Cube the cheeses.
Divide the ingredients for each box between the compartments of a three-compartment meal prep container. Place hummus, nut butter and nuts in small cups.
Sprinkle the eggs in the Starbucks copycat box with everything bagel seasoning.
Cover and refrigerate for up to 4 days.
Notes
Make ahead: Keep eggs whole until the day you eat them and add sliced apples close to serving. Dry berries well before packing and store crackers separately to keep them crisp.
Storage: Refrigerate boxes in airtight containers for up to 3–4 days. Count storage time from when any prepared components, like chicken salad, were originally made. Freezing the assembled boxes isn’t recommended.
