Peanut Butter and Jelly Trail Mix

Turn a classic sandwich into an on-the-go snack with this sweet and salty Peanut Butter and Jelly Trail Mix — a blend of crunchy peanuts, dried blueberries, peanut butter chips and dried banana chips.
If you like trail mix you’re in for a HUGE treat because I’m deeming this week, the week leading up to my birthday, trail mix week. A trail mix extravaganza, if you will.
Trail mix is one of my favorite foods to snack on, but for some reason I don’t have many recipes posted here on EBF. This is about to change as I’ll be sharing a new mix recipe every day this week. Get excited!
This first one is dedicated to Isaac because today is actually HIS birthday.
Given his love for peanut and butter jelly sandwiches I knew I needed to make a pb&j trail mix for him.
The mix has salted Virginia peanuts (they’re the best!), sweet dried blueberries and peanut butter chips. I also added some dried bananas to the mix. I know some pb&j purist might not like the addition, but banana slices are a mainstay when I make peanut butter and jelly sandwiches, plus they had another crunchy element to this mix. I’m all about that crunch so any extra crunchiness is good by me.
If you’re a peanut butter lover, you will adore this sweet and savory combo — especially the bites with peanut butter chips. They’re the best part.
I should mention that I had a really tough time finding peanut butter chips with an ingredient list that I approved of. They all had hydrogenated oils. Ugh! I finally found the Sunspire peanut butter chips online and ended up buying and using those. The ingredient list was way better than other varieties I found and they taste great! If you’re having a hard time finding them, you can easily make your own using this homemade peanut butter chips recipe from Minimalist Baker. Just be sure to keep the mix in the freezer if you go the homemade route. <— Storing it in the freezer might be ideal considering when this stuff sits out on the counter I don’t know what happens, but it magically disappears. 😉

Peanut Butter and Jelly Trail Mix
Ingredients
- 1 cup roasted and salted peanuts
- 1/2 cup banana chips
- 1/4 cup dried blueberries, strawberries, cherries or cranberries
- 1/4 cup peanut butter chips
Instructions
- Mix all ingredients together in a bowl and serve. Store in a cool, dry spot for snacking throughout the week.

I recently made this recipe and I love it. I doubled it and gave half to my dad and he loved it too! Although I was rushing while doing my grocery shopping and I’d left my list at home. Which led to the fun game of “what was on my list?” Well I ended up grabbing apple chips instead of banana chips. Which it was still really good, but the funny thing is the only negative thing my dad said was he told me he thought it would be better with banana chips. Without knowing that was the exact ingredient where I accidentally screwed up the recipe. Lol.

I’m super excited for this week of posts!! We do a lot of hiking, but I pretty much always bring the same trail mix which gets boring. I look forward to the rest of the recipes.
Love this trail mix. It’s been ages since I last had dried bananas but that’s about to change! This trail mix would be perfect for bringing to work to snack on in the afternoon 🙂
Looks delicious, as I love anything peanut butter/nut butter! Do you know of any dairy-free/vegan peanut butter chips? The Sunspire ones have dairy in them, and I am allergic to dairy. I normally make my own based on Chocolate Covered Katie’s recipe, but they cannot be stored in the pantry due to the coconut oil. Looking forward to more great recipes 🙂
