Peanut Butter Yogurt Fluff Bowl

I’m a creature of habit so when I find a breakfast item I like that’s healthy and tasty I tend to stick with it. Of course I switch things up every so often but during a typical week I have same meal for breakfast 4-5 times. One nice thing is that most of my favorite breakfast options are quick to prepare and easy to change up with different flavors or toppings.

While working out at the gym this morning I started thinking about what I was going to have for breakfast when I got home. I thought about making a protein pancake for the week but out of no where I decided to have yogurt instead. Normally I save yogurt for snacking but it sounded good for breakfast today so I decided to roll with it.

Things got a little crazy once I was home and showered. I pulled out the yogurt and made a delicious fluffy breakfast bowl with peanut butter, banana and a little grain-free granola.

I’m positive this combo has been done before as many people make yogurt bowls for breakfast and top them with fruit, granola and nut butters but I think this is worth sharing. Especially with the added trick of whipping the yogurt together with peanut butter and stevia. It makes the yogurt extra fluffy and voluminous.

To be honest the main thing I kept thinking while eating this (besides how delicious and fluffy it was) was why the heck yogurt companies haven’t jumped on the peanut butter bandwagon? I know I’ve seen peanut butter frozen yogurt and there are so many different flavors of regular/ Greek yogurt – chocolate, apple pie, cherry cobbler. Where’s the peanut butter flavor? OR the peanut butter BANANA flavor?

Now that I know this little fluffy yogurt hack I’m excited to make other fluff bowl flavors. I think a chocolate version needs to happen next!

Peanut Butter Yogurt Fluff Bowl

Description

Perfect for breakfast, snacking or dessert this peanut butter yogurt fluff bowl is packed with protein and delightfully fluffy. 


Ingredients

  • 1 cup plain 2% or full-fat Greek yogurt
  • 12 Tablespoons peanut butter, almond butter, cashew butter or your favorite nut butter
  • 10 drops of liquid vanilla stevia (or your favorite natural sweetener)
  • banana slices, blueberries and extra nut butter for drizzling
  • 1/8 cup granola (I used a grain-free granola)

Instructions

  1. Add yogurt, nut butter and stevia into a small mixing bowl and whisk together using a spoon until the yogurt gets a bit fluffy. (I’ve only done it with a spoon but I’m sure it will work with an immersion blender or stand mixer as well!)
  2. Portion yogurt into a bowl and top with granola, fruit and an extra drizzle of nut butter. Enjoy!

Notes

Feel free to experiment with non-diary yogurt. I bet it would be delicious with full-fat coconut milk yogurt. You can also try it with peanut flour instead of nut butter for a lower calorie option! And of course you get to decide the toppings. Get creative with them.

It makes perfect sense that I like this combination of flavors considering whenever I get fro yo I always get both tart and peanut butter and put fruit on top. Sounds like an odd mix, but I promise it’s good. If you like yogurt and peanut butter, you HAVE to try this protein-packed bowl.

I’m curious, have you seen any yogurt brands that have a peanut butter flavor? If it’s out there, I want to find it. 🙂

      Just wanted to share that I have eaten all-natural PB mixed with Greek yoghurt pretty much exactly as you describe for a few years now and LOVE it. I have always been puzzled why it’s not a flavour that brands actually carry–except that it’s almost impossible for me to convince others to try it. In fact, my mother apologised to me last month, saying, “I spent years thinking you were crazy and it was gross, but I tried peanut butter in my yoghurt this week, and it was delicious!” LOL So glad to see you promoting it! What’s not to love about a delicious breakfast full of protein with some healthy fats and carbs?

      I would always drizzle peanut butter on my yogurt but I have never thought to mix them together and fluff them up. Since trying this I will never go back. So delicious! Perfect for when I’m craving a sweet snack.

      What!? I made 2/3 of the recipe because I thought it was going to be too good to be true. I was wrong!! I have to go make more immediately. I used an immersion blender and fluffed the yogurt and peanut butter with some honey. (It would also make an excellent dip at this point!) added bananas and granola and had a delicious late night snack. Thank you!

      There actually was a peanut butter banana flavored greek yogurt. I believe the brand was Oikos. Not sure if it was just seasonal or a full time flavor.

      I just tried it for my evening snack instead of peanut butter and crackers and i had plain fage greek yogurt and crazy richards natural
      peanut butter it was surprisingly good!

      I am totally a creature of habit when it comes to eating the same things (mainly breakfast.) I am SO like this with Oatmeal! Haha! I love love love peanut butter in my yogurt too! Try mixing peanut butter and yogurt together to make a dip for apples. Oh my goodness! It’s so good I know you will love it!

      Holy CATS!!! I stirred some almond butter into my vanilla yogurt today with some blueberries and WOW!!!! When I took the last bite, I feared my life might end because I was so ridiculously happy. Why have I never tried that before????

      I almost religiously mix peanut butter and maple syrup into my Greek yogurt, because it’s kind of amazing. Add some fruit and granola, and you’ve got yourself a meal or snack (depending on the serving size). So easy, filling, and nutritious!

      I’m eating this as I type. I made it but with what I had in my house, instant maple and brown sugar and regular milk… so good! I can’t wait to go buy some healthy ingredients for my home. The peanut butter and banana make it seem like there is a peanut butter and banana oatmeal.

      If you don’t mind me asking, how many calories do you eat every day, or try to eat? I find if I don’t count every calorie, or at least be very mindful of it, I gain weight.

        For the most part I don’t really count calories, but I would imagine that I eat around 1,500-2,000 depending on the day.

      I have been loving peanut butter in greek yogurt too recently! I have been eating it as an snack for dipping green apples into. Its so good! I mix ~1 tbsp of pb with ~2-3 tbsps of greek nonfat pain yogurt and sprinkle in some cinnamon. Also- so I dont have to stir quite so hard I have been putting the pb in the bowl first, then microwaving it for about 30 secs to soften it. Stirs in very easily that way and doesnt make the mix hot!

      One of my favorite breakfasts is Greek non-fat yogurt w/ chocolate protein powder and a TBSP of natural peanut butter. I can eat this for weeks on end.

      I’ve become such a huge fan of mixing some almond butter into my nonfat greek yogurt. with plenty o’ cinnamon and occasional vanilla plant fusion protein powder.

      I eat the same breakfast for days in a row too–ex–today was day 3 in a row of protein pancakes. Yum!

      I make this yogurt combination sometimes but top it with the Cocoa Goodness Love Grown! So good! 🙂 Another thing that I have tried that is easier to mix with the yogurt is PB2.
