Peanut butter chocolate healthy no bake cookies made with half the amount of sugar in traditional no bake cookies and coconut oil instead of butter. Dairy-free, vegan and refined sugar free.

I’ve always loved traditional chocolate peanut butter no bake cookies. I grew up with them as a kid — my mom would make them for us every Christmas and once I was old enough she taught me how to make them myself.

No Bake Cookies Made Healthier

Traditional no bake cookies are made with butter, milk and refined sugar, but for this version we’re keeping things dairy-free by using coconut oil instead of butter and almond milk instead of the regular milk. To keep things refined sugar-free we’re using coconut sugar instead of white sugar. It also has half the amount of sugar and I have to say, I actually like this version with coconut sugar and less sugar way better!

I will warn you, these cookies might be healthier than traditional no bake cookies, but they’re just as addictive… I think I ate around four every day until they were gone. Oops. Breakfast dessert, lunch dessert, snack and/or dinner dessert – they work well for any and all of the above. 😉

How to Make These Cookies Sugar-Free

If you want to make this recipe sugar-free, feel free to try using stevia or monk fruit in place of the sugar. I haven’t experimented with either myself so I don’t know the appropriate measurement. For stevia, I’d recommend adding a little bit of stevia at a time until the cookies taste sweet enough to suit your liking. If using monk fruit, you can probably just sub it 1:1 with the coconut sugar. Let me know if you try a sugar-free version in the comments below!

Ingredients & Substitutions

Here are the ingredients you’ll need to make these cookies, plus some ideas for substitutions.

  • coconut oil – I’ve also made this recipe with a mashed banana in place of the coconut oil. The cookies will turn out  a little bit more dry without the coconut oil, but still yummy.
  • creamy peanut butter – you can also use almond butter or any other nut/seed butter in place of the peanut butter.
  • coconut sugar – if you’re looking for a sugar-free option, you can use monk fruit or stevia.
  • cocoa power or cacao powder – either option will work.
  • unsweetened vanilla almond milk – any non-dairy milk option will work just fine.
  • sea salt
  • vanilla extract
  • instant oats or rolled oats – steel-cut oats won’t work for this recipe.

How to Make No Bake Cookies

Mix the dough – Add melted coconut oil and peanut butter to a large bowl and stir until combined. Then add coconut sugar, cocoa powder, almond milk, sea salt, vanilla and oats into the bowl and stir until combined.

Scoop the dough – Drop the dough by the spoonfuls on a baking sheet lined parchment paper.

Set – Place baking sheet in fridge until cookies are set, then serve.

How to Store These Cookies

After letting these cookies set completely in the fridge, store them in an airtight container in your refrigerator for up to 1 week. These also freeze well if you need to keep them longer. Store cookies in an airtight container in the freezer for up to 3 months.

Healthy No Bake Cookies

Peanut butter chocolate healthy no bake cookies made with half the amount of sugar in traditional no bake cookies and coconut oil instead of butter. Dairy-free, vegan and refined sugar free.

Ingredients  

  • ½ cup melted coconut oil
  • ½ cup natural creamy peanut butter, or almond butter
  • ½ cup coconut sugar
  • ¼ cup cocoa powder
  • ¼ cup unsweetened vanilla almond milk
  • pinch of sea salt
  • 1 teaspoon pure vanilla extract
  • 2 cups quick oats (also called instant oats)

Instructions 

  • Add melted coconut oil and peanut butter in a medium mixing bowl and stir until combined. Add coconut sugar, cocoa powder, almond milk, sea salt, vanilla.
  • If desired you can heat the peanut butter cocoa mixture on the stovetop over medium low heat to fully dissolve the coconut sugar, about 5-6 minutes. Sometimes I do this and sometimes I don't. Depends on how much time I have.
  • Add oats to a large mixing bowl and top with peanut butter cocoa mixture. Stir until well combined.
  • Using a small/medium cookie scoop, scoop the dough on a baking sheet lined with parchment paper. Use your hands to press the dough down a bit and form the cookies into a cookie shape.
  • Place baking sheet in fridge until cookies are set, then serve. Store any leftover cookies in an airtight container in the fridge for 1-2 weeks.

  • No oil version: I’ve also made this recipe with a mashed banana in place of the coconut oil. The cookies will turn out  a little bit more dry without the coconut oil, but still yummy.
  • Sugar: You can use granulated sugar instead of coconut sugar, but you will definitely want to heat the peanut butter cocoa mixture to dissolve the sugar.

  8. Oh-my, you just saved me with these cookies, thank you Brittany! I was really feeling a need for sweet just now, when I read this recipe I realized I had everything that it took to make a healthy no-bake cookie on hand.
    Well, minus the banana. I substituted with coconut oil and this makes them taste like something that is almost too good to be healthy.
    I will make the lower-caloric version with banana another time, to get something that I can really feel guilt-free about eating.
    Like I said, the ones with coconut-oil taste so yummy that I feel like they can’t be innocent. 😀

  12. Okay I just made these with coconut oil and stevia. I used 3 tbs truvia and that seemed the perfect amount of sweetness but next time I will adjust with less cocoa and probably a little more pb – they’re just a little too dry and bitter from the cocoa. Thanks for posting this!!

  13. I like to watch my calories so I did the math and thought I would share the calorie count so no one else has to try and calculate it 🙂 If you use stevia it is roughly only 75 calories a cookie. This is great for kids considering it’s no sugar added and I looove cookies so it’s nice to treat myself every once in awhile. Thanks so much for sharing!

  14. I just tried this recipe, but I got stuck on first step. I put the natural pb and mashed ripe banana into the saucepan and stirred but it never got close to melting. I tried turning it up but it just started to brown. The directions say that the pb should be melted before adding the rest of the ingredients. Am I missing something?

    1. Hi Alisha. So sorry for your trouble. I should probably change the wording because the peanut butter doesn’t really have to “melt”, it just needs to get warm and thin out. Did yours do that?

    I’m one of the pickiest person to eat healthy foods, only because I love sugar & good tasting foods. So in my mind I figured I’d be wasting my time & would probably be throwing these away, but this wasn’t the case. Shockingly these are really Good!!   23. These cookies are amazing. I totally messed them up but I can tell they would be good lol. I decided to double the recipe then suddenly realized it was going to make a ridiculous amount. I ended up adding a bunch of stuff to make it thicker because I didn’t have time to let them set properly so I added chia seeds, coconut, coconut flour, ground flax, and then quickly rolled them into balls. They were better before but I was short on time. I also didn’t have instant oatmeal and I realize they would have been way better with instant oats. There is a lot of oatmeal in these more than most and so the oatmeal was a bit too chewy. These cookies were good despite all my mistakes which shows how versatile this recipe is. I made 70 cookies and did the calorie count and it was 90 each. I am going to make them again as written if I ever eat all of these lol.

    So this recipe is amazing. I’m thankful for a healthier version of tue classic. One thing I did differently is…. in the classic version of this you bring the peanut butter, butter (or in this case coconut oil) and sugar to a simmer then remove from heat and add milk. This process caramelizes the sugar helping to hold the cookie together afternoon cooking. I found this technique helpful. Just thought I’d share 🙂

    It’s not setting I thought it would be dry like yours in the video but unfortunately it’s wet and moist still and hasn’t set at all and I don’t even know what to do next I can’t eat them with tea either so what should I do ?!……

    Please help! I made this twice. First time with banana, no oil. Clumpy mess. Second time, I used belted coconut oil. Barely any better than the first attempt with bananas. So sad. This is my fav childhood cookie but now that I must be GF and DF, I am trying to make this work within my new diet restrictions. I did notice the mixture thickening immediately before adding the oats. Should I have stirred them in sooner? Can you think of anything else I may have done wrong? The only other thing I did different was I used 1/4 cup of stevia/erythritol blend in place of the 1/2 cup coconut sugar. Please advise. Thank you!

    1. Hey Shari, I have tried peanut butter powder before, but I normally always use actual peanut butter in my recipes. But feel free to sub peanut butter powder in for any of my recipes that call for PB. 🙂

    1. Hey Gloria, I haven’t made this recipe with anything besides the oats and they are a big component to this recipe. You could possibly try quinoa flakes, but you might have to play around with how much to use and I am not sure if the consistency will turn out the same since I haven’t tried it. Definitely let me know if you try it with the quinoa flakes and how they turn out.

But for the life of me I can’t remember the measurements…!! Any suggestions? I have four daughters…one with chrons disease. My brain is not thinking clearly most of the time.     1. Hi Wendy! Your recipe does sound similar. You could certainly use my recipe… the only difference is the coconut sugar. I haven’t made this recipe with maple syrup and I wouldn’t recommending using it as a sub for the coconut sugar since it will likely make the batter too thin.     These were amazing!! I’ve been baking pretty much every dessert on your page and they’ve all turned out so so good. I did use traditional oats as that’s all I had, and they mix was wet but I expected that and just spooned dollops onto a baking sheet and popped in the freezer for 10 minutes. They hardened beautifully and I just added a drop of melted chocolate on each one. So delicious! Thank you for another amazing dessert recipe.

    I just made these and these was the worst tasting no bakes I EVER had,, blandas I don’t know what, tasteless,, and just plain nasty,, never will I make these again,, and will not recommend these to anyone

    The trad recipe calls for boiling the butter and sugar and milk to almost a fudgelike texture. I tried replacing 1/2 of the sugar with Truvia. The cookies did not set and I had to freeze and eat frozen. I’d like to try this recipe, Has it been tried with sugar and stevia?

    This is a great recipe and I love chocolate no bake drops except that I’m dairy-intolerant, and cocoa and sugar too. Ack! I know, I know. But I I made some pretty good drops anyway (I love them) when used only the Peanut Butter, vanilla extract, and instant oats, a bit of water to make it moist, and Stevia (the liquid only stevia kind, no added things). It’s really the core of the recipe! ❤️
    They taste great!!

    Just wanted to leave some love for this recipe! I’m about 5 years into my gf, df journey and have truly missed nostalgic desserts like these no-bakes. This recipe is even better than the traditional one! I’m not super great at sticking to a recipe and I slightly heated the PB mixture the first time out of habit. I also had to do half ghee, half coconut oil due to limited ingredients. The heat softened the oatmeal a bit for a softer texture and I really liked the flavor of both fats as well. I have since made the original recipe. Both turned out GREAT, but I do think the heat helped. Thanks for sharing this gem with us!

    Not sure what went wrong but these did not bind well for me. All I did differently was use monk fruit instead of coconut sugar. After adding a little extra coconut oil and peanut butter, I was able to squeeze the mixture in my hand and carefully roll them into balls. I’m sure the shape won’t matter to my teen boys, who love all the treats I make even when they don’t turn out as planned. They are tasty though, which is why I gave this recipe a 4 star. I also love the simple healthy ingredients.

    I was craving something sweet/healthy and came across this. No bake cookies are an all time favorite of mine. I substituted the coconut oil with a ripe banana and the coconut sugar with pure maple syrup, and it turned out great!

    I love this recipe- thank you for sharing! I’ve made the cookies twice, once with stevia (1:1 for the sugar) and once w/ half the amount of coconut sugar. Both times the consistency was more like chocolate covered crumbled oats/ not bound together at all to drop the cookies onto parchment by the spoonful. Like another reviewer, I added more coconut oil and peanut butter and that helped, but I still had to roll each cookie with my hands to get them to bind. I would love any suggestions on how to improve my consistency- the flavor is awesome but it is time consuming to roll each cookie out. Thanks again for sharing!

    1. Thank you so much for this feedback, Irene. Are you changing anything else about the recipe? Are you using quick/instant oats (and not rolled oats). I’m also wondering if reducing the sugar might be causing the issue? Also, what type of peanut butter are using? Is it a natural peanut butter that’s sort of drippy or one that is super thick? I think that could make a difference too!

      1. Thanks for the thoughts, Brittany! I used Organics crunchy old fashioned peanut butter. It is more on the thick side/ definitely not drippy. Is there a PB brand you’d recommend? And I used 365 organic quick oats, but underneath “Quick Oats” it says “Rolled Oats” – could that be my problem? Also just making sure- you only melt/ liquify the coconut oil, not the peanut butter or any other ingredient? Thanks again! Irene

    Yet another favorite! These were easy to put together and I had all of the ingredients in my pantry (love that). One cookie helps curb my sweet tooth with a little less guilt 😛 I gave several to my parents as well and my mom loved the hint of coconut (from the coconut oil).
    I found the recipe to be very forgiving overall and appreciate the multiple substitutions. I made the first batch using the recipe but might venture out in the future. Thanks!!

    I was looking for a healthy and easy alternative to cookies, and these didn’t disappoint! I gave some to my friends and they said they tasted like nutella, and that they loved the. The only fault I found is how difficult it was to roll them, so I ended up squishing them into balls rather than rolling, but apart from that it’s an amazing recipe!

    We are a gluten free and sugar free household – so I’m always looking for a sweet treat that’s not terrible for us. I used monkfruit sweetener – slightly less than 1/2 cup- and I melted the coconut oil with the cocoa powder, sugar and milk – then stirred in the peanut butter and vanilla – poured over about 2.5 cups of rolled outs – it made 2 dozen cookies. They are so yummy!!!

    These are SO tasty! I tend to keep eating more sweets once I start, but one of these did the trick! I only had 1 tbsp of cocoa powder on hand so I used it and then added about 0.7 oz of melted baking chocolate chips and it was so good!

    I saw people saying they had trouble with the cookies binding, especially when using quick oats, but quick oats are all I had so I used them anyway and while they don’t bind while mixing them, they still hold together after freezing/refrigerating them! again. so good. will make again for sure.

  70. There is star beside of 1/2 cup melted coconut oil, but I can’t find an explanation of why? Does this mean 1/2 cup of coconut oil, and then you melt it -or- does it mean 1/2 melted volume. Is that the dumbest question ever? Coconut oil in recipes always confuses me. Help!

    1. The star is there to note that you can use mashed banana in place of the coconut oil if you want. With the 1/2 cup of coconut oil you do want to measure the coconut oil in a liquid state. And it’s not a dumb question at all!

    I found these hard to shape. I put them in silicone muffin liners, which was significantly easier. They were not very sweet so I added some more coconut sugar and maple syrup. Since they are no bakes they are very fast and easy to taste test! I will probably make them again since they avoid all the ingredients I can’t eat.

    I made these for my kids lunchboxes and everyone in my house loves them! Any idea how Long they stay good if I made a double recipe?

  76. All the other recipes call for heating some or most of the ingredients on the stove, letting them come to a roiling boil then cook for exactly 6”
    seconds.

    The only ingredient you hear is the coconut oil. Why is that? The other bakers said boiling the mixture for a full minute was the key to making the cookies turn out.

    1. I don’t find it necessary, but you can totally heat the mixture if you’d like. The coconut oil is what sets these cookies once they’re chilled. That said, if you use granulated sugar I highly recommend heating the mixture because it dissolves the sugar so the sugar isn’t crunchy in the cookies.

    These cookies are BOMB. They are so simple and easy, especially in the summer when you don’t want to turn on your oven. I make a big batch and then freeze them separately so they feed us for weeks! Great breakfast, snack or dessert! I didn’t have enough peanut butter so I added some cashew butter too… omg even better.

    I made these! I try all kinds of healthy recipes with no sugar and no flour. I used Chocolate sunbutter, monkfruit instead of the coconut sugar, and Oat milk instead of the almond.(that’s what I had on hand:) I also used half homemade granola and the other half of the instant oats. Added 2 tbls. of unsweetened coconut too. I just like to play with my food. Excellente!! Thank you for your wonderful delicious healthy recipes!

    i made these cookies tonight, and they are wonderful. i only had old fashioned oats, and i added a little coconut flakes. i found that they solidify nicely and had a fantastic flavor. i may cut back the sweetener next time because im trying to train my pallet to enjoy sweetness, though these are perfectly sweetened but not too sweet.

    This recipe has a lot of delicious and healthy ingredients. But there is way too much oatmeal for the amount of wet ingredients. I did melt the wet ingredients together. After I added the oatmeal, I had to add more peanut butter and coconut oil to get the oats somewhat covered. you have good ingredients as I said, but it definitely needs some tweaking. I checked numerous other similar recipes (in case it was just me) They all have a ratio with less oatmeal.

    1. Hi Rachel – You could try melted butter, but I haven’t tested this recipe with it so I am not sure how it will work out. If you choose to use protein power, you’ll need to adjust your liquid because it’ll make the batter much more dry. Let me know how these turn out, hope you enjoy!
