Guacamole Toast for Breakfast

Good morning friends! I hope you’re well-rested and ready to take on the day. Isaac and I… not so much. We spent the hours between 3:00-4:30AM dealing with a sick pup. Olive has a sensitive tummy and she got sick (from both ends) all over our bed last night. It was pretty much the worst thing to wake up to. It was everywhere (although lucky for me, mainly on Isaac’s side) and the odor that filled our room… oh my goodness, it was bad! We don’t think she’s actually sick with anything. This same sort of thing has happened before after she’s eaten onion or garlic. We don’t feed her people food, but sometimes she finds tiny pieces of food on the floor so I’m guessing that’s what happened yesterday. :/ I’m currently finishing up laundry as she rests in her bed recuperating. Fingers crossed she will feel better by this afternoon, poor thing.
And yes, now I completely understand why a lot of people don’t let their animals sleep in the bed with them. Last night we had to move her to the bathroom for obvious reasons, but even after this incident we’ll still let her sleep with us. She’s too much a snuggle bunny not to.
So now that I’ve shared a gross story that you probably didn’t care to read right before looking at food photos… let’s talk breakfast, shall we?
Everyone is on the avocado toast train, but what about guacamole toast? As I was making this frozen pea guacamole last week I started thinking about how good it would be on toast and decided to try it…
then I put an egg on top and called it breakfast.
Spicy, creamy gauamole atop a toasted slice of bread with a fried egg. Hello… yum!!
I made sure the egg was cooked over easy so the yolk would still be a little runny, but of course, the egg can be cooked any way you like. For the toast I used a slice of Food for Life gluten free original 3 seed bread. I like this bread a lot, but any bread will work for the recipe. 🙂
So now you know what to do with those left over avocados from the Super Bowl — make this healthy guacamole and have a little guacamole toast for breakfast!

Guacamole Toast for Breakfast
Ingredients
- 1/4 cup guacamole
- 1 egg
- 1 slice of bread
Instructions
- Make guacamole.
- Cook egg to your liking in a greased non-stick skillet.
- While egg is cooking, toast your bread.
- Top toasted bread with guacamole. Top with your egg and enjoy.

And I hope your puppy feels better soon! I could not imagine not sleeping with my pets. My husband and I have a cat and I sleep on my back and he sleeps on my stomach every night. It’s the sweetest thing.

Egg + avocado toast is one of my all-time favourite breakfast options, so I bet the guacamole version is super delicious as well! So sorry about your pup – sending lots of healthy + happy thoughts. 🙂

Aw, I’m sorry to hear about Olive and your bed. My dog is 60lbs and she takes up way too much room in our queen size bed so she has her own cozy bed on the floor. But if I had a small dog, I’d be the same way. Even if she pooed in my bed, haha. I hope she feels better soon!
On a more appetizing note, this toast looks fabulous! I’m crazy for avocados and I love the fried egg on top!!

I eat guacamole toast for breakfast ALL the time at work and my coworkers think it’s weird. Little do they know what they are missing out on!

Aww poor Olive! I hope she’s feeling better. And this toast sounds so good! I definitely love plain avo toast, but the guac would definitely add a good kick.
This toast looks so good! I will definitely make it for tomorrow morning. Sad to hear about Olive. When my pup gets sick he won’t eat for a day. I usually reintroduce plain rice to his diet. And then dog food. Also sometimes a warm sitz bath will work. Hope Olive gets better soon!
This dog nights are the worst! Our dog has an infection and is wearing a cone this week. She is not happy and cried all Sunday and Monday night. So sad!
I love the guacamole idea- so much more fun than just avocado!
We always let kids and pets sleep with us, though there are definitely drawbacks to that practice. I love this simple use for avocado. It will make a terrific dinner on nights when I’m too exhausted to cook.
Hey, as the owner of two dogs, just a helpful heads up! Both onion and garlic are extremely toxic to dogs…and avocado, grapes and raisins, too, actually! Here’s a list for foods that dog owners should avoid giving to their pets- hope this is helpful!:

Oh no, poor pup! My dog threw up a load of wires yesterday because he secretly chewed up my fiance’s Xbox cable… hopefully he’s learned his lesson after that stunt!
