Gooey and delicious vegan graham cracker blondies made with just five ingredients! They’re so easy you’ll want to make them all the time.

Do you even believe me when I say you can make tasty blondies with five ingredients?! No jokes here, this delicious treat really only needs five ingredients and they’re so good!

I first found out about this recipe from a friend who brought over a meal train dinner for us when we were first home from the hospital with Olivia. With the meal they brought blondies as dessert. Which by the way, anyone who brings a dessert with their meal train dish gets extra brownie (or blondie) points because having a sweet treat on hand is super helpful when you’re sleep deprived with a new babe.

Anyhow, Isaac fell in love with the blondies and quickly texted the person who made them for us to find out the recipe. He shared the recipe with me and I was shocked by the fact that it only required five ingredients – graham crackers, sweetened condensed milk, chocolate chips, baking powder and salt. I immediately thought it would be fun to try to create a vegan version with sweetened condensed coconut milk and dairy-free chocolate chips. They turned out to be so delicious that I knew I had to share the recipe.

Have Your Kids Help Make These

This is such a fun recipe to involve the kids with because 1) it involves graham cracker smashing and 2) it’s basically just dumping ingredients into a bowl and mixing! Have your little ones help you or assign your older ones to make you a treat… ha!

What is a Blondie?

As I was developing this recipe and writing this post I wanted to see what the actual definition of a blondie was and it’s considered a blonde brownie. A brownie without the cocoa powder! Traditionally, blondies have more of a vanilla flavor than chocolate.

Ingredients You Need:

  • graham crackers – if you want the blondies to be vegan, be sure to look for graham crackers without honey.
  • sweetened condensed coconut milk – use 2 cans of store-bought or make your own with my recipe. If you don’t care about the recipe being vegan, you can use 1 (14 oz) can of regular sweetened condensed milk.
  • dairy-free chocolate chips Enjoy Life chocolate chips are a great dairy-free/soy-free option.
  • baking powder – to help the brownies rise.
  • salt – just a pinch.

Notes and Substitutions

Gluten-fee – For gluten-free blondies, use gluten-free graham crackers.

Homemade sweetened condensed coconut milk – You can make your own sweetened condensed coconut milk using my recipe. Just be sure to make a double batch!

Store-bought sweetened condensed coconut milk – Store-bought sweetened condensed coconut milk cans typically come in two sizes (7.4oz and 11.25oz) so make sure to measure out the correct amount if using the bigger cans. If using store-bought sweetened condensed coconut milk, make sure to stir the cans up prior to adding it to the graham cracker mixture as separation could occur causing the batter to become more oily.

Vegan Graham Cracker Blondies

Gooey and delicious vegan graham cracker blondies made with just five ingredients! They’re so easy you’ll want to make them all the time.
Prep Time: 10 minutes
Cook Time: 35 minutes
Servings: 12

Ingredients  

  • 2 ½ cups vegan graham cracker crumbs, about 32 squares*
  • 2 7.4 ounce cans (about 1 1/2 cups) sweetened condensed coconut milk*
  • 1 cup dairy-free semisweet chocolate chips
  • 1 teaspoon baking powder
  • Pinch salt

Instructions 

  • Set oven: Preheat oven to 350°F and prep an 8-inch square baking pan by spraying it with non-stick spray or lining with parchment.
  • Prep graham crackers: Crush graham crackers and measure, if you haven't already. I like to put them in a plastic freezer bag and use a rolling pin or the bottom of a glass jar to crush the graham crackers into crumbs.
  • Mix ingredients: In a large bowl, combine the graham cracker crumbs, sweetened condensed milk, chocolate chips, baking powder and sea salt. The mixture should be a thick consistency. 
  • Spread batter: Pour and spread batter into your greased 8-inch square baking pan. Top with additional chocolate chips to make them look pretty. 
  • Bake: Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Serve: Let cool completely on a wire rack once cooled, enjoy!

    Made these last night and they are delicious! They are incredibly moist and I think I prefer the consistency more the day after, as they set up a bit. Great to make ahead as they only get better with time. thank you!

    I was so excited to make these this morning…….but they were a complete fail. I used GF Schar brand honey grahams and canned sweetened condensed coconut milk. At the 30 minute mark I peeked at them and they were bubbling in oil. Since the toothpick test was clearly not going to work, I let them cook another 4 min. When I took them out there was a layer of oil on top that I soaked up with a paper towel. I let them cool and cut into them. They were crunchy chewy on the edges and chewy gooey on the inside but sooooo oily, just oozing, that they got tossed. Any ideas?? Have you used canned milk or just your homemade version??

    1. Oh no! I’m so sorry this happened, Melissa. This makes me so sad for you. When I tested this recipe I used two cans of canned sweetened condensed coconut milk from Edward’s and Sons. Did you crush your grahams and measure out the 2 1/2 cups? Did you “dough” look similar to how my dough looks in the photos? Trying to wrap my head around what could have happened.

      1. Yes, I measured out the crumbs. I used Nature’s Charm for the milk. I used one and a half cans as they were about 11.5 oz in each can.The dough looked like yours. Maybe that brand just has a higher fat content or something. I was so sad too! I am glad others have had it work for them though. Maybe I will try them again if I can locate the brand of milk you had used.

        1. Thanks for getting back to me, Melissa! I’m thinking that too much sweetened condensed coconut milk could have been the culprit. If you used 1.5 cans that would have been 17.25 oz and the recipe calls for 14.8 oz. I know it’s not a huge difference, but it definitely could have been the reason why yours turned out to be oily. I do see that Amazon has the Edwards and Sons brand that I used. Definitely let me know if you give these another shot and how they turn out for you!!

            Well, I can never stand a failure…so back to the store I went and got some Annie’s honey graham crackers ( not GF) and although I couldn’t find the brand of sweetened condensed milk you used I found Nature’s Made brand. I measured it out, mixed it all up and baked. It definately came out more like yours. Still seemed oily on the bottom when I cut it to serve, so maybe I need to chill it a little. One note….since these cans of the milk were still the larger size, I didn’t realize until after I had scooped out what I needed from the 2nd can& mixed it in, that I should have stirred it up first. It seems that it was darker at the bottom of the can (maybe the sweetener had separated?). It turned out good and chewy, just still a little oily for my preference.

          Although this sounded amazing it came out like a oily hot mess. I’m super bummed. I read your entire recipe twice and followed it exactly as mentioned. I stirred the condensed coconut milk beforehand too. Idk what happened.

    Hi Brittny, I am so glad I found your website! I’ve been married for 12 years and we have been living together for 14. In that time, I can count on one hand the number of meals I’ve made. My husband loves to cook, he’s good at it, and I just seem to be in the way so I was perfectly happy letting him do all the work. But lately I start started wanting to eat healthier, and I remember from when I lived alone I used to be somewhat decent around the kitchen. But I am pleased to say that without exception, every single recipe on your site has been stellar! Most are not too terribly time-consuming or difficult to follow, and I have had great results.     I wanted these to turn out so badly, but they didn’t at all. The batter looked and tasted great but they didn’t bake well, just a pool of oil. I missed the note on mixing up the condensed milk and just poured it in straight from the can so that must have been the mistake. I want to try again 😞😞😞

    1. Oh no!! I’m so sorry to hear that these blondies didn’t turn out for you. 🙁 What brand and size was your sweetened condensed coconut milk? Do you think you added too much of it in? It also has seemed like more separation occurs with some brands, which is why I made a note to mix up the milk before adding it in so the oil isn’t separated. That’s probably what happened. 🙁

    So good, they taste like the most decadent cookie ever! Couldn’t wait for my homemade condensed milk to cool down so mine turned out brown (from the chocolate melting) and not blond, but delicious!

    I’ll try this again, but it was an epic fail for me. I’d suggest a note regarding the fact that with the 1.5 cups of the sweetened condensed coconut milk, the mixture will be VERY thick and to resist the temptation to add more milk. Lesson learned.

  12. I never have graham crackers on hand, but someone gave us a case of Biscoff cookies so I decided to try those instead so we could use them up. We had about 350 cookies to start, so I’ve been making this recipe since the beginning of quarantine and working my way through the case. (I found out that 17 crushed Biscoff cookies = 1 cup, so it has been slow going, LOL.) I use Carnation regular sweetened condensed milk, decrease the amount of chocolate chips since the Biscoff are sweeter than graham crackers, and put some coconut flakes on top of the batter before baking. I’m addicted!! These are so good, and so easy… and I’m so sad that we are out of Biscoff now. May need to go get another case!

  18. I was wondering if you could substitute the graham crackers for something else. Would Marie biscuits, arrowroot or granita biscuits work?
