Creamy Avocado Lime Tart

This lime and avocado tart has a creamy avocado coconut filling with a coconut pecan crust. It’s super easy to make, vegan and gluten-free!
You’ve seen me use avocado in dessert recipes before for my avocado truffles and mint chip avocado ice cream and I’m doing it yet again! This time with a creamy lime avocado tart that’s fresh and flavorful.
Healthy Lime Tart Ingredients:
There are two main components in this tart: the crust and the filling. Here’s what you need for the crust:
- shredded unsweetened coconut
- chopped pecans
- medjool dates
- lime zest
- sea salt
And here’s what you need for the filling:
- avocados
- fresh squeezed lime juice
- coconut nectar, maple syrup or honey (if you don’t need this recipe to be vegan)
- coconut oil
- lime zest
Choosing a Pan for This Tart
I’ve made these tart in different ways — in a 9-inch springform pan, in an 8-inch tart pan and in four mini springform pans. You could even put the ingredients in small ramekins or a mini cupcake pan. Just make sure the tarts are pretty frozen when you try to remove them from the cupcake tin or they won’t come out properly.
Once the tart has firmed up in the freezer, it’s ready to serve. You can take it out to thaw for about 10-15 minutes before serving, or you can certainly eat it earlier if you like the frozen texture (which I do). Just test it a little to see which way you like it best. As I mention below in the recipe, if you let it sit out too long, the filling will get pretty soft, almost like a pudding, so make sure to put any leftovers back in the freezer.

Lime and Avocado Tart
Ingredients
Crust
- 1/2 cup shredded unsweetened coconut
- 1 cup chopped pecans
- 1 cup medjool dates, about 12 dates
- 1-2 teaspoons lime zest
- pinch of sea salt
Tart Filling
- 4 avocados, about 1 1/2 cups of avocado puree
- 1/2 cup of fresh squeezed lime juice
- 1/2 cup coconut nectar, maple syrup, or agave
- 2 Tablespoons coconut oil
- 2 teaspoons lime zest
Instructions
- Process the crust ingredients (coconut, pecans, dates, lime zest and sea salt) in a food processor or mini chopper until the dates have turned into sticky paste holding the crust ingredients together. Take mixture out of the processor and press evenly into your springform pan. Place pan in freezer while you make the tart filling.
- While the crust is setting in the freezer, blend ingredients for the filling (avocados, lime juice, agave or maple syrup, coconut oil and lime zest) in a high-speed blender or food processor until creamy.
- Pour the avocado filling over the crust and use a spoon to make sure the filling is even and smooth.
- Place pan in the freezer to set up, at least 2 hours, but can be overnight. Take out of freezer, remove the springform pan, let sit out for 10-15 minutes, cut into slices and serve. The longer it sits out, the filling will soften and become more like pudding. It still tastes amazing, but not as firm. Store any leftovers back in the freezer.

You could substitute another sweet dried fruit like raisins or apricots.

I used mini springform pans that are 4″. I think you could use a 9″ though!
These would be so much easier than squeezing the juice out of all those little key limes for pie…and yes, I’ve done that before. Love the concept.
Slice them in half and use a (really clean) garlic press! Much easier than squeezing individual tiny limes.

Brittany, I love this idea. I went on a creamy lime and avocado kick in March right after a had my son. A friend brought this pie over and noted it for its super powers for a postpartum mother. I made one and ate one daily for weeks(I know not a good idea, but having just had a baby my cravings were intense.) I just rediscovered this recipe and want to thank you, it’s so yummy.

Please advise what can I use when I dont have coconut oil
Actually I seen similiar recipe at some other place before I forgot but that was no so detailed like this and not fulfilled my expectations which I had by seeing images
I love the look of these and will be making one this weekend.
One question though, what could I substitute for the coconut oil? Ihave a friend who would love these too but she is allergic to coconut.

A girlfriend of mine made this for a tea party yesterday and it was by far the best key lime pie I’ve ever had. It took a little persuasion on her part to convince us that it was refined sugar free and vegan. People, try this recipe you will not regret it.

Your recipe looks yummy. I made a variation of this a couple of weeks ago using lime, a banana, stevia and an avocado, and making soft ice cream in my Donvier ice cream maker. The avocado makes an incredibly creamy ice cream. I want to give your recipe a try because it can go back in the freezer, and the crust will just add more yumminess. I would substitute liquid stevia for the agave.

In the lime avocado tart you call for 1/4 cup coconut, or agave nectar or honey. Question the coconut vs 2 other liquids. Are you thinking coconut or coconut oil, because you just say coconut, and the next ingredient down is coconut oil.
This was delicious! I was in a hurry so used a pre-made graham cracker crust with the filling recipe and it was quick, easy and so delicious my friends had no idea it contained avocados!

Hi Rein. If you use two mini springform pans and cut each into four slices, you’ll have a total of 8 slices and the nutritional info is for 1 slice. I hope you and your family enjoy the tart.
Can I use maple syrup instead of honey or agave nectar?

I made this beautiful lime tart to bring to a friend’s house for dinner. We had homemade Ethiopian food so a refreshing and lite dessert was ideal. This tart did not disappoint. We all had seconds. I followed the recipe to the letter and it was so delicious! I will definitely be making this again!

This is one amazing no-bake dessert. I took it to a friend’s house for a party and everyone asked for seconds. I would usually opt for a chocolatey dessert but this has found itself to the top of my list.

I don’t think it’s too coconut-y, but I of course love coconut. 🙂 If your husband isn’t a big fan of coconut I would use honey instead of the coconut nectar and refined coconut oil instead of virgin since that has more of a neutral flavor and scent. Let me know if you end up making this and how you guys like it!

I used normal dates and soaked them in hot water to make them softer, and it worked perfectly! You wouldn’t know that the ingredients are healthy because it is so creamy and delish. Having for dessert tonight so really looking forward to it!

Either will work great! Just depends on which look you prefer.
My friend has major dietary allergies including gluten, rice, soy, dairy, chocolate, pecans, peanuts, eggs, and coconut. She was super bummed she can’t really have many desserts so I told her to try this recipe with a couple of modifications for her allergy like cashews instead of pecans and avocado oil instead of coconut oil and coconut flakes. She loved it! And since my family can have everything on the recipe, I also made it with the original recipe and everyone to raves about it. Even my daughter who has hated avocado since birth liked it! We added vegan whipped cream on top which is a great contrast with the tart lime. I will try key limes next time! Delicious recipe!

This recipe is amazing!!! It’s super simple, and since it doesn’t require cooking it’s really nice to be able to make it during the hot weather. This past weekend we had it with lime, and it was so good that I wanted it again today. Unfortunately, we didn’t have any more limes, so I decided to substitute lemons instead. It was still SO good. Make it now, you won’t regret it!

When I tasted a bit of the lime/avocado mixture, before it had been in the freezer. I was sure that my husband wouldn’t eat it, as I could taste the avocado. However, after it had been frozen and was still cold, we both loved it. You can’t taste the avocado at all. Thank you Brittany for creating another wonderful dish.

I’d been wanting to try this recipe for a long time and it finally happened this morning. I had 4 perfectly ripe avocados, plus all other ingredients (I did use agave in place of honey), and was able to whip this up before I even started my work day (yay, pros of telework!).
I’m really happy with how it turned out. The lime carries throughout the tart, so every bite has that nice sharp lime. So refreshing – and because it’s avocado – one piece is so satisfying for any sweet tooth.

I have not tested this recipe with walnuts, but they should work just fine. If you give this recipe a try, I would love to know how it works out for you!

Thanks, Veronique. I haven’t tried omitting/subbing the coconut oil in this recipe, it does help to bind/keep everything nice and moist. I am not sure how it would turn out without it. Let me know if you do give it a try without / subbing for another oil.

Hi Kate – Depending on how hard your dates are will determine whether to soak them beforehand or not. You want them soft enough to blend up in the food processor. Hope this helps! Enjoy!
