You only need 8 simple ingredients and 1 bowl to make these soft and chewy coconut flour cookies! They’re grain-free, low carb and low sugar.

I’m really excited about today’s recipe because I’ve been experimenting with coconut flour a bit more lately. I realized that almost all my healthy baking recipes involve almond or oat flour, and I only have a few with coconut flour (like this delicious coconut flour banana bread), so today I’m sharing a recipe for coconut flour cookies!

What is Coconut Flour?

Coconut flour is made from dried, ground coconut flesh. It’s packed with healthy fats, fiber and protein. It absorbs more liquid than other flours, so cannot be swapped 1:1 with other flours.

Baking with coconut flour can be challenging and it takes some experimenting to get recipes just right because a little coconut flour goes a long way! But it’s oh so worth it because it offers a texture that is a bit softer and more dense than traditional flour and the flavor is awesome.

Coconut flour adds a hint of natural sweetness to baked goods without a ton of coconut flavor, making it a great option for baking, even if you’re not looking to make a coconut-flavored dessert.

It’s also a great flour option for anyone allergic to almonds or those looking for a gluten-free and grain-free flour option.

Ingredients Needed

  • coconut flour – can’t have coconut flour cookies without coconut flour! I love using Bob’s Red Mill organic coconut flour, which you should be able to find in the baking aisle at most major grocery stores. I do want to make a note that different brands of coconut flour can vary in consistency and texture, but I’ve never had an issue with Bob’s Red Mill, so I highly recommend picking up a bag!
  • coconut oil – melted coconut oil replaces the butter in this recipe.
  • honey – the perfect natural sweetener for these cookies. The honey pairs perfectly with coconut flour.
  • eggs – helps to bind the ingredients together and gives the cookies structure.
  • vanilla extract – a great flavor enhancer.
  • sea salt – just a pinch!
  • baking soda – to help the cookies rise.
  • chocolate chips – I love Lily’s chocolate chips for a low-sugar option and Enjoy Life dark chocolate chips for a dairy-free/soy-free option.

How To Make

These coconut flour chocolate chip cookies are super simple to whip up, especially since you can make the cookie dough in one bowl!

Start by mixing your wet ingredients (coconut oil, honey, eggs, and vanilla) together in a large mixing bowl. Mix in the coconut flour, salt and baking soda until well combined. The mixture may seem runny at first, but it will thicken as the coconut flour absorbs the liquid! Trust me, coconut flour is like a sponge.

After the dough has thickened a little, fold in the chocolate chips. Scoop dough using a cookie scoop and place it on a baking sheet lined with parchment paper or a silicone mat. Press the dough down into a cookie shape with your fingers.

Bake the cookies at 350°F for 12-14 minutes or until the edges are golden brown. Let them cool on the pan and then transfer them to a wire rack for additional cooling. Once completely cool, it’s time to enjoy!

Substitutions & Notes

Coconut flour – I don’t recommend swapping the coconut flour for another type of wheat flour or gluten-free flour. The high amount of fiber makes coconut flour super absorbent so when using it for baking you typically can’t use it as a 1:1 sub for other flours. Try my almond flour cookies instead.

Coconut oil – You can use melted butter or any neutral oil like olive oil or avocado oil instead of coconut oil if you prefer.

Honey – Maple syrup or agave should work just fine as a substitute for honey. I wouldn’t recommend swapping the liquid sweetener for a dry sweetener like coconut sugar or brown sugar as that’ll change the consistency of these cookies.

Chocolate chips – You can skip the chocolate chips altogether if you want or swap them with another mix-in of choice like fresh blueberries, chopped nuts or dried fruit.

Vegan – I haven’t tested it, but others have made these cookies with flaxseed eggs instead of regular eggs and said they turned out perfectly! You can also swap the honey for maple syrup.

How to Store Coconut Flour Cookies

At room temp: These cookies can be stored at room temp for 2-3 days. After that, I recommend storing them in the fridge.

In the fridge: Store these cookies in an airtight container in the fridge for up to 7 days.

In the freezer: For longer storage, store these cookies in a freezer-safe container for up to 3 months.

Frequently Asked Questions

Can I swap the coconut flour for a different type of flour?

Since coconut flour absorbs up way more liquid than other flours it can’t be swapped 1:1 with other flours. If you’re looking for a chocolate chip cookie recipe that uses a different flour I have these almond flour chocolate chip cookies or these healthy chocolate chip cookies made with wheat flour.

How can I make these cookies crispy?

Coconut flour cookies are supposed to be soft, not crispy! The texture is going to be more cake-like versus a traditional crisp cookie.

Coconut Flour Cookies

Instructions 

  • Preheat oven to 350°F and line a baking sheet with parchment paper or a silicone baking mat.
  • In a medium mixing bowl stir together the coconut oil, honey, eggs and vanilla.

  • To the same bowl, add coconut flour, salt and baking soda and mix until combined. It may seem a little loose at first but the dough will begin to thicken as the coconut flour soaks up the liquid.

  • Scoop dough using a cookie scoop and press into a cookie shape with your fingers.

  • Place cookies on the baking sheet and bake for 12-14 minutes, or until the bottom and edges of the cookies are golden brown. Remove from oven.

  • Allow to cool on the pan, then transfer to a baking rack to cool completely and enjoy!
  • Store cookies in an air-tight container at room temp or in the refrigerator. Cookies will last much longer (up to 7 days) stored in the refrigerator. I personally really like how they taste straight from the fridge.

    This recipe looks great! Just quickly, I was wondering if you would recommend a fruit substitute (raspberries, blueberries, sultanas etc) for the chocolate- I am a teacher (gluten free) and so wanting to explore recipes with the children that contain fruit and vegetables.

    1. I think raisins, currants or dried cranberries would work great. I’m not sure about fresh berries because of the added moisture.

    1. Hi Theresa. This recipe was specifically tested with only coconut flour because I wanted to create a tasty coconut flour cookie. I haven’t tried it with a gluten-free flour blend but I would imagine you’d need more flour.

    I didn’t have enough coconut oil so I added melted pure peanut butter. And substituted chia “eggs” for the eggs and cacao nibs for the chocolate chips. This is the first time I’ve baked anything other than eggs/butter/flour/sugar/chocolate chips and wow, these are addictively good. Thank you!

    So easy to make and so delicious! You have to love the texture the coconut flour gives to any recipe, this was my first try with this type of flour and thanks to your recipe it was very successful!

    A very nice cookie recipe that can be fiddled with! I added 2 T of cocoa powder to the dry ingredients instead of chocolate chips to get the chocolate taste without the added fat and sugar, and I tried the recipe again leaving out the vanilla and adding 2 t of grated lemon rind for a lemon cookie. Both worked well.

  15. Hi, I don’t have time to read all the comments, maybe this was asked before ( I saw other substitutions) Can I use Rapeseed or Sunflower or Olive oil instead of coconut oil? Love the sound/look of these, I’m very new at the coconut thing, have both flour and sugar here at home but the coconut oil is expensive here (in England, UK) ….

    My cookies stay in a ball shape never get flatter like the pictures say! They also are always so crumbly when baked. I wait until the batter is thick and sticks together great when I roll the dough into balls. What am I doin. Wrong?!

  18. I changed the recipe just a bit because I didn’t have all of the ingredients. I used butter in place of the coconut oil, xylitol instead of honey (Idissolved in a little water to make it a thicker consistency) and I replaced the chips with pecans. They were good as they were, but then I found a bar of 80% cocao in the pantry, so melted a square and added about a tsp of HWC stirred it up and drizzled across the cookie. I only made 8 out of this recipe. About the size of a package cookie. I bet these will taste even better once placed in the refrigerator. I am very pleased.

    The taste is nice but I too had the problem of them not flattening and crumbling. This was a let down. Yes, I used the right measurements and pressed down into a cookie shape. If you need a crumble for anything else, this would taste good crumbled on something perhaps.

    Thanks Brittany. These are curiously moreish and out of the fridge is a good tip! We used a choc melt on the top of each biscuit instead of the choc chips and were pretty happy with the result.
    Trying it again with some chopped glace ginger. Australians don’t use these things called ‘cookie scoops’ so the shaping was a bit fiddly but I just rolled about a tablespoon of mixture into a ball and flattened it out. While I’m here, thanks for your samoas recipe – I get rave reviews for those even without the choc topping 🙂

    I could not believe how delicious these cookies were. I substituted chopped peans and two flax eggs. Increased the vanilla to a tsp. The batter tasted so good, I couldn’t wait to get them in the oven. I rolled 2 tsp.of the batter into a ball in my hand and gently flattened them like you would do making hamburgers. If you put in too many chopped pecans the cookies will crumble. A+++ recipe!!!!

    Trying to get rid of my coconut flour and honey so this was perfect. I increased the vanilla extract and subbed melted margarine instead of coconut oil so the texture came out more like small fluffy cakes but still tasted great! Flavours were very subtle.

    Although not sure how you yielded 12 because I only got 8 shop-bought sized cookies out of the batter. I guess maybe if you bulked it out with chocolate chips?

    2. I had the opposite happen! We don’t tend to use cookie scoops in Australia so I just used a teaspoon and got at least 16. They’re bite-sized though, definitely not ‘shop-bought’ size (I always find those too big).

    If you need to use up coconut flour as I did, this is much better than making something larger. The size of cookies was perfect for them to be soft inside, yet not too fragile.

  25. Hello Brittany I followed your recipe but I skipped the salt and substitute honey with coconut sugar and what I got is cracked broken cookies what can I do please I felt down after it 🙁

    1. Hey Yousef, I’m so sorry to hear that these cookies didn’t turn out for you. The coconut flour is already a dry flour, so swapping the honey for coconut sugar probably dried out the cookies more. Did the dough seem dry to you? If you don’t want to use honey, next time I would suggest using maple syrup or agave instead.

    I am just done baking those , I did 2 flax seed egg , I added 1 Tbs natural crunchy peanut butter and reduced the coconut oil by 1Tbs . My batter was perfect the cookies are very tasty , I like crunchier cookies so I decided to pop them in my dehydrator for a bit longer just to see if they will crisp up . I liked your recipe because it was quick not too many ingredient and not too fattening ..

  28. I have made these twice, i love how easy they are! Mine seem to come out a with more of a cake density than cookie. But they are still delicious. Do you have any suggestions? My batter doesn’t seem to be as smooth as the video. My only other thought is to bake them longer.

    Loved the simplicity of the ingredients! Fast to put together and fun with kids. So delicious! They were gone instantly! my dough was a bit wet even after i waited for the flour to absorb the moisture. i added a little more flour (i think i added more oil and thats the reason why it was more wet than it had to be) i will be trying this recipe again! <3

    These are AMAZING! Trying to please toddlers while remaining healthy is a challenge but this recipe lives up to it! Wondering, though, if I can use pure maple syrup ILO honey as the honey can be a bit overwhelming in the cookies, for my taste.

    I was looking for a cookie recipe where I could use my leftover coconut flour and corn syrup “maple syrup” (from church breakfast). I hate wasting or throwing away any food. Your recipe was perfect! Since my husband loves coconut, I used the “maple syrup” to replace the honey, used coconut extract instead of vanilla, used sweetened coconut flakes to replace the chocolate chips. The cookies turned out wonderful! My husband loves them – crispy on the outside and soft on the inside with just the right amount of chewiness! The taste of the coconut was perfect. No maple flavor came through, just a mild sweetness. I will make these again – thank you for the recipe!

    1. I’m not sure since I haven’t tried it! I would just look up baking soda to baking powder conversions because you might need to use less or more. Let me know if you end up trying it!!

    Excellent! I was looking for a coconut cookie recipe so I used sweetened coconut instead of the chocolate chips and I dipped the tops of the cookies in coconut before I shaped them on the cookie sheet. The only other change I made was that I doubled the vanilla. I loved the fact that they weren’t too sweet – just perfect!

  42. I just made these and they’re great! I used Leatherwood honey and found it a bit overpowering so might use maple syrup another time. I also used baking powder (misread the recipe) and they were fine. Used a teaspoon and got about 16 small biscuits. I liked that I only needed a single mixing bowl.
    I did find that the coconut oil re-solidified as soon as I added the eggs. Didn’t seem to affect it once cooked but some cookies might be oilier than others.

    After the appropriate cooling period had lapsed, I thought the cookies tasted too eggy, (which was surprising as the recipe uses way less eggs than most coconut flour recipes), however, after refrigerating the cookies, the previous taste was replaced by sheer deliciousness!!     I made this cookies and followed the recipe but the batter never didn’t thicken I had to add another 1/2 of flour for it to finally thicken also they turned out very soft, I even left them in the oven until the top turned golden brown but they still very spongy, is that normal?
    All of that aside they taste really good, but they turned out a little bit too sweet I think it’s because I didn’t have chocolate chips so I broke a regular chocolate bar into pieces and it already had sugar in it.

    1. Hey Layal – You could swap the coconut oil for butter. Also, what type of coconut oil did you use (virgin or refined)? Virgin coconut oil has more of a coconut taste where refined is more neutral, so that could have been the reason for it being extra coconut-y tasting.

    I am so happy and thankful that I found this recipe. After doing countless recipes using coconut flour, I’m so ready to just throw away all my remaining coconut flour because all those food I cooked before using coconut flour were just plain nasty. So this recipe is really really heaven sent. In the Philippines, where I live, coconut flour is super cheap. Now I know that using this flour is not hopeless. BTW, I used salted butter so I didn’t add salt anymore. I also used maple syrup instead of honey for the taste. I am in kept diet, but I make room for the carbs of maple syrup because I’m using coconut flour anyway. My cookies came out like a cross between a shortbread and coconut macaroons. Not really the crunchy cookie we know, but I’m totally fine with that 🙂 Thanks to your website!

    This is the first recipe I’ve ever tried using coconut flour, and I didn’t really know what to expect. They turned out better than I hoped. We used 2 tbsp of chocolate chips, trying to keep the calories down. Next time I think i’m definitely gonna use more. The cookies were spongier than cookies made with regular flour, too. More like a cake than like cookies, I think. Overall, though, they were pretty good. I’m satisfied and I’ll be making them again in the future for sure! Thanks!

Changes to the recipe: I used butter instead of coconut oil, added toasted shredded coconut, chopped chocolate, forgot the baking soda, omitted the salt because my butter was salted, and used golden syrup instead of honey. My batter was a bit wet because I didn’t measure the coconut flour!

    I am following a SIBO protocol diet, so I am very limited in what I can have at the moment and have been dying for cookies. I subbed the honey for pure stevia dissolved in water and had to leave out the chocolate chips, but I rolled them in some cinnamon for flavor and they turned out so great. I actually did 1.5x the recipe and it still yielded about 13 cookies, so I will double it next time or make them smaller : )

    This was my first time baking with coconut flour. I’m not a baker so maybe that’s why the cookies didn’t come out so good. They are super soft. Like their not cooked. The dough was sticky. I substituted maple syrup for vanilla. I’m allergic to vanilla. I will try again.

    Hello, DO NOT UNDER AN CIRCUMSTANCES REFRIDERAGE YOUR DOUGH. I had a really cool project in which I was going to make 200 cookies for thanksgiving and hand them out and I came across some free coconut flour and I made this recipe twice once with 12 and I second time with 24 and it was great and they were ver delicious after I took the recipe and multiplied it by 14 to make 168 cookies I put the dough in the fridge for about 8 hours then put in 48 cookies on my 2 24 cookie sheets and they do not work I predict it is because of the coconut oil hardening anyway lesson learned DO NOT REFRIGERATE!

    1. Sorry to hear that! Did you change anything about the recipe? If your dough seems dry you could try adding another splash of liquid to moisten the dough.

    1. Hey Laia – I’m not sure as I haven’t tried it! Coconut flour already soaks up a lot of liquid so if you added protein powder you’d need to likely add more liquid but I’m not sure how much. The protein powder also might change the consistency of the cookies. Maybe start with 1 scoop of protein powder and 1-2 more Tablespoons of liquid? Let me know if you try it!!

    I’m new to coconut flour but have developed a killer muffin recipe, so I decided to move on to cookies.

    Your recipe was pretty good. I exchanged date syrup for honey because honey should never be heated, it’s not only harmful to consume, but also kills any value it would otherwise have. Also, date syrup is much lower on the glycemic scale. However, it makes for a darker cookie.

    The dough was difficult to handle. I ended up smooshing it into little balls in my hand and baking them that way. They were yummy, but after they cooled they were way too dry — we needed water! So next time I will add another egg for a binder and maybe some liquid. The recipe was a good place to begin and the taste was delicious. Thanks for helping me enjoy a treat. After going grain free and sugar-free I haven’t had a cookie in a long time.

    I made these but substituted coconut flakes instead of chocolate. They browned up nicely but remained quite soft. I cooked them a little longer but the texture remained like an almond joy without the chocolate. I thought perhaps I should add more coconut flour next time?

    Not bad, but they’re kind of bland. The only thing I changed about the recipe was that I added cinnamon, which if anything gave them more flavor than they would otherwise have.

    The texture is okay, they do stay soft, but not to soft.
    What I liked the most is how easy to make these are!

    Overall, they’re just okay. Would probably make again, but with my own adjustments. Pretty good bade to start with.

    im doing gaps diet and was really craving a dessert. found coconut flour in the pantry and made this recipe. i doubled the recipe but not the eggs thinking it was too much. it definitely needed the extra eggs!! they were dry and crumbly but have very good flavor! pleasantly surprised, and they satisfied my craving so I’m thankful. next time gonna use the right amount of eggs and add homemade gaps friendly chocolatechips

    My husband and I try to maintain a low carb, low sugar, gluten free diet! My husband works away for 2 weeks at a time so I times the recipe by 6 and make a huge batch of cookies for him to take to work! I have always struggled with coconut flour recipes (usually too dry) but your tip from youtube to let the flour really soak up the wet ingredients was a godsend! I use to think the batter was too wet and would add more flour! These cookies are an absolute staple in our house and I would not be making 30+ at a time if they were not so simple! Love!

    I have just tried this recipe, however, the cookies turned out too soft and the baking time was way much longer, over 30 minutes!

    I used the 2x recipe and swapped the 4 eggs with half-smashed banana + 2 teaspoons of caramelized applesauce + a scoop of yoghurt + some chia seeds + a slash of oat milk- these should have made the dough quite hard, but it was very soft instead.

    Any advise?

    1. Hi Simona – Unfortunately, you almost completely changed the recipe, so that is most likely why they did not turn out for you. Banana and applesauce cannot typically be swapped out for eggs without other adaptations to the recipe. If you need to make these vegan, you can always try to swap the eggs for flax eggs. I hope you give this one another try following the recipe.

    I am not a baker, but I have made your recipe for the blueberry muffins with coconut flour and they were delicious. So I thought I’d try these cookies. Since I made the muffins I was familiar with the batter seeming liquidy. My problem was the batter was too dry. I followed the recipe exactly.
