Inspired by Starbucks, these banana bread latte overnight oats combine cozy banana bread flavor with espresso. They’re easy to meal prep and packed with 27 grams of protein!

Starbucks just launched an Iced Banana Bread Latte, and the second I heard about it I knew I needed to turn it into overnight oats. After making my pumpkin spice latte overnight oats and brown sugar shaken espresso overnight oats, apparently turning my favorite coffee shop drinks into breakfast is becoming a thing around here… and I’m not mad about it.

If you love banana bread and coffee, this combo is so good!

Why I Love These Overnight Oats

  • Banana bread meets coffee: If you love my classic healthy banana bread, think of these as the breakfast-meets-coffee version. Mashed banana, cinnamon and nutmeg give you those cozy banana bread flavors, while espresso adds a little coffee kick.

Ingredients Needed

  • rolled oats – old fashioned rolled oats are my go-to for overnight oats because they soften nicely without becoming mushy. Grab certified gluten-free oats if needed.
  • milk – any milk will work. I used unsweetened almond milk, but oat milk, cashew milk or dairy milk are all great options.
  • ripe banana – you’ll need about half of a medium banana. Make sure it’s nice and ripe! The riper your banana, the sweeter and more banana bread-like your oats will taste.
  • espresso or cold brew – gives these oats their latte flavor. If using espresso, let it cool before mixing it with the other ingredients.
  • vanilla whey protein powder – adds a big protein boost and a little extra sweetness. I recommend Clean Simple Eats whey protein for the creamiest texture. If you use a plant-based protein powder you’ll likely need to add more milk since it’ll soak up more liquid.
  • chia seeds – help soak up some of the liquid and create thick, creamy oats. They also add a nice boost of fiber.
  • brown sugar or maple syrup – adds a touch of sweetness and really brings out the banana bread flavor. Start with 1 teaspoon and add more depending on the sweetness of your banana and protein powder.
  • cinnamon + nutmeg – the warm spices that make these oats taste like banana bread.

  • Use a ripe banana: The riper the banana, the sweeter and more flavorful your oats will be.
  • Let the espresso cool: Cool your espresso before mixing it with the other ingredients, or use cold brew instead.
  • Adjust the milk as needed: Plant-based protein powder absorbs more liquid than whey, so you’ll likely need an additional ¼–½ cup milk to get the right consistency.

How to Store & Meal Prep

Store these overnight oats in a sealed jar or airtight container in the fridge for 4 days.

The oats will continue to thicken as they sit, especially if you’re using a protein powder that absorbs a lot of liquid. Just stir in a splash of milk before eating to loosen them up.

For meal prep, double, triple or quadruple the recipe and divide it between individual jars. Wait to add toppings like fresh banana slices, whipped cream, nuts or granola until right before serving.

Frequently Asked Questions

Can I make these banana bread latte oats without coffee?

Yes! You can replace the espresso with an equal amount of milk, but if you’re looking for a coffee-free option, I recommend trying my banana bread overnight oats instead. They have the same cozy banana bread flavors without the coffee.

Can I use decaf espresso?

Yes. Decaf espresso or decaf cold brew will give you the same coffee flavor without as much caffeine.

Can I make these without protein powder?

Yes, although they’ll obviously be lower in protein. Protein powder also absorbs some of the liquid, so if you leave it out, I would start with a little less milk and add more as needed.

Why are my overnight oats so thick?

Both chia seeds and protein powder absorb liquid as the oats sit. Plant-based protein powders in particular can soak up quite a bit. Simply stir in a splash or two of milk in the morning until the oats reach your preferred consistency.

What toppings are good on banana bread latte overnight oats?

Fresh banana slices and whipped cream are my go-to, but chopped walnuts or pecans would really play up the banana bread vibe. A sprinkle of cinnamon, drizzle of almond butter or a little homemade granola would also be delicious.

Ingredients  

  • ½ cup rolled oats
  • ½ cup milk of choice, I used unsweetened almond milk
  • ¼ cup mashed ripe banana, about half a medium banana, the riper the better
  • 1 shot (1 oz) cooled espresso or 2 Tablespoons cold brew
  • 1 scoop vanilla whey protein powder
  • ½ Tablespoon chia seeds
  • 1-2 teaspoons brown sugar or maple syrup
  • ½ teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • Pinch of nutmeg
  • Pinch of salt

Instructions 

  • Add the oats, milk, mashed banana, cooled espresso, protein powder, chia seeds, brown sugar (or maple syrup), cinnamon, vanilla, nutmeg and salt to a mason jar or airtight container. Stir well until everything is fully combined.
  • Cover and refrigerate for at least 4 hours, or overnight.
  • When ready to eat, give the oats a good stir. If they’re thicker than you’d like, add a splash of milk until they reach your desired consistency.
  • Enjoy straight from the jar or transfer to a bowl and add toppings of choice. I topped mine with whipped cream and fresh banana slices.

  • Protein powder: I recommend whey protein for the best texture. If using plant-based protein powder, you’ll likely need an additional ¼–½ cup milk since it absorbs more liquid.
