Creamy and naturally sweet, these apple cinnamon overnight oats are a homemade MUSH copycat that tastes just like the store-bought version. Made with 7 simple ingredients, they’re perfect for meal prep.

After sharing my vanilla MUSH copycat overnight oats, I got so many requests for the apple cinnamon version that I knew I had to make it happen.

I figured it’d be an easy one to test, but… nope! It took about ten rounds of experimenting with different ratios before I finally got that classic MUSH texture and flavor down.

The good news? This version tastes just like the store-bought one and the nutrition facts are nearly identical too. Totally worth all the testing!

  • thick cut rolled oats – I tested this recipe with regular rolled oats, but they didn’t have quite the same chewy texture that MUSH oats have. The thick-cut variety is spot on and gives the perfect bite. I used Bob’s Red Mill thick cut rolled oats.
  • almond butter – adds creaminess and a little richness to the oats. Almond butter keeps the flavor closest to the original.
  • unsweetened almond milk – keeps the oats light and dairy-free. You can use any milk you have on hand, but almond milk matches the MUSH version best.
  • apple juice – adds natural sweetness and that signature apple flavor. I recommend using juice from concentrate for the best flavor match.
  • dried apples – a little goes a long way for flavor and texture. Look for unsweetened dried apples if you can find them.
  • cinnamon – warm, cozy and essential for that classic apple cinnamon combo.
  • sea salt – just a pinch brings all the flavors together.

How to Make Apple Cinnamon Overnight Oats

Step 1: Add the almond butter, almond milk, apple juice and chopped dried apples to a blender and blend until smooth.

Step 2: Add the oats to a jar, pour the blended mixture over top, then stir in the cinnamon and salt. Cover and refrigerate overnight. In the morning, give it a good stir and add a splash of almond milk if it’s too thick before serving.

My Recipe Tips

  • Use thick-cut oats: Regular rolled oats work, but the thick-cut variety gives that chewy, hearty texture just like MUSH.
  • Blend well: Make sure the almond butter and apple pieces are fully blended for a smooth, creamy base.
  • Don’t skip the chill time: The oats need several hours (or overnight) to soak up the liquid and get that perfect consistency.
  • Adjust the texture: If your oats are too thick in the morning, stir in a splash of almond milk before serving.

How to Store & Meal Prep

Overnight oats are one of my favorite make-ahead breakfasts because they keep so well in the fridge. Feel free to double, triple or even quadruple this recipe on Sunday so you’ve got easy, healthy breakfasts ready to grab throughout the week.

Store the oats in a sealed container (I like using wide-mouth 16 oz Mason jars) in the refrigerator for up to 5 days. The oats will continue to soften as they sit, so they’re at their best on days 1–3, but still perfectly good to eat on days 4 and 5.

Ingredients  

  • cup thick cut rolled oats, I used Bob’s Red Mill
  • ½ Tablespoon almond butter
  • ¼ cup unsweetened almond milk
  • 3 Tablespoons apple juice, from concentrate, ideally
  • 1 Tablespoon (5 grams) chopped dried apples
  • ½ teaspoon cinnamon
  • Pinch salt

Instructions 

  • Blend together the almond butter, almond milk, apple juice and chopped dried apples.
  • Add oats into a jar, pour almond milk mixture over top, add cinnamon, salt and stir to combine. Let soak overnight.
  • The next morning stir and add a splash more almond milk if the mixture is too thick. Enjoy!
