Couscous is a really fast, really easy thing to toss together as a last minute meal and you can add just about anything in it and it will taste good.
For this particular dish I didn’t measure anything. I simply prepared the Near East (I think that is the brand) of Whole wheat olive oil and garlic couscous according to the box, but didn’t use all the oil they recommended. And then added the following:
I sauteed about 1/2 a cup each of fresh zucchini, squash, mushrooms, and broccoli in some garlic powder, soy sauce, salt, and pepper. Then added this mix and to the couscous when it was done. Then I added about 1/2 cup of grape tomatoes cut in half. I ate it warm, but I like couscous cold straight from the fridge as well.
Other things you can add:
- Veggies (fresh or sauteed)
- Fresh fruit
- Any dried fruit: raisins, apricots are my favorite. I like to use them when I want to make a sweet version
- chopped nuts
