Simple Vegan Mock Chicken Salad

by Eating Bird Food on October 17, 2011

Hi friends. I hope you had a great weekend and your week is off to a great start. I took the weekend to disconnect from the computer a bit so that’s the reason I haven’t posted in a few days. I actually traveled “home” to visit with my family on Friday/Saturday, which was lovely. On Sunday I watched one of Isaac’s frisbee games and did a food prep for the week – including the recipe for “chicken” salad I’m sharing today and black bean burgers, which I’ll share the recipe for soon.

Here’s a little back story on today’s recipe -

One of friends mentioned that she LOVES the Vegan Chicken Salad from the Whole Foods prepared foods section but it hasn’t been there in a few months. I decided to recreate it so she can make it at home. As it turns out, there are two different types of Vegan Chicken Salad served at Whole Foods – one that uses soy “chicken” nuggets as the base and one that uses tofu. The tofu version seemed lighter and healthier so I went that route, hopefully it’s the one my friend likes.

I’ve never had the vegan chicken salad from WF but the result of my creation was a delicious tofu salad that has a savory flavor and nice crunch! I even had two meat eating guys try the chicken salad and they both said it was great so if you’re up for trying something new, give this recipe a try because it’s tasty. And on a nutrition note, the salad is pretty healthy – it has a good amount of protein, veggies and only a small amount of oil – no mayo needed.

The recipe makes quite a few servings so you could easily make a batch and have it for lunch over several days. I enjoyed it served on a bed of greens with some additional veggies but you could easily put it between two slices of bread or stuff it into a pita as well. Although, if I were going to put it on a sandwich, I’d probably add a little hummus or mustard to the bread for a little extra moisture.

Vegan “Chicken” Salad

Ingredients

  • 1 lb extra firm tofu, drained and pressed
  • 1 cup finely chopped celery
  • 1 cup finely chopped green onion
  • 1/4 cup silvered blanched almonds
  • Juice of 1 lemon (about 3 tablespoons)
  • 2 Tablespoons Bragg’s liquid aminos (reduced sodium soy sauce or tamari would work too)
  • 1 Tablespoon olive oil
  • 1 teaspoon garlic powder
  • black pepper, to taste

Preparation

  1. Crumble tofu into small pieces in a medium to large size bowl.
  2. Mix celery, green onion and almond with tofu.
  3. Mix lemon juice, liquid aminos, olive oil, garlic powder together in a small bowl.
  4. Add liquid to the tofu mixture and stir well to combine.
  5. Sprinkle on black pepper.

Have you had either version of Vegan Chicken Salad from Whole Foods? Which do you like better?

Help me out by trying this recipe and telling me if it’s just as good. :)

On the Menu, Yesterday

by Eating Bird Food on September 1, 2011

Sometimes it’s fun to see what others eat daily so I thought I’d kick it old school EBF style and share a full day of typical eats…

I took photos of everything, but forgot the apple, almond and peanuts I ate for a mid-afternoon snack, the La Croix I drank at some point during the afternoon and the mug of coconut chai tea I had after dinner.

Here’s the line up:

iced coffee with frothed milk.JPG

Upon waking, I had a cold brewed iced coffee with frothed almond milk. I had kind of forgotten about my mini frother so it was fun to pull it out yesterday and make fancy coffee.

For breakfast I had a protein pancake. This time I used 1/2 banana instead of the figs and topped it with blueberries and almond butter.

I’m loving the roasted almond butter with flax seeds from Trader Joe’s. It’s so crunchy!

Lunch was a “throw everything that’s in the fridge on greens and make a salad” kind of day. I had a big bowl of spinach with lots of left over grilled veggies (squash, onion and eggplant), corn from the cob, orange bell pepper, broccoli slaw with peanut sauce and garbanzo beans.

I love these types of salads – they’re so flavorful, you don’t even need any dressing!

To soothe my craving for something sweet after lunch I busted out the Power Snacks I was sent to review from Navitas Naturals.

I had three of Cacao Gogi bites and liked them. They weren’t too sweet, but definitely took away my sweet tooth. I haven’t tried the Citrus Chia flavor yet, but once I do I will certainly post a full review.

And last but not least, for dinner I had Isaac grill some bbq tempeh when he was grilling burgers for he and his dad.

While he was grilling I prepped some veggies.

Butternut squash fries are back! <– This is so exciting to me as I love butternut squash and it’s a true sign that fall is drawing near. Bring on the pumpkin and squash!

All together I had the tempeh, quinoa, b-nut squash fries and collard greens.

Everything was delish, but the fries were the highlight of the meal for me. The squash was actually from Isaac’s parents garden and it was amazingly sweet! Since I had something sweet with dinner, I ended up being able to resist my normal after dinner snack. This was a big achievement for me because I’m the queen of after dinner snacking. A current goal of mine is to kick the habit of eating snacks because I’m bored or just wanting something sweet. So far so good!

So there you have it friends, what I ate yesterday! Now it’s time to focus on today because it just so happens to be Friday and I have a three day weekend to look forward to!

Do you have any plans for the holiday weekend? We have a wedding to attend and I’m hoping to host or go to a cook-out. Gotta enjoy the warm weather while it’s still around. It will be fall before we know it!

A Different Kind of Muffin Top

July 19, 2011

Today started out hectic with an overflowing Toddy… A little muffin top action and some spilling occurred when Isaac added a tad too much water into the container. No use crying over a little bean drippage- at least we’ll have a jug of coffee concentrate ready for iced coffee tomorrow morning AND at least this [...]

Beautiful Day

March 18, 2011

Today’s weather was amazing here in VA – perfect for a walk to Ellwood’s Cafe, one of my favorite spots that serves organic and local fare, for a lunch date with Kim! Kim and I chatted non-stop about life, Richmond and working out. It was nice to finally meet her in person and she’s just [...]

One Delicious Tuna Sandwich

February 22, 2011

I always forget about tuna fish. And… it definitely gets a bad wrap for its smell, but as a pescatarian it’s one of the few complete proteins I can whip up in a jiff. Today for lunch I did just that by using a can of solid white albacore tuna that had been lingering in [...]

Feelin’ Fancy

February 17, 2011

First thing first, don’t these really brighten up the room? Indeed! Fresh flowers make me smile and while they’re not something I buy every week, I love having them around. Thank goodness for holidays and sweet bfs. My eats have been pretty standard as of late but something about today’s breakfast and lunch felt a [...]
