This easy sheet pan pancakes recipe is made with Kodiak mix for a simple, protein-packed breakfast that comes together fast! It’s perfect for meal prep or weekend brunch with a crowd.
Pancakes are always a hit in our house. My kids would happily eat them every morning if I let them and honestly I get it. But sometimes I’m not in the mood to stand over the stove flipping batch after batch of pancakes. Enter sheet pan pancakes.

This recipe is a total game changer when it comes to pancakes! Instead of babysitting a skillet, you just pour the batter into a pan, add your toppings and let the oven do all the work.
And to make things even easier and higher in protein, I used Kodiak Cakes mix. It gives these pancakes the perfect fluffy texture with a good protein boost and it makes weekend mornings or meal prep so much smoother.

Why You Gotta Try This One

- Easy to make: These have become one of my favorite breakfasts to throw together on busy mornings. The whole recipe comes together in under 30 minutes with just one bowl and a sheet pan.
- Hands off cooking: I can mix everything while the kids are getting ready and let the oven handle the rest.
- Fun for the kids: The toppings make it feel special and the kids love picking their own combinations.
- Great for meal prep: These pancakes freeze and reheat beautifully, so I almost always make a batch at the start of the week.
- Perfect for hosting: They’re great for feeding a crowd and make brunch so much easier since everything cooks at once.
Ingredients Needed

- Kodiak pancake mix – I used the Kodiak Cakes buttermilk pancake and waffle mix, but any variety you love will work for this recipe.
- milk – dairy or non dairy both work here. I used unsweetened almond milk, but you can use whatever you have on hand.
- eggs – helps the pancakes rise and stay fluffy.
- vanilla extract – adds a little extra flavor and sweetness.
- melted butter or coconut oil – I used melted butter to add some richness, but oil works as well.
- toppings – think blueberries, sliced strawberries, chocolate chips, bananas or nuts. Mix and match your favorites.
How to Make Sheet Pan Pancakes From Mix

Step 1: In a large mixing bowl, combine the Kodiak mix, milk, eggs, vanilla and melted butter or oil. Stir just until everything is incorporated.

Step 2: Pour the batter into your prepared pan and spread it out so it’s even from corner to corner.

Step 3: Sprinkle on whatever toppings you’re using. You can keep it simple with one topping or do different sections for variety.

Step 4: Place the pan in the oven and bake for about 18 to 20 minutes or until the top is set and a toothpick comes out clean.
Brittany’s Recipe Tips
- Don’t overmix: Stir the batter until everything is just combined. Overmixing can make the pancakes a little dense.
- Use parchment for easy cleanup: Lining your sheet pan makes lifting the pancakes out and slicing them super simple.
- Make topping “zones”: If everyone in your house likes different toppings, divide the pan into sections. You can do one corner with berries, another with chocolate chips, another with bananas, etc. It feels fun and makes everyone happy.
- Check doneness early: All ovens run a little different, so start checking the pancake around the 18 minute mark.
- Let it cool slightly: A short rest helps the pancake set up, which makes slicing cleaner and less crumbly.

How to Store & Reheat
- In the fridge: Once the pancakes have cooled completely, transfer the slices to an airtight container. They’ll stay fresh for about 4 to 5 days.
- In the freezer: These pancakes freeze really well. Place the slices in a single layer on a baking sheet to freeze, then transfer to a freezer safe bag or container. They’ll stay fresh for up to 3 months.
- Reheating: Warm individual pieces in the microwave for 20 to 30 seconds until heated through or in the oven at 300°F for about 5 to 8 minutes. If reheating from frozen, pop a frozen slice straight into the microwave for 45 to 60 seconds or warm in the oven at 325°F until heated through.
Frequently Asked Questions
Yes you can. Just keep in mind that every pancake mix absorbs liquid a little differently. If you swap in another brand, start with slightly less milk and add more as needed until the batter looks similar to a typical pancake batter. This helps prevent it from turning out too thin.
A quarter sheet pan works best for the thickness and bake time listed. A half sheet pan will work too, but the pancakes will be thinner and may bake a little faster.
Yes. Double the ingredients and bake in a half sheet pan. Just keep an eye on the bake time since it may need a few extra minutes.
They’re great on their own or paired with Greek yogurt, maple syrup, nut butter, turkey sausage or scrambled egg whites for extra protein.
