Love coconut, caramel and chocolate? You will adore this healthy Samoa baked oatmeal. It’s made with coconut milk, date caramel and a chocolate drizzle.

I’m not sure how it took me so long to combine two of my favorite foods but here we are… Samoas + baked oatmeal had a baby and it’s delicious! This breakfast recipe is sweet, but still pretty healthy and really hits the spot. I’d like to personally request this at all brunches moving forward! I’m calling it now: this Samoa baked oatmeal will be the new cinnamon roll. 😜

Here’s What You Need:

  • old fashioned rolled oats
  • coconut milk – we’re using canned coconut milk for this recipe – regular or light.
  • date caramel sauce – this recipe is super simple (only 4 ingredients) and worth making!
  • ground flaxseed
  • applesauce
  • coconut oil, vanilla extract, baking powder and sea salt.
  • unsweetened shredded coconut
  • chocolate chips – I like Enjoy Life or Lily’s chocolate chips

The Star of the Show…

In my opinion, the date caramel sauce is the star of this recipe! I’ve used it in my salted caramel oatmeal and on my apple nachos but I figured it needed to make an appearance with a baked oatmeal recipe too!

While it is an extra step it’s super simple and only slightly more difficult than buying a caramel sauce at the store. And the ingredients for my homemade date caramel are waaay better than the ingredients you’ll find in store-bought caramel. Most have high fructose corn syrup, preservatives and food coloring.

For the date caramel, all you have to do is blend all ingredients in a high powered blender or food processor. You’ll have a caramel sauce made out of whole food ingredients in no time at all. Highly recommend keeping a stash of this caramel in the fridge at all times.

Meal Prep Oatmeal? Heck Yes!

One of my favorite things about baked oatmeal is that it is perfect for meal prep. The entire recipe (besides the date caramel) can be mixed in one bowl. Then you simply bake it and portion out your servings. Let the baked oatmeal cool completely before putting it in an airtight container and storing in the refrigerator for up to five days. When you’re ready to enjoy, you can eat cold or reheat it. My personal favorite way to reheat baked oatmeal is to pop it in the toaster oven. Then I like to add a splash of milk and top with an extra drizzle of date caramel sauce!

Samoa Baked Oatmeal

Love coconut, caramel and chocolate? You will adore this healthy Samoa baked oatmeal. It’s made with coconut milk, date caramel and a chocolate drizzle.

Cook Time: 40 minutes
Servings: 6

Ingredients  

  • 2 cups old fashioned rolled oats
  • 1 15oz can regular or light canned coconut milk (about 1 and ¾ cups)
  • 1/4 cup date caramel, see recipe below
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 Tablespoon ground flaxseed
  • ½ cup applesauce
  • 1 Tablespoon melted coconut oil
  • 1 teaspoon vanilla extract
  • 2 Tablespoons unsweetened shredded coconut + more for topping oatmeal
  • 4 Tablespoons chocolate chips, divided
  • ¼ teaspoon coconut oil to thin chocolate
  • extra date caramel, for drizzling
  • Date Caramel
  • 8 medjool dates, pitted*
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon vanilla extract
  • 3/4 cup unsweetened almond or oat milk + more if needed

Instructions 

  • Make date caramel by adding all ingredients into a high powered blender or food processor (and blend until mixture is smooth and there are no date chunks detectable. Add additional milk until the date caramel is thin enough to drizzle, but not too thin.
  • Preheat the oven to 375°F.
  • Spray an 8×8 square baking dish with cooking spray.
  • In a large bowl, mix together the oats, coconut milk, date caramel, baking powder, sea salt, flaxseed, applesauce, coconut oil and vanilla. 
  • Add 2 Tablespoons shredded coconut and 2 Tablespoons chocolate chips and stir until just combined. 
  • Carefully pour oatmeal mixture into the prepared baking dish.
  • Scatter shredded coconut on top.
  • Bake for 40 minutes, or until the oatmeal bake has set and flakes are toasted and golden. Remove from the oven and let cool for a few minutes.
  • While cooling, add 2 Tablespoons of chocolate chips to a microwave safe container with the coconut oil. Heat in the microwave in 30 second increments until melted. Drizzle chocolate over the baked oatmeal. Then drizzle date caramel sauce over top. 
  • Serve immediately with chocolate and date caramel sauce drizzle. 
  • For storage: store in the refrigerator in an airtight container for up to 4 days.
  • To reheat: To reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

Notes

  • Recipe works best fresh, soft medjool dates. If dates are dry or hard, you can soak them in water for about 30 minutes, drain and then use them in the recipe.
  • If you’re using the smaller deglet noor dates, you’ll need to use more! This is something you can play around with to get the caramel sauce thickness you’re looking for.

I need dairy and egg free recipes so I find really helpful most of your posts. I would like to know how to store the date caramel. I suppose it should go in the fridge.

    I’m not really a fan of baked oatmeal but I love samoas and I LOVE the salted date caramel oatmeal recipe so I gave this a shot. It tastes great! I plan to adapt it into regular stovetop oatmeal next time.

    This is delicious and the perfect healthy, comfort, quarantine breakfast. I used chia meal in place of Flax and accidentally left out the melted coconut oil (because I forgot it in the microwave). Thank you for all you do to bring us fun, wholesome food that feels very indulgent!!

    10/10 highly would recommend! I was blown away at how similar it tastes to an actual Samoa! And you weren’t kidding about the caramel sauce- SO GOOD! Seriously one of the best desserts I’ve tasted in a while! Only thing I would add is that if you choose to bake in muffin tins to monitor them closely, as 40min was a bit too long when using the mini muffin tins. I baked half in regular size and half in the minis and they were a bit burned/too crispy- but that’s my fault for not checking them. Aside from that, these will most certainly be made again and again!!

    So tasty! My whole family loved this, including my picky children. This was not too sweet at all – just perfect. And, the date caramel sauce is bomb!! I’m glad it made more caramel than needed for this recipe, so I can keep it on hand to dip fruit in, add some to coffee, etc. So good!!

  17. Sounds delicious & I want to make this but I wonder…..you’ve shown the date caramel sauce as one of the ingredients in the oatmeal base. And, also to drizzle over the top once baked. So, just divide the sauce to have some to drizzle over the finished oatmeal or is it NOT supposed to be IN the baked portion; just used to drizzle over? Thanks…

    1. Hey Connie – The date caramel sauce is supposed to be in the recipe (1/4 cup) and also drizzled on top. The recipe for the sauce will make more than 1/4 cup so you’ll have plenty left to drizzle on top at the end. 🙂

  21. The date carmel sauce recipe listed with this Samoa Baked Oatmeal recipe has differenet proportions than the linked recipe for your date carmel sauce. One says 8 dates and the other says 16 dates but both list the same amount of liquid. Thank you for clarifying as I’m anxious to make the sauce and try this oatmeal recipe!

    1. Sorry for the confusion, Bonnie. The recipe listed in the samoa baked oatmeal is half the recipe because with 16 dates it makes a much larger serving, but you only need 1/4 cup (plus more for the topping) to make this recipe. I also preferred it to be a but thinner in this recipe which is the reason for the 3/4 cup milk. You can go with either 8 or 16 dates – depends on if you’d like to have leftovers of the date caramel sauce or not!

    This was superb!! It was fun to make with the variety of flavors that go together so well! I used unsweetened shredded coconut and water to make my own milk. I figured I wouldn’t need to strain it then the pulp went right into to oatmeal bake. It couldn’t have tasted better!

    This recipe is so delicious but it’s also FUN. I normally would have skipped going through the trouble of making date caramel but I’m so glad I didn’t. It has such good flavor and really brings the dish together. Plus, I have a bunch of leftover date caramel to drizzle and smear on other foods as my heart desires.     This recipe is fantastic!! The only thing I changed was making everything the night before (way easier with my kids asleep!) and it baked perfectly in the morning! My boys loved it and we are currently having the date caramel sauce with apples for their morning snack. It’s SO good! I accidentally made the full recipe and I’m kind of glad I did.     I made this baked oatmeal last week for my mid-morning snack. I was going to try a different baked oatmeal this next week but this one was so good I have to already remake it! It is great for the spring months but I think it would be great all year, especially when craving Girl Scout cookies
