A simple, single-serving dessert made with coconut flour, this banana coconut flour mug cake is grain-free and the perfect treat to satisfy a sweet craving.
Anyone else have a sweet tooth?! Ever since I can remember, I’ve been a fan of sweet treats. I love salty indulgences like french fries, but sweet things call to me more often! Because of this, I love having healthy sweet options at home and recreating some of my favorite treats like samoas cookies.

I almost always have the ingredients in my pantry to make this single-serving cake. It’s similar to my coconut flour banana bread but one serving… forced portion control. Ha!
Never made a mug cake? It’s a literal “cupcake” – a cake made in a cup! You mix everything in a mug and then “bake” it in the microwave. Dessert in less than five minutes. It really doesn’t get much better than that!

Coconut Flour Mug Cake Ingredients
There are plenty of regular mug cake recipes with flour, sugar and butter, but I wanted to make one that was a bit healthier with real food ingredients like coconut flour, banana and a natural sweetener. And the best part about this recipe is that you need minimal amounts of each ingredient! I usually have all of these ingredients in my pantry and I love that I don’t have to worry about having enough.
- coconut flour – you have to use coconut flour for this recipe. I haven’t tested it with any other flour
- maple syrup – I like the flavor of maple syrup, but you could also use honey or a zero-calorie sweetener like stevia or monkfruit. I haven’t tested the recipe with these options so you’ll have to experiment with how much to add.
- baking powder
- sea salt
- banana
- eggs whites or an egg
- coconut oil
- almond milk
- vanilla
- chocolate chips

Making a Mug Cake
Spoiler alert: to make a mug cake, you simply mix everything and cook it in a mug! Yes, an actual mug. Instead of baking this, you actually just microwave it! Start by microwaving for just two minutes. Check the center and if it’s still doughy, cook for another minute. Let sit for a few minutes before digging in!

Hi Britney, I love so many of your recipes. But it doesn’t make sense to me why you use the microwave with some of your recipes. It doesn’t seem to fit with all your very healthy ingredients, fresh fruits vegetables, many gluten-free options, but then you use the microwave which is totally unhealthy. I would rethink recipes with a microwave for the future. We lose many nutrients on the microwave. I think we need to be careful promoting it. Thanks for listening.
You can always turn your oven on & cook yours that way. The conspiracy theory about microwaves has been debunked over and over. You didn’t even try the recipe, which is what a review should be about. The cooking method is a choice. Stop gaslighting people with your theories and the “we need to be careful” passive aggressive assumption. When you writo your own blog, you can use whatever cooking methods of your choosing. If you’re not going to review the actual recipe, keep your opinions to yourself. “Thanks for listening”. 😂
Good point!
It’s a little rude to leave a two star review on a recipe that you haven’t tried making.
Perhaps a better alternative would be to politely ask Britney for an oven version of this, try it, THEN rate the recipe accordingly.
Thank you! That Brittany responded to such rudeness with such grace speaks very well of her. Marie is highly rude… with the 2 star fake review, especially since the conspiracy theory about microwaves have been debunked many times over.
Conspiracy theories and debunking are not the same thing. And don’t believe these microwave debunkings (not theories and certainly not conspiracy). Microwaves damage food and that is a proven fact. And Marie wasn’t rude. She actually made her point in a nice way. Perhaps she shouldn’t have rated it, but she was not rude in her words.
Hey Marie – I’m glad you are loving many of the recipes. This is one of my very few microwaveable recipes. My goal is to provide meals that are well rounded and flexible for those who might not have a ton of time on their hands to cook or who only have access to a microwave. Mug cakes are typically made in the microwave, but you could certainly bake this in the oven. I would preheat the oven to 350 and cook for 15-25 minutes (the time will depend on how hot your oven gets). I would check it at 15 minutes and if it’s still doughy in the center, I’d cook it for a few more minutes at a time until it’s cooked through.
Hi
For coconut mug cake I don’t have microwave can I put it in the oven. I can’t wait to make it . What I love about you recipes is that is easy and fast. 🙏

Hey Janelle – I would set the oven to 350 and cook it for 15-25 minutes (the time will depend on how hot your oven gets). I would check it at 15 minutes and if it’s still doughy in the center, I’d cook it for a few more minutes at a time until it’s cooked through. Let me know how it turns out for you!
Love, love, love this!! I baked it in my toaster oven at 350 degrees for maybe 15-17 min because I don’t have a microwave and it turned out perfectly! I even shared a couple bites with my kiddos and they wanted more!

Hi there,
Could I use almond flour instead of coconut? Can’t wait to try this!
Hey Nicole! I don’t recommend using a different four for this recipe as I haven’t tested anything besides coconut flour. Coconut flour soaks up way more liquid than other flours so if you changed the flour the measurements would be off.
Can I make coconut flour at home?
I’m sure you could! I’ve never made it before though. I’d just look up a recipe. 🙂
Loved this! I subbed coconut oil for unsweetened applesauce and it turned out perfect. So sweet and moist, perfect for a breakfast sweet treat or a dessert! Love your recipes 🙂
Oh yay!! So glad this mug cake turned out for you, Amelia. Thanks for coming back to share the sub you made with the oil and for leaving a star rating. The reviews are super helpful for other readers. 🙂
Since I don’t eat eggs, I made this recipe with a flax egg and it worked great. I also added chopped pecans. Delicious! Thank you.

I actually made this for breakfast and just omitted the maple syrup because I had VERY ripe bananas. Its a breakfast I can feel good about, with a cup of tea.:-) Thank you!

So glad you loved this mug cake, Tammy. Thanks for the review. I so appreciate it!
Do you think it would work, if making for 4 kids, to make a big batch in a bowl and then pot into 4 mugs and microwave all four?
That will definitely work, Becca. Let me know how it turns out 🙂
I think I have become your number one fan! Awesome recipe! I tried it just after finding it online. Super easy and delicious. I also appreciate all the other comments and swapped the banana for applesauce and once ready sprinkled some cinnamon as I had missed the chocolate chips. Still wonderful! For sure I will make it again! Yours are the only recipes that I continue making after the first try. Thank you so much!!!
