Quinoa Parfait and Other Weekend Highlights

by Eating Bird Food on August 8, 2010

Ahh.. I found a new breakfast treat that you have to try….

I stumbled across a quinoa parfait recipe online, thought it sounded tasty and decided to make my own similar creation. I have 10 lbs of peaches on my counter top (again) so of course, I had to incorporate peaches.

‘Twas a grand idea, as this breakfast was definitely a highlight of my weekend!

Perfectly Peach Quinoa Parfait

(adapted from this recipe by Dr. Oz)

  • 1/3 cup cooked quinoa**

  • 1/2 cup fat-free plain yogurt

  • 2 drops of liquid stevia (honey, agave, maple syrup or any other sweetener could be used)

  • 1/4 tsp pure vanilla extract

  • 1/8 tsp ground cinnamon

  • 1/2 cup blueberries, fresh or frozen and thawed

  • 1 small peach, chopped

  • 1/4 cup granola

Directions

** I cooked the quinoa, per package directions, the night before, let it cool and then placed it in the fridge overnight.

Mix quinoa, yogurt, stevia, vanilla extract and cinnamon in small bowl. In another small bowl, stir blueberries and peaches together. Spoon 1/3 of the quinoa mixture into a tall glass, then 1/3 of the fruit mixture on top. Repeat layers twice, ending with the fruit mixture.Sprinkle on the granola and enjoy!

Another highlight was the Greek Quinoa dish I took to a little cookout on Saturday night.

It’s a recipe I found in Fitness Magazine over a year ago. We’ve made it plenty of times, for many people and everyone always ends up enjoying it.

I read quite a few health related magazine and Fitness, by far, has the best recipes! Every one I’ve tried, I’ve liked! Which reminds me, I need to renew my subscription.

Last but not least, these tasty little tomatoes I picked up as part of the CSA have been making me smile all weekend.

I love having cherry tomatoes around to toss onto salads or pop as a snack. I’m pretty sure they are my favorite summer veggie – I know they’re technically a fruit, but they are a vegetable in my eyes.

Currently, I’m typing up this post outside and getting ready to enjoy a late dinner with a few friends – it’s bound to be another highlight. :)

What was the best part of your weekend?

Growth

by Eating Bird Food on July 2, 2010

Look, we have babies!

IMG_5389.JPG

Isaac and I planted some tomatoes, peppers and herbs this year and it’s been so fun watching them grow. I literally check the vines every morning to see what kind of progress they’ve made. Note: If I have this much fun watching plants grow, I can only imagine what’s going to happen when I have kids…

Anyhow, today a few of cooler crew – aka cherry tomatoes were fully ripe and I was beyond stoked.

Obviously, I popped the two red ones into my mouth right after taking this picture. They were DELICIOUS! It’s amazing how good food tastes fresh from the plant!

Are you growing any produce of your own this year?

I‘m not sure why we decided to do so because we are members of CSA and Isaac’s parents have a huge garden, but alas you can never have too many veggies! And if you do, you can always give them away to friends. :)

Happy 4th of July weekend!

Huge

August 31, 2009

Today’s weather was the first sign that summer is almost over. I’m a little sad, but also excited because I love all things fall – particularly the cuisine and foliage here in VA- it’s beautiful! My car thermometer was at 68 degrees at 5:45AM and I don’t think it got much warmer over the course [...]

You Asked For It

July 10, 2009

My lunch time salad yesterday just so happened to finish off the last of the HUGE container of spring mix from Costco! Hooray for not wasting one leaf and for eating an entire large tub of Earthbound Farms Spring Mix in less than 1 week. Oh yea! The salad had yell bells, cuc, cado, tomats, [...]

I Couldn't Resist…

July 7, 2009

Even though I spent a good portion of my last post complaining about how much my stomach was hurting from the pumpkin pie soup, I still couldn’t resist eating some of the leftovers. I know, I’m such a rebel right? No really I just figured if I didn’t devour a big bowl at one sitting [...]

Berry Bounty

May 20, 2009

Today went by really quickly at work because things were busy. At lunch I ran by the post office and ran home. I only had time to prep my salad so I decided just to take it back to the office and eat at my desk- which apparently is the worst idea germ wise. The [...]
