Creamy espresso overnight oats topped with buttery maple pecans for a coffee shop-inspired breakfast. Each serving packs 30 grams of protein and 10 grams of fiber!
Add the oats, milk, cooled espresso, protein powder, chia seeds, maple syrup, vanilla, cinnamon and salt to a mason jar or airtight container. Stir well until fully combined, making sure there are no clumps of protein powder.
½ cup old-fashioned rolled oats, ½ cup unsweetened almond milk, 1 shot (1 oz) cooled espresso, 1 scoop vanilla whey protein powder, ½ Tablespoon chia seeds, 1 teaspoon maple syrup, ½ teaspoon vanilla extract, ¼ teaspoon cinnamon, Pinch of salt
Cover and refrigerate for at least 4 hours or overnight, until the oats have softened and thickened.
When ready to eat, make the topping. Add the pecans to a small skillet over medium-low heat. Toast for 2–3 minutes, stirring frequently, until fragrant.
2 Tablespoons chopped pecans
Add the butter and stir until melted. Stir in the maple syrup and salt, then cook for 30–60 seconds, stirring, until the pecans are coated and the syrup is lightly bubbling. Remove from the heat and spread the pecans on parchment paper. Let cool completely, then break apart any clusters.
1 teaspoon butter, 1 teaspoon maple syrup, Small pinch of salt
Stir the oats, adding a splash of milk if needed. Add a layer of greek yogurt on top and spoon the cooled pecan topping over and enjoy!
