Instructions
Add the almond milk, pumpkin purée, cottage cheese, chia seeds, maple syrup, vanilla and pumpkin pie spice to a high-powered blender.
¾ cup unsweetened almond milk, ¾ cup canned pumpkin puree, ½ cup cottage cheese, ¼ cup chia seeds, 3 Tablespoons pure maple syrup, 1 teaspoon vanilla, 1 teaspoon pumpkin pie spice
Blend on high for 30–60 seconds, stopping to scrape down the sides as needed. Continue blending as needed until the cottage cheese is smooth and the chia seeds are finely blended. Taste and add more maple syrup or pumpkin pie spice, if desired.
Transfer the mixture to a container, cover and refrigerate for at least 3–4 hours, or overnight, until thickened.
When ready to serve, divide the mousse evenly between two bowls or jars. Top with crushed graham crackers and whipped topping or Greek yogurt, if desired.

Notes
Texture: A high-powered blender works best for breaking down the chia seeds. The mousse will thicken as it chills.
Gluten-free: Use gluten-free graham crackers or leave them off.
Storage: Refrigerate in an airtight container for up to 3–4 days, using fresh ingredients. Add toppings just before serving.
Serving size: One serving is half the batch. Smaller portions will have proportionally less protein and fiber.
