Place the tomato sauce, tomato paste, garlic, coconut sugar (if using), basil, oregano, thyme, salt, and black pepper into a high-powered blender or food processor.
Blend on high until all ingredients are well incorporated and the sauce is smooth and creamy.
Taste the sauce and adjust seasonings as needed. Add more salt for flavor, a pinch of sugar to balance acidity, or extra herbs if you like a stronger flavor.

Notes
Serving: Yields about 1 ¾ cups of sauce, enough for 3–4 medium pizzas depending on how saucy you like it. I recommend using about ½ cup of sauce per 12-inch pizza.
Storing: Store leftovers in an airtight container in the fridge for up to 1 week or freeze for up to 3 months. If the sauce thickens in the fridge, just stir in a splash of water or olive oil to loosen it up.
