A simple method for making creamy overnight steel cut oats with just three ingredients. Perfect for meal prep and easy to customize with your favorite toppings.

Instructions
Place oats, water and salt into a saucepan and bring to a boil, watching carefully so the water doesn’t boil over. Turn down heat quickly and allow the oats to simmer for 1 minute. Remove from heat and let cool.
½ cup steel cut oats, 2 cups water, pinch of sea salt
Transfer to a container with a lid, cover and place in the fridge overnight.
The next morning, portion the oatmeal into jars. The recipe should make 2 servings.
Add toppings of choice and enjoy cold. I love banana slices, berries, chopped nuts, chia seeds and nut butter for toppings.
Notes
Storage: Store overnight steel cut oats in an airtight container in the refrigerator for up to 5 days.
Serving tip: If the oats thicken too much overnight, stir in a splash of milk before serving to loosen the texture.
