This high-protein apple pie ice cream is made in the Ninja Creami with a creamy vanilla base, cinnamon apples and crunchy graham crackers. It tastes like apple pie à la mode and packs 23 grams of protein per serving!

Instructions
Add the milk, cottage cheese, protein powder, applesauce, maple syrup, vanilla, cinnamon, and salt to a blender. Blend until completely smooth.
¾ cup high protein milk, ½ cup low fat cottage cheese, 1 scoop vanilla whey protein powder, 2 Tablespoons unsweetened applesauce, 1 Tablespoon maple syrup, 1 teaspoon vanilla extract, ½ teaspoon ground cinnamon, Pinch of salt
Pour the mixture into a Ninja Creami pint container. Freeze on a level surface for at least 24 hours.
While the base freezes, make the apple pie mix-in. Melt the butter in a small skillet over medium heat. Add the diced apple and cook for 4 to 5 minutes, stirring occasionally, until it begins to soften. Stir in the maple syrup and cinnamon and cook for another 1 to 2 minutes, until the apples are tender and lightly caramelized. Add a splash of water as needed if the apples are sticking. Transfer to a bowl and let cool completely. Refrigerate until ready to use.
½ cup diced apple, 1 teaspoon butter, 1 teaspoon maple syrup, ½ teaspoon ground cinnamon
Once ice cream is frozen, process the pint on the Lite Ice Cream setting.
If the ice cream is crumbly after the first spin, add 1 to 2 Tablespoons of milk and respin.
Use a spoon to create a well in the center of the ice cream. Add the cooled cinnamon apples and chopped Simple Mills Sweet Thins. Run the Mix-In cycle.

Scoop into a bowl and, if desired, sprinkle with additional crushed Sweet Thins, and finish with a pinch of cinnamon.

Notes
Protein powder: I recommend using vanilla whey protein powder for the best texture. Plant-based protein powders absorb more liquid and can make the ice cream thicker or grainier.
Storage: Smooth leftovers into an even layer in the Creami pint, cover and freeze. When ready to eat, process again on the Lite Ice Cream setting. The apples and cookies will break down more when re-spun, so add fresh crushed cookies before serving for extra crunch.
