Black Bean Stuffed Sweet Potatoes

These black bean stuffed sweet potatoes are packed with a variety of flavors and loaded with protein, healthy fat and fiber. They’re easy to whip up and make for a nutritious, gluten-free and vegan weeknight meal.

Tahini Dressing Ingredients

Bake sweet potatoes at 400F until tender.

1. Bake Sweet Potatoes

Make zesty tahini dressing by blending or whisking together all dressing ingredients.

2. Make Dressing

Sauté onion, mushrooms and peppers in a skillet until soft. Add in spinach and cook until just wilted.

3. Cook Veggies.

Cut open sweet potatoes, mash each side with a fork and sprinkle with salt and pepper.

4. Prep Sweet Potatoes

Add spinach mixture, black beans, avocado, spring onions, cilantro, tomatoes and dressing.
